SOYBEAN/RICE/CHEESE CASSEROLE
This recipe is a modified version of the Vericheesy Casserole found in the Original Moosewood Cookbook. I make this casserole in a double batch and freeze lunch size servings all year round. This also works well as a stuffing for a small pumpkin or squash for a vegetarian Thanksgiving main dish (Optionally add nuts to give the stuffing more crunch).

Steps:
- Cook the brown rice first since it takes the most time (1 hour in rice steamer).
- Boil soybeans with 4 cups water for 5 minutes. Drain and set aside.
- In a large stock pan, saute onions garlic mushrooms and herbs in butter until onions are soft.
- Remove from heat, add everything except the eggs and mix well.
- Lightly beat the eggs, add to mixture, and mix well.
- Spread mixture into casserole dish.
- Bake in 350 degree oven for 40 minutes.

SOYBEAN CASSEROLE
Full vegetarian meal with salad and fresh baguette. Very easy to make and the most time is taken soaking and cooking the beans. NOTE salt and oil is used during soaking of beans but drained off, so did not include in ingredients.

Steps:
- To prepare the beans.
- Inspect beans and discard any bad ones - wash thoroughly.
- Drain and place in large bowl.
- For every cup of dry beans add 3 cups of cold water and 1 tsp salt. Stir to dissolve salt.
- Soak overnight or at least 10 hours.
- Drain beans and place in a heavy saucepan or slow cooker on high.
- Add enough HOT fresh water to cover.
- Add 1 tsp salt and 2 Tbsp cooking oil.
- Cover, bring to a boil.
- Reduce heat and simmer on top of stove until tender (3 - 4 hours).
- Add more boiling water during cooking if necessary.
- When tender drain off liquid and place beans in large oven proof covered casserole.
- Put all remaining ingredients in casserole and stir to combine.
- Cover and bake for 1 hour at 350°F.

- Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In dish, mix all ingredients except cheese.
- Cover tightly with foil; bake 25 to 30 minutes or until liquid is absorbed and rice is tender. Uncover; stir in 1/2 cup cheese. Sprinkle remaining cheese over top. Bake uncovered 5 minutes longer or until cheese is melted.

BULGARIAN PEPPER AND CHEESE CASSEROLE
This is from the Moosewood cookbook, halved and with a slight change. It is so good, I make it almost every week!

Steps:
- Soak bulghar in boiling water during prep time (~15minutes).
- Preheat oven to 350 degrees.
- Grease small casserole dish with 1/2 tablespoons of butter.
- On medium heat, saute remaining butter and chopped onions until soft.
- Stir in mushrooms and peppers, and heat through (3-6 minutes).
- Add tamari, sherry, marjoram and salt and pepper (to taste), then remove from heat.
- In a small bowl, mix cheeses and beaten egg together.
- Put bulghar evenly in casserole pan.
- Cover with pepper mixture, then cheese mixture and dust with paprika.
- Bake 40 minutes, uncovered.

- Heat to boil first 5 ingredients, stirring once.
- Reduce heat and cover, simmering for 14 minutes.
- Remove from heat and fluff rice, then cover for another 5-10 minutes to allow it to steam.
- In greased 9x13 pan, layer half of the ingredients in this order:rice, onion, green pepper, and your choice cheese (not the parmesan!) Repeat previous step.
- Mix together eggs and milk, pour over the rice mix.
- Sprinkle with Parmesan.
- Cook uncovered at 325 degrees until set, approx.
- 50 minutes.
- Let stand for 10-15 minutes, then cut into squares and serve!
- **Ifyou want to prepare it ahead of time, simply stop after you sprinkle on the Parmesan, cover and stick it in the fridge.
- Cook within 24 hours.
