2 tablespoons toasted sesame oil
1/2 cup finely diced red onion
1 teaspoon minced garlic
2 strips (1 1/2 ounces) applewood-smoked bacon, finely chopped ( cup)
1 cup (6 ounces) frozen edamame, thawed
1/2 cup fresh corn kernels, from 1 small ear
1/4 cup small-diced red bell pepper
Kosher salt and freshly ground white pepper

Steps:

  • In a large skillet, heat the sesame oil over medium heat. Saute the onion and garlic until softened, about 2 minutes. Add the bacon and cook until it has rendered its fat and begins to crisp, about 5 minutes.
  • Add the edamame, corn and bell pepper and saute for 2 to 3 minutes. Season with 1/2 teaspoon salt and 1/8 teaspoon white pepper. Remove from the heat and serve hot.

Call them kabobs, kebabs, or shish kabobs. Either way, what's a summer grill without them? Marinate sirloin chunks in soy sauce with garlic, ginger, and olive oil. Skewer with veggies and get to grilling!

Marinade Ingredients:
1/3 cup extra virgin olive oil
1/3 cup soy sauce
3 tablespoons red wine vinegar
1/4 cup honey
2 cloves garlic, minced
1 tablespoon minced fresh ginger
Freshly ground black pepper to taste
Kebab Ingredients:
1 1/2 pounds top sirloin steak, cut into 1 1/2-inch cubes
1 large bell pepper
1 - 2 medium red onions
1/2 - 1 pound button mushrooms

Steps:

  • Marinate the meat: Mix the marinade ingredients together in a bowl and add the meat. Cover and chill in the fridge for at least 30 minutes, preferably several hours or even overnight. (Heck, I've kept the meat marinating for a couple days, still great.)
  • Soak skewers in water: Soak the wood or bamboo skewers in water for at least 30 minutes before grilling. This will help prevent them from completely burning up on the grill.
  • Thread the meat and veggies onto the skewers: Cut the vegetables into chunks roughly the width of the beef pieces. Taking care not to poke yourself, thread the meat and vegetables onto double bamboo skewers. One way to do this safely is to put the piece that you are trying to pierce on a cutting board, and then push the skewers through the piece to the board. Using double skewers will help you turn the kebabs on the grill. If you keep a little space between the pieces, they will grill more evenly. Paint the kebabs with some of the remaining marinade.
  • Grill on high, direct heat: Prepare your grill for high, direct heat. Grill for 8 to 10 minutes, depending on how hot your grill is, and how done you would like your meat, turning occasionally.
  • Let rest: Let the meat rest for 5 minutes before serving.

1 can (11 oz) whole kernel corn with red and green peppers, drained
1 1/2 cups frozen shelled edamame (soybeans), thawed
1 cup small cherry tomatoes, cut in half
1/2 cup chicken broth
1 tablespoon finely chopped canned chipotle chiles in adobo sauce
1/2 teaspoon salt
1 teaspoon grated lime peel
1/3 cup fresh lime juice
1 tablespoon finely chopped canned chipotle chiles in adobo sauce
1 teaspoon ground cumin
1/2 teaspoon salt
3 cloves garlic, finely chopped
1 1/2 lb boneless beef sirloin steak, 3/4 to 1 inch thick, cut into 1-inch pieces
1 medium red onion, cut into 24 wedges and separated

Steps:

  • In 10-inch skillet, heat all succotash ingredients over medium heat 4 to 6 minutes, stirring occasionally, until edamame are crisp-tender; refrigerate.
  • In shallow glass or plastic dish or resealable food-storage plastic bag, mix all marinade ingredients. Add beef; stir to coat with marinade. Cover dish or seal bag; refrigerate at least 2 hours but no longer than 24 hours, stirring once, to marinate.
  • Heat gas or charcoal grill. Drain beef, reserving marinade. On each of twelve 10-inch metal skewers, thread beef and onion alternately, leaving 1/4-inch space between each piece. Brush onion with reserved marinade.
  • Place kabobs on grill. Cover grill; cook over medium heat 6 to 8 minutes for medium beef doneness, turning and brushing with reserved marinade occasionally. Discard any remaining marinade. Serve kabobs with succotash.

Many times, I must come up with recipes requiring only ingredients already in my pantry. This is one of them. It's my husband's favorite meat dish. -Dolores, Lueken, Ferdinand, Indiana

1 bottle (8 ounces) French or Russian salad dressing
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 pound beef top sirloin steak, cut into 1-1/2-inch cubes
8 to 10 bacon strips, cut in half
1 sweet red pepper, cut into chunks
1 green pepper, cut into chunks
2 small zucchini squash, cut into chunks
8 medium fresh mushrooms
1 large onion, quartered, optional

Steps:

  • In a small bowl, whisk the first five ingredients. Place half of marinade in a large resealable plastic bag. Add beef; seal bag and turn to coat. Refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in bag. Wrap bacon around beef cubes. On four metal or soaked wooden skewers, alternately thread beef and vegetables., Grill, covered, over medium heat 10-15 minutes or until beef reaches desired doneness and vegetables are tender, turning occasionally and basting frequently with reserved marinade.

A fun twist on a popular side dish. This is my rendition of a recipe that first appeared in Vegetarian Times magazine. Though typically served hot, leftovers make a great lunch salad served at room temperature.

2 teaspoons vegetable oil
1/2 cup chopped red pepper
1/3 cup chopped Spanish onion (or other mild white onion)
2 minced garlic cloves
1 1/2 cups fresh shelled edamame or 1 1/2 cups frozen shelled edamame
2 cups fresh corn or 2 cups frozen corn
3 tablespoons vegetable stock
1/2 teaspoon sea salt
1/4 teaspoon white pepper
1 tablespoon chopped parsley
2 tablespoons chopped fresh basil

Steps:

  • Note: If you are using frozen edamame, prepare first before making this dish. Usually that means boiling the beans in water (omit salt) for 5 minutes and draining.
  • Heat oil in a large nonstick skillet over medium heat. Add the onions and bell pepper and cook for 1 minute, stirring as needed. Add the garlic and cook an additional minute continuing to stir.
  • Stir in the corn, edamame and broth. Cook 4 minutes, still stirring.
  • Remove pan from heat and add in the parsley, basil, salt and pepper. Adjust seasonings as desired.
  • Serve.

1 small onion, chopped
1 cup canned whole kernel corn
1 cup canned lima beans
1 cup chopped tomato
1/2 teaspoon caraway seed

1/2 cup shredded cheddar cheese
1/4 cup cracker crumb

Steps:

  • Pre Heat oven to 325 degrees.
  • Saute onion in oil until lightly browned.
  • Mix together everything except chedder cheese and cracker crumbs.
  • Turn mixture into a buttered casserole dish.
  • Mix together chedder cheese and cracker crumbs and sprinkle over mixture.
  • Bake for 30-35 minutes until cheese melts and dish is hot through and through.

2 slices bacon
1 tablespoon extra virgin olive oil
1 bunch scallions, sliced on an angle, both white and green parts or 1 medium onion, diced
1 red bell pepper, diced
3 garlic cloves, minced
1 1/2 teaspoons chopped fresh thyme
1 (10 ounce) package frozen shelled edamame, thawed (see Tip)
1 (10 ounce) package frozen corn, thawed (about 2 cups)
1/2 cup reduced-sodium chicken broth or 1/2 cup vegetable broth
1 tablespoon cider vinegar
1/4 teaspoon salt
fresh ground black pepper, to taste
crushed red pepper flakes (a pinch or two)
1 lb raw shrimp, peeled and deveined (26-30 per pound)
1/4 teaspoon lemon pepper

Steps:

  • Cook bacon in a large nonstick skillet over medium heat until crisp, about 5 minutes.
  • Leaving the drippings in the pan, use tongs to transfer the bacon to a plate lined with paper towels; let cool.
  • Add oil to the pan.
  • Add scallions (or onion), bell pepper, garlic and thyme and cook, stirring, until softened, about 3 minutes.
  • Stir in edamame, corn, broth, vinegar and salt.
  • Bring to a simmer; reduce heat to medium-low and cook for 5 minutes.
  • Meanwhile, sprinkle shrimp on both sides with lemon pepper.
  • Scatter the shrimp on top of the vegetables, cover and cook until the shrimp are cooked through, about 5 minutes.
  • Crumble the bacon and sprinkle it on top.
  • *TIP: Tip: Edamame are found in the natural-foods freezer section of large supermarkets and natural-foods stores, sold both in and out of the "pods." For this recipe, you'll need the shelled edamame. One 10-ounce bag contains about 2 cups of shelled beans.

5 ears corn, shucked
½ yellow onion, peeled
1 red bell pepper, stemmed and seeded
1 jalapeno pepper
3 tablespoons olive oil, divided
salt and ground black pepper to taste
1 cup frozen shelled edamame (green soybeans)
1 tablespoon white wine vinegar
2 tablespoons chopped fresh basil, or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place corn, onion, red bell pepper, and jalapeno pepper on a baking sheet. Drizzle vegetables with 2 tablespoons olive oil; season with salt and pepper. Rub to evenly coat.
  • Transfer vegetables to grill and cook, turning several times, until vegetables are tender and dark marks appear, 10 to 15 minutes. Set aside to cool.
  • Bring a pot of water to a boil; cook edamame in the boiling water until tender, 10 to 15 minutes. Drain and cool.
  • Whisk 1 tablespoon olive oil and vinegar together in a bowl.
