Beef Rouladen image

This classic German dish is made with thinly sliced beef covered with mustard, bacon, onions, and rolled around a dill pickle!

6 slices beef round ( or thinly sliced flank steak*)
3 tablespoons yellow mustard
6 slices bacon
1 onion (sliced)
6 dill pickles
1 tablespoon butter
2 cups beef broth (low sodium)
¼ cup pickle juice
1 can mushrooms (with juice (optional))
salt & pepper to taste
3 tablespoons cornstarch
mashed potatoes or elbow macaroni for serving

Steps:

  • Preheat oven to 325°F.
  • Layout beef slices and gently pound using a meat tenderizer.
  • Spread a thin layer of mustard over each slice and season with pepper.
  • Lay bacon over each slice. Top with onions and a dill pickle.
  • Roll each Rouladen jelly-roll style and secure with toothpicks.
  • Heat butter in a pan and brown each roll. Place in a roasting dish, add broth, canned mushrooms and ¼ cup pickle juice (and extra onions if desired). Roast 90-120 minutes or until fork-tender.

Number Of Ingredients 21

1 teaspoon vegetable oil
Two 1-pound bone-in beef shanks
4 to 6 slices fresh ginger
5 dried chiles
1/2 bunch scallions, cut into 3-inch pieces
1 1/2 cups soy sauce
1 1/2 cups red wine
1/2 cup brown sugar
1 teaspoon whole cloves
1 teaspoon fennel seeds
1/2 teaspoon white pepper
6 to 8 whole star anise
3 whole cardamom pods
1 small cinnamon stick
6 tablespoons hoisin sauce
1/2 cups all-purpose flour, plus more for rolling
1/2 cup warm water
1 teaspoon vegetable oil, plus more for cooking
1/2 cup cilantro, roughly chopped
2 cucumbers, julienned
2 scallions, sliced

Steps:

  • For the braised beef: Heat the oil in a large pot over medium-high heat. Then add the beef shanks, browning deeply on each side, about 5 minutes per side. Set aside.
  • Add the ginger, dried chiles and scallions and saute until fragrant. Add the soy sauce, wine, sugar, cloves, fennel, white pepper, star anise, cardamom and cinnamon stick. Return the beef to the pot, add enough water to cover and bring to a simmer. Cover and cook gently until tender when pierced with a fork, about 2 hours.
  • Shred the beef with forks and set aside. Reserve 6 tablespoons of the braising liquid and mix with the hoisin sauce in a small bowl until smooth.
  • For the wraps: Combine the flour, water and oil and knead until smooth and pliable, about 5 minutes; the dough should be slightly tacky. Cover with plastic wrap and rest for 10 to 15 minutes. The resting is important, don't skip it!
  • Roll the dough out into a 10-by-14-inch rectangle and then roll into a log. Cut into 6 pieces. On a lightly floured surface, press down on your small piece of dough and roll into a circle, about 1/4-inch thick. Let rest for 10 minutes.
  • Stretch each circle out until you can see light coming through the dough. Set aside with a damp cloth on top. When ready to use, heat up a little oil on a griddle or large saute pan over medium- high heat; the pan should be hot but not smoking. Place the wrap in the pan and cook until golden brown on one side. Then flip and cook until just cooked on the other side. Repeat with the remaining wraps.
  • To assemble: Brush 1 tablespoon of the hoisin sauce evenly onto the less cooked side of the wrap. Evenly layer the beef onto the wrap. Add the cilantro, cucumber and scallions. Roll up, slice and enjoy!

1 ½ pounds flank steak
German stone ground mustard, to taste
½ pound thick sliced bacon
2 large onions, sliced
1 (16 ounce) jar dill pickle slices
2 tablespoons butter
2 ½ cups water
1 cube beef bouillon

Steps:

  • Cut the flank steak into thin filets; about 1/4 inch thick and 3 inches wide.
  • Generously spread one side of each filet with mustard to taste. Place bacon, onions and pickle slices on each filet and form into a roll. Use string or toothpicks to hold the roll together.
  • Heat a skillet over medium heat and melt butter. Place the rolls in the butter and saute until browned.
  • Pour in 2 1/2 cups of water and add the bouillon cube; stirring to dissolve the bouillon cube. Simmer the rolls for about an hour.

For something that looks and tastes as impressive as this beef rouladen, it's actually one of the simplest stuffed meat recipes I know. You can pretty much use any cheap cut of beef; I used round steak, but rump, chuck, flap meat, and other similar cuts will work work.

2 (6 ounce) (1/4 inch thick) slices of beef round
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons Dijon mustard
4 strips bacon
paprika, or to taste
½ onion, sliced into half-rings and separated
6 dill pickle spears
1 tablespoon vegetable oil
2 tablespoons butter
¼ cup all-purpose flour
3 cups beef broth
salt to taste

Steps:

  • Place slices of beef on a work surface, Season both sides with kosher salt and pepper. Spread one side with mustard. Place bacon strips on the mustard and sprinkle with paprika. Arrange onion slices cross-wise on the beef. Then evenly space 3 pickle slices across each slice of beef. Keep about an inch of the narrowest end of the beef slice free of toppings to facilitate rolling it up.
  • Roll each slice of meat, beginning from the wider of the two short ends, working to keep all ingredients inside the roll. Rolls should be nice and tight. Secure the rolls (seam side down) with 3 loops of butcher's twine, one in the middle and one at each end. Trim excess string.
  • Heat vegetable oil over medium-high heat in a large saucepan. Cook beef, turning and browning well on all sides, about 8 minutes. Remove meat from pan. Reduce heat to medium-low. Melt butter in the pan; whisk in the flour, cooking for about 1 minute. Pour in cold beef broth and whisk vigorously to combine. Raise heat to medium-high and simmer until sauce begins to thicken, about 1 minute.
  • Transfer beef rolls to pan along with accumulated juices. Reduce heat to very low. Simmer gently, covered, turning rolls every 20 minutes or so, until beef is tender, about 1 1/2 hours. When the tip of a sharp knife can easily be inserted into the beef roll, the meat is done.
  • Transfer meat to dish to allow it to rest. Raise heat to high and bring cooking liquid to a simmer to thicken slightly to make a gravy, about 1 minute. Serve rouladen with gravy.

Kosher salt and freshly ground black pepper
1 pound top side beef, thinly sliced into 8 pieces
2 tablespoons yellow mustard
2 dill pickles, quartered lengthwise
8 slices uncooked bacon
1/2 large yellow onion, sliced
1/4 cup vegetable oil
1/4 cup all-purpose flour
4 quarts water
4 cups hot reserved cooking liquid from the beef rolls
1 cup beef stock
1/4 cup tomato paste
2 tablespoons red wine
1 tablespoon paprika
Kosher salt and freshly ground black pepper
Mashed potatoes or noodles and a vegetable, for serving

Steps:

  • For the beef rolls: Sprinkle salt and pepper over each side of the sliced beef. Then spread a thin layer of yellow mustard onto each piece. Divide the pickle strips, bacon and onions onto each steak. Fold in the sides and roll to secure the insides.
  • Heat the oil in a large skillet over medium-high heat and brown the rolls on all sides, about 3 minutes per side. Remove the rolls and set aside. Add the flour to the pan and cook until light brown to make a roux, 3 to 5 minutes. Remove from the heat and reserve the roux in the pan to make the sauce.
  • Bring the water to a boil in a large stockpot. Wrap each beef roll in a 11-by-7-inch piece of aluminum foil and twist the ends to seal the rolls tightly inside. Place the rolls into the boiling water and bring down the heat to a high simmer. Cover and cook in the water for 1 hour and 30 minutes.
  • Remove the rolls from the water with tongs and reserve the cooking liquid to prepare the sauce.
  • For the sauce: Heat the pan with the roux over medium heat and add the cooking liquid, stock, tomato paste, red wine and paprika. Simmer until the liquid is a sauce consistency (coats a spoon). Season with salt and pepper. Yield: 4 cups.
  • To serve, unwrap the beef rolls from the foil. Spoon the sauce over each beef roll and accompany with mashed potatoes or noodles covered in sauce and a vegetable.

1 3/4 lbs beef top round steak, sliced into 8 thin slices & prepared for cooking
3 tablespoons spicy brown mustard

4 large dill pickles, halved lengthwise or 8 medium dill pickles
2 tablespoons vegetable oil
2 onions, thinly sliced
1 cup dark beer or 1 cup beef stock
1 bay leaf

Steps:

  • Preheat oven to 350°F Keep flameproof casserole dish WITH LID ready.
  • Lay slices of beef (pounded to thickness of 1/4 inch) flat on work surface. Spread each slice with mustard, almost to edges. Season with salt & pepper.
  • Place a pickle spear along one end of each slice & roll up neatly. Tie rolls with string or secure with toothpicks.
  • Heat oil in casserole; add beef rolls & fry over med-high heat until browned on all sides. Remove from pan & set aside.
  • Add onions to pan and fry until soft & beginning to brown, stirring frequently.
  • Return beef rolls to pan and add beer and bay leaf. Bring to boil over high heat.
  • Cover pan tightly & transfer to the oven. Cook until beef rolls are very tender (about 1 hour). Turn them over halfway through cooking to ensure even cooking.
  • Remove string/toothpicks and discard bay leaf prior to serving.
  • Serve with rice or potatoes.

Posted for the Zaar World Tour-Germany. This recipe is from my German great-grandmother. I took these to my son's school for "Heritage Day" when he was young. The other students/parents were a little "apprehensive" to try them when they were told these rolls had pickles, onions, and mustard in them. Needless to say, they were a big hit and I didn't bring any leftovers home.

prepared mustard
3 onions, finely chopped

2 beef cube steaks (6 ounces each)
1 medium dill pickle, cut lengthwise into eight pieces

1 bacon strip, halved
2 tablespoons butter
1 bay leaf
2 teaspoons beef bouillon granules
1/2 teaspoon dried rosemary, crushed
1/8 teaspoon salt
1-1/2 cups water, divided
1 tablespoon all-purpose flour
1 teaspoon browning sauce, optional

Steps:

  • Spread 1 tablespoon mustard over one side of each piece of meat. Top each piece with four pickle pieces, a fourth on onion and a piece of bacon. Roll up jelly-roll style and secure with toothpicks. In a skillet, cook meat in butter on all sides until browned. Add the bay leaf, bouillon, rosemary, salt and remaining onion.   • *Do not remove the browned bits in the bottom of the pan (important for a flavorful gravy): Add the onions to the pot and a little more butter or oil if needed. Cook the onions until softened and translucent, about 5 minutes. Add the garlic and cook for another minute. Add the leek, carrots and celery and cook for another 5 minutes. Pour in the red wine, bring to a rapid boil for one minute, reduce the heat to medium and simmer for 2-3 more minutes. Add the beef broth, tomato paste, bay leaf, sugar, salt and pepper.
  • Nestle the beef rouladen in the pot. Oven or Stovetop: You can cook the rouladen, covered, on the stovetop on low for about 90 minutes or until fork tender, but for the most even cooking we recommend transferring the pot (make sure it's oven-safe) to the oven preheated to 325 F and cook it there for about 90 minutes or until fork tender.
