BEEF AND SPICY SAUSAGE FOLDOVERS



Beef and Spicy Sausage Foldovers image

Make these baked foldovers a new taco night tradition. They're great reheated, too!

1/2 lb lean (at least 80%) ground beef
1/2 lb bulk spicy Italian pork sausage
1 package (1 oz) Old El Paso™ taco seasoning mix
1 can (14.5 oz) diced tomatoes with green chiles, undrained
4 1/2 cups Original Bisquick™ mix
1 cup boiling water
1 cup shredded Mexican cheese blend (4 oz)
3/4 cup sour cream
3/4 cup Old El Paso™ Thick 'n Chunky salsa
Fresh cilantro sprigs, if desired

Steps:

  • Heat oven to 400°F. Grease large cookie sheet with shortening or cooking spray.
  • In 10-inch skillet, cook beef and sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix and tomatoes. Reduce heat to medium; cook 5 minutes, stirring occasionally.
  • Meanwhile, in large bowl, stir Bisquick mix and boiling water with fork until dough forms. On surface sprinkled with Bisquick mix, roll dough in Bisquick mix to coat; knead 20 times. Divide dough into 6 balls, about 1/2 cup each. Roll or pat each ball into 7-inch round.
  • Stir cheese into beef mixture. Spoon about 1/2 cup beef mixture onto half of each round. Moisten edge of round with water. Fold round over beef mixture; press edge with fork to seal. Cut 3 small slits in top of each crust to allow steam to escape. Carefully move to cookie sheet with spatula.
  • Bake 20 to 22 minutes or until light golden brown. Serve each foldover with 2 tablespoons each sour cream and salsa. Garnish with cilantro.

1 tablespoon olive oil
1/2 yellow onion, diced
2 pounds ground beef
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
20 fajita-sized flour tortillas
18 hard taco shells
1 pound Cheddar-Jack cheese, grated
15 Roma tomatoes, diced
1 head green leaf lettuce, shredded

Steps:

  • Preheat the oven to 325 degrees F.
  • For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
  • For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.
  • Serve with the grated cheese, diced tomatoes and shredded lettuce.

1/2 lb lean ground beef
1/4 cup onion, chopped
1/2 cup black beans, drained (from 15-ounce can)
1 (8 ounce) can tomato sauce
1 tablespoon taco seasoning mix
1 (10 1/4 ounce) can biscuits, Grands Flaky Layers
1 cup shredded cheddar cheese (4 ounces)
5 tablespoons salsa
5 tablespoons sour cream
2 green onions, sliced, if desired
lettuce, if desired

Steps:

  • Preheat oven to 375°F.
  • In 10-inch skillet, cook beef and onion over medium-high heat until beef is brown; drain.
  • Stir in beans, tomato sauce and seasoning mix. Simmer 3 to 5 minutes, stirring occasionally, until liquid is absorbed.
  • Separate dough into 5 biscuits. Press or roll each to form 5" round. Spoon 1/2 cup meat mixture onto center of each flattened biscuit. Sprinkle cheese evenly onto biscuits. Fold half of biscuit over filling; press edges with fork to seal. Place on ungreased cookie sheet.
  • Bake 12 to 15 minutes or until golden brown.
  • Top with salsa, sour cream and green onions. Garnish with lettuce.
  • Tips:.
  • Mexican chorizo sausage can be substituted for the ground beef. Cheese can be omitted from the recipe.

1 tablespoon canola oil
1 large onion, finely chopped
1 jalapeno chile, minced
Coarse salt and ground pepper
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon ground cumin
1 pound ground beef
1 can (14 1/2 ounces) diced tomatoes, with juice
8 (6-inch) corn tortillas
Optional Toppings: cilantro, iceberg lettuce, diced jalapenos, pickled jalapenos, Monterey Jack cheese, sour cream
Pico de Gallo, optional
Guacamole, optional

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and jalapeno; season with salt and pepper. Cook, stirring occasionally, until softened, 4 to 5 minutes.
  • Add garlic, chili powder, and cumin to skillet; stir until fragrant, about 1 minute. Add beef; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Add tomatoes; simmer over medium-low heat, stirring occasionally, until thickened, 10 to 12 minutes. Season with salt and pepper, as desired.
  • Meanwhile, warm tortillas in a dry skillet over medium heat or directly over a gas burner, about 30 seconds on each side. At the table, fill tortillas with beef mixture and desired garnishes.

1 lb. ground beef
1 onion, chopped
1 cup frozen corn
1/4 cup HEINZ Tomato Ketchup
2 Tbsp. A.1. Original Sauce
1/2 cup hot water
2 cups all-purpose baking mix
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/2 tsp. parsley flakes

Steps:

  • Heat oven to 375ºF.
  • Brown meat with onions in large skillet; drain. Return to skillet. Stir in corn, ketchup and steak sauce; set aside.
  • Add water to baking mix; stir until mixture forms dough. Shape into ball. Place on lightly floured surface; knead 5 times or until smooth and no longer sticky. Roll into 12-inch circle; transfer to baking sheet sprayed with cooking spray.
  • Spoon meat mixture onto center of dough; spread to within 2 inches of edge. Fold edge of dough over meat, leaving center uncovered.
  • Bake 20 min. Top filling with cheese; bake 5 min. or until melted. Sprinkle with parsley.
