Beef, Potato & Egg Bake image

1 pound lean ground beef (90% lean)
2 teaspoons onion powder
1-1/2 teaspoons salt, divided
1 teaspoon garlic powder
1/2 teaspoon rubbed sage
1/2 teaspoon crushed red pepper flakes
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
4 cups frozen shredded hash brown potatoes
14 large eggs
1 cup fat-free ricotta cheese
1/3 cup fat-free milk
3/4 to 1 teaspoon pepper
3/4 cup shredded Colby-Monterey Jack cheese
1-1/3 cups grape tomatoes, halved

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef with onion powder, 1/2 teaspoon salt, garlic powder, sage and pepper flakes over medium heat 6-8 minutes or until no longer pink, breaking up beef into crumbles; drain. Stir in spinach. Remove from heat., Spread potatoes in a greased 13x9-in. baking dish; top with beef mixture. In a large bowl, whisk eggs, ricotta cheese, milk, pepper and remaining salt; pour over top. Sprinkle with cheese. Top with tomatoes., Bake, uncovered, 45-50 minutes or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

2 pounds ground beef
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/4 teaspoons dried parsley flakes
1 teaspoon dried minced onion
1/4 teaspoon pepper
1 package (32 ounces) frozen cubed hash brown potatoes, thawed
4 cups shredded cheddar cheese, divided
1 can (8 ounces) mushroom stems and pieces, drained

Steps:

  • In large skillet, cook beef over medium heat until no longer pink; drain. Meanwhile, in a large bowl, combine the soups, parsley, onion and pepper. Add the potatoes, 2 cups cheese and mushrooms. Stir in beef. , Transfer to two greased 8-in. square baking dishes. Sprinkle each with 1 cup cheese. Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 375° for 45-50 minutes or until potatoes are tender. Uncover and bake for 5-10 minutes or until cheese is melted. , To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed.

3 medium white potatoes (pared, and sliced very thin)
1 lb lean ground beef
1/2 cup onion, chopped
1/4 cup celery, chopped
1 teaspoon garlic, minced
1 teaspoon celery leaves (fresh or dried optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes (spicy optional)
2 tablespoons butter
2 tablespoons flour
3/4 cup milk (add a little more if needed)
1/2 cup grated cheddar cheese
1/2 teaspoon nutmeg
1/4 teaspoon chili powder (optional)
1 pinch salt
1 pinch pepper
1 pinch paprika
grated cheddar cheese

Steps:

  • Spray a baking dish with cooking spray.
  • Preheat oven 375 degrees.
  • Spray a large skillet with cooking spray and brown ground beef.
  • Drain ground beef, if necessary.
  • Add onions and celery to same skillet and cook until soft, adding rest of spice ingredients through pepper flakes. Stir well. But in a bowl and set to the side.
  • In same skillet, melt butter (or use 1 tablespoon of leftover grease from browning ground beef). Add flour to butter, stirring for one minute over medium-high heat.
  • Gradually add milk and cook till bubbly and thickened.
  • Add cheese, nutmeg, salt, pepper, and chili powder continue to stir until melted.
  • Spoon 1/4 cup of the ground beef mixture and spread evenly on bottom of a baking dish.
  • Add 1 layer of potatoes.
  • Alternate ground beef mixture, then potatoes until completely used.
  • Pour cheese sauce over ground beef and potato mixture.
  • Top with a pinch of paprika and grated cheese.
  • Bake for 1 hour, or until potatoes and beef are bubbly and done.

This is another tasty recipe that I got off of one of the Ontario milk calendars. It is similar in composition to moussaka - a meat layer, a vegetable layer and a creamy sauce, all baked together to make a yummy casserole.

1/4 cup butter, divided
2 tablespoons vegetable oil
3 potatoes, peeled and thinly sliced
2 zucchini, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1 onion, finely chopped
1 teaspoon dried Italian herb seasoning
1 lb lean ground beef
1/2 cup prepared pasta sauce
2 cups milk, divided
1/4 cup all-purpose flour
1 1/4 cups grated cheddar cheese

Steps:

  • Preheat oven to 375 degrees F.
  • In a skillet, melt 2 tablespoons of the butter and oil.
  • Add the potatoes and cook over medium-low heat for 5 minutes, stirring frequently.
  • Add zucchini, salt and pepper.
  • Cook until the zucchini is tender.
  • Spoon the vegetable mixture into a 13 x 9 inch baking dish.
  • Set aside.
  • In a skillet, cook the onion with the Italian seasoning until the onion is tender.
  • Add ground beef, cook and stir until the beef loses its pink colour.
  • Stir in the tomato sauce and 1/2 cup of milk.
  • Spoon the meat mixture over the vegetable layer in the dish.
  • Melt the remaining butter, stir in the flour and cook for 1 minute.
  • Gradually whisk in the remaining milk.
  • Cook and stir until the sauce comes to a boil and thickens.
  • Stir in the cheese.
  • Pour the sauce over the meat layer.
  • Bake for 20 to 25 minutes or until golden brown.
  • Let stand for 10 minutes before serving.

This is one of my husband's favorite recipes for a weekend supper. It's great the next day, but don't microwave it to reheat, as the topping will be soggy.

2 tablespoons shortening
2 pounds beef stew meat, cut into 3/4 inch pieces
1 large onion, thinly sliced
1 cup water
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream
1 ¼ cups milk
1 teaspoon salt
¼ teaspoon ground black pepper
4 large potatoes, peeled and chopped
1 cup shredded Cheddar cheese
1 ¼ cups whole wheat flake cereal, crumbled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over high heat, melt the shortening and quickly brown the ground beef with the onion. Stir in water and bring to a boil. Cover, reduce heat to low and simmer for 30 minutes.
  • In a medium bowl, thoroughly mix the condensed cream of mushroom soup, sour cream, milk, salt and pepper. Set aside.
  • Pour meat mixture into a 9x13 inch baking dish. Arrange potatoes over the meat. Pour soup mixture over the potatoes. Sprinkle with Cheddar cheese. Top with whole wheat flake cereal.
  • Bake in preheated oven, uncovered, for 1 1/2 hours.

3 cups thinly sliced, peeled potatoes
2 tablespoons butter, melted
½ teaspoon salt
1 pound ground beef
1 (10.5 ounce) can cream of mushroom soup
1 ½ cups shredded sharp Cheddar cheese, divided
½ cup milk
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
  • Place sliced potatoes in a large bowl. Pour melted butter over top and sprinkle with salt; mix until potatoes are thoroughly coated. Line the bottom and sides of the prepared baking dish with potatoes, overlapping as needed.
  • Bake in the preheated oven until potatoes are fork-tender, about 30 minutes.
  • While the potatoes are baking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer beef to a large bowl and add condensed soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper and mix until well combined.
  • Remove potatoes from the oven. Pour beef mixture over top and return to the oven. Bake until heated through, about 15 minutes. Sprinkle remaining Cheddar over top and bake until melted, 4 to 5 more minutes.
