Kale adds vitamins and an enticing cabbage-like flavor to this mushroom and beef soup. Be sure to use fresh kale as it can become pungent if stored too long.

12 ounces beef sirloin steak, trimmed
1 tablespoon canola oil
4 cups sliced assorted mushrooms, such as white, cremini, shiitake and morel
¼ cup chopped shallot
2 cloves garlic, minced
4 cups low-sodium beef broth
1 (14.5 ounce) can no-salt-added diced tomatoes, undrained
1 cup chopped carrot
½ cup chopped celery
1 bay leaf
½ teaspoon dried leaf thyme, crushed
½ teaspoon salt
¼ teaspoon black pepper
2 cups loosely packed chopped fresh kale

Steps:

  • Cut beef into 3/4-inch cubes. In a 4- to 5-quart Dutch oven brown beef in hot oil over medium-high heat. Remove beef; set aside. Add mushrooms, shallot and garlic to pan. Cook for 4 to 5 minutes or until mushrooms are tender and light brown, stirring occasionally. Return beef to pan. Add broth, tomatoes, carrot, celery, bay leaf, thyme, salt and pepper, stirring to loosen any browned bits from bottom of pan. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until carrot is tender.
  • Stir in kale. Simmer for 5 to 10 minutes or until kale is tender. Discard bay leaf before ladeling into bowls.

It's always better the second day, so you might want to cook it one day, refrigerate it overnight, and then cook it again the next day.

2 pounds beef stew meat, cut into small pieces
1 tablespoon vegetable oil
1 ½ onion, chopped
3 stalks celery, chopped
3 carrots, chopped
7 ½ cups beef stock
8 ounces pearl barley
1 pound mushrooms, sliced

Steps:

  • Cook beef stew meat in a large skillet over medium heat until completely browned, 5 to 7 minutes; transfer to a large soup pot.
  • Heat vegetable oil in the same skillet over medium heat; cook and stir onion, celery, and carrot in the hot oil until the onions are tender, about 5 minutes. Add the vegetable mixture to the beef in the pot.
  • Pour beef stock into the pot.
  • Stir pearl barley into the stock.
  • Place soup over medium-low heat, bring to a simmer, and cook, stirring occasionally, until the beef is completely tender, about 2 hours.
  • Stir mushrooms through the soup; cook 1 hour more.

1 cup chopped onion
1 clove garlic, chopped

2 cups red wine

2 tablespoons plus 1 teaspoon canola oil
One 1- 1/4 to 1-1/2 pounds beef shin on the bone, trimmed of excess fat
Kosher salt and freshly ground black pepper
1 carrot, diced
1/2 onion, diced
1 rib celery, diced
1/2 teaspoon dried thyme
6 cups water
1/3 cup pearl barley, rinsed
1 cup chopped canned tomato
1 tablespoon unsalted butter
3/4 pound medium-sized button mushrooms, brushed, trimmed, and quartered
3 tablespoons minced flat-leaf parsley

Steps:

  • Heat a large soup pot or Dutch oven over medium-high heat; add 2 tablespoons of the oil. Season the meat generously with salt and pepper. Sear the meat on all sides until well browned; this will take about 15 minutes. Set the meat aside and wipe the pan out with a paper towel. Lower the heat to medium, add the oil to the pan. Add the carrot, onion, and celery to the pan and saute until tender, about 10 minutes. Return the meat to the pan with the water. Bring to a boil, adjust the heat to maintain a gentle simmer, cover, and cook for 1 1/2 hours or until the meat is just tender. Add the thyme, barley, and tomato, continue to simmer the soup, covered, for 45 minutes.
  • Meanwhile, in a medium saute pan, heat the butter over medium-high heat, add the mushrooms and saute until golden, about 10 minutes. Season the mushrooms with salt and pepper to taste, and add them to the soup, and simmer for 15 minutes more. Remove the meat from the soup; cut the meat from the bone and dice. Skim any fat from the surface of the soup with a ladle or large spoon. Return the meat to the soup with the parsley. Season the soup with salt and pepper to taste. Serve in warm bowls.

4 Chinese black mushrooms
1 1/2 lbs ground chuck
2 stalks leeks, minced white part only
4 tablespoons oyster sauce
16 egg roll wraps
1 egg, beaten
1/2 gallon chicken broth
1 cup beef broth
4 baby bok choy

Steps:

  • In a mixing bowl add in the mushroom and full with warm water and soak until the mushroom is soft and cut off the stem of the mushrooms. Slice the soft mushroom into paper thin slice and set aside.
  • In a mixing bowl combine ground chuck, mushroom slices and leek and oyster sauce and mix well.
  • Place a tablespoon full of the beef mixture and brush with beaten egg and fold the wrapper in into a dumpling form and repeat this step until done.
  • Place into a baking pan line with a sheet of parchment paper and when the pan is full place into a freezer overnight.
  • In a large pot fill with salted water bring to a rolling boil add in the dumpling and return back to a boil and when the dumpling float to the top remove and place into a plate and set aside. Pour out the water and fill with chicken broth and beef broth and bring to a rolling boil add in the precook dumpling and baby bok toy and serve hot.

1 tablespoon butter
1 1/2 cups Bisquick baking mix
2/3 cup milk

FOR THE SOUP
4 cup(s) water
2 tablespoon(s) better than beef bouillon
8 ounce(s) fresh mushrooms sliced
1 medium onion chopped
1 bouquet garni i used rosemary, thyme and bay leaves
salt and pepper to taste
FOR THE DUMPLINGS
3/4 cup(s) flour
1 teaspoon(s) baking powder
2 tablespoon(s) lard or butter
1/2 teaspoon(s) salt
1/4 cup(s) fresh cilantro chopped
2-3 tablespoon(s) cold water

Steps:

  • For the soup Place water in a large pot. Mix in the bouillon over high heat and bring to a boil. Reduce heat to a simmer and add the onions, and mushrooms. Wrap the rosemary, thyme and bay leaf in a cheese cloth and tie the end with butchers twin. Throw that in the soup. Let simmer for 15 minutes stirring occasionally.
  • Taste and season with salt and pepper.
  • To make the dumplings. Mix the flour, baking powder and salt together. Add the lard or butter with the cilantro and mix well. Add cold water a little at a time to make it soft but not sticky.
  • Bring soup back to a boil and drop the dumplings in by spoonfuls. You should have around 12 dumplings. Reduce the heat cover and simmer 15 more minutes. Remove the bouquet garni and discard.
  • Ladle into bowls and serve
