Baked Beef Tacos image

This taco recipe takes classic taco ingredients and gives them a fresh approach by baking the shells upright in refried beans and tomatoes. The bottom gets soft, and the top stays crisp and crunchy. -Patricia Stagich, Elizabeth, New Jersey

1-1/2 pounds ground beef
1 envelope taco seasoning
2 cans (10 ounces each) diced tomatoes and green chiles, divided
1 can (16 ounces) refried beans
2 cups shredded Mexican cheese blend, divided
1/4 cup chopped fresh cilantro
1 teaspoon hot pepper sauce, optional
12 taco shells
Chopped green onions

Steps:

  • Preheat oven to 425°. In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and 1 can of undrained tomatoes; heat through., Meanwhile, in a bowl, mix beans, 1/2 cup cheese, cilantro, remaining can of undrained tomatoes and, if desired, pepper sauce. Spread onto bottom of a greased 13x9-in. baking dish., Stand taco shells upright over bean mixture. Fill each with 1 tablespoon cheese and about 1/3 cup beef mixture. Bake, covered, 15 minutes., Uncover; sprinkle with remaining cheese. Bake, uncovered, 5-7 minutes or until cheese is melted and shells are lightly browned. Sprinkle with green onions.

1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

This is a casserole that closely resembles a cheesey soft taco that is served in a bowl. It's very yummy, everyone who has had it has loved it in my home. Serve with a side salad for a complete meal. This recipe originally came from Campbell's Soup, but I didn't really like it that way so I've added a few extras here and there.

1 -1 1/2 lb ground beef
1 green bell pepper, diced
1 medium onion, diced (I use a white onion)
2 cups cheddar cheese, shredded
4 ounces campbell's tomato soup (I buy the regular can and just use half of the soup)
0.5 (15 ounce) jar pace salsa (I use medium)
6 soft flour tortillas, 8 inches, cut into 1-inch squares
1/2 cup milk

Steps:

  • Brown meat with onions and bell peppers until meat is no longer pink and the onions and bell peppers are done.
  • Drain meat mixture then return to pan.
  • Add in the half can of tomato soup and the half jar of salsa, mix well.
  • Next, add in half of the cheese and the milk and tortilla squares, mix well.
  • Heat until cheese is melted.
  • Transfer into a casserole dish and top with remaining cheese.
  • Bake at 350 degrees for 25-30 minutes.

¾ pound ground beef
⅓ cup diced onion
1 clove garlic, minced
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (8 ounce) can tomato sauce
1 cup long-grain white rice
1 cup water
1 (1.25 ounce) package taco seasoning
aluminum foil
½ (8 ounce) package grated sharp Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch casserole dish with cooking spray.
  • Heat ground beef in a skillet over medium heat. Cook and stir, breaking up into crumbles, until browned, about 5 minutes. Add onion and garlic and cook for 5 more minutes. Mix in diced tomatoes and green chiles, tomato sauce, rice, water, and taco seasoning; stir to combine. Transfer mixture to the prepared casserole dish and cover with foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and sprinkle Cheddar cheese evenly over the top. Continue baking until cheese is golden and lightly browned, about 15 minutes more.

6 flour tortillas (8-inch) OR 8 corn tortillas (6-inch), cut into 1-inch pieces
1 cup shredded Cheddar cheese (about 4 ounces)

Steps:

  • Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often. Pour off any fat.
  • Stir the soup, salsa, milk, tortillas and half the cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Cover the baking dish.

1 (4 ounce) can chopped green chilies

1 tablespoon hot sauce
1/4 cup chopped fresh cilantro
3 cups shredded Mexican blend cheese
1 1/2 lbs lean ground beef
1 (1 1/4 ounce) package taco seasoning mix
12 taco shells
3 scallions, sliced thin

Steps:

  • Adjust oven rack to upper middle position and heat oven to 475 degrees.
  • Combine half of tomatoes, beans, hot sauce, and cilantro in bowl. Spread evenly in 13 by 9 inch baking dish. Sprinkle with 1 cup cheese.
  • Cook beef in large nonstick skillet over medium-high heat until no longer pink, about 5 minutes. Pour off fat, then stir in taco seasoning, remaining tomatoes, and reserved tomato juice. Simmer over medium-low heat until thickened and nearly dry, 5 to 7 minutes.
  • Spoon 1 tablespoon cheese into each taco shell and top with beef mixture.
  • Arrange tacos upright in bean mixture, cover with foil, and bake until bubbling, about 10 minutes.
  • Remove foil, top with remaining cheese, and bake until cheese is melted, about 6 minutes. Sprinkle with scallions. Serve.

½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. 1 can (11 oz) whole kernel corn with red and green peppers, drained
1 cup shredded Colby-Monterey Jack cheese blend
Sour Cream, if desired

Steps:

  • Heat oven to 450° F. Grease 9x13-inch pan. In medium bowl, mix Bisquick mix, water and cilantro until soft dough forms. Spread in bottom of pan.
  • In large bowl, mix beef, salsa and corn. Spoon beef mixture over dough.
  • Bake uncovered, 22 to 28 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Immediately sprinkle with cheese. Let stand 1 to 2 minutes or until cheese is melted. Serve with sour cream.
