PRIME RIB WITH RED WINE-THYME BUTTER SAUCE



Prime Rib with Red Wine-Thyme Butter Sauce image

2 sticks unsalted butter, at room temperature
1/4 cup fresh thyme leaves
Kosher salt and freshly ground black pepper
One 12- to 14-pound prime rib, trimmed of some excess fat
11 large cloves garlic, 8 whole and 3 chopped
Canola oil, for brushing
Kosher salt and freshly ground black pepper

3 shallots, chopped
1 bottle Cabernet Sauvignon
Few splashes Cabernet Sauvignon vinegar
4 cups homemade roasted chicken stock, warmed
12 whole black peppercorns
Chopped fresh parsley, for garnish

Steps:

  • For the butter: Combine the butter and thyme in a food processor and process until smooth, then season with salt and pepper. Scrape the butter into a ramekin, cover with plastic wrap and refrigerate until cold and the flavors meld, at least 2 hours and up to 48 hours.
  • For the prime rib: Remove the prime rib from the refrigerator 2 hours before roasting. Pat the surface dry with paper towels. Make 8 small slits over the surface of the fat cap and fill each slit with a whole garlic clove.
  • Place the roast on a large cutting board, then brush with oil and season heavily with salt and pepper 15 minutes before roasting.
  • Preheat the oven to 450 degrees F.
  • Place the roast, bone-side down (fat-side up), in a large roasting pan fitted with a rack. Roast for 20 minutes. Reduce the heat to 350 degrees F and continue roasting until a digital instant-read thermometer inserted into the center and ends of the meat registers 125 degrees F for medium-rare doneness, about 3 hours. Start checking the temperature after 2 hours.
  • Transfer the meat to a cutting board with a juice groove. Pour off all but a few tablespoons of the fat from the pan, and place the roasting pan over two burners set to high heat. Add the shallots and the remaining 3 cloves chopped garlic, and cook until soft, about 4 minutes. Add the wine and vinegar and cook until reduced by three-quarters, about 5 minutes. Add the stock and peppercorns, and bring to a boil. Cook until reduced by half, about 10 minutes. Strain the sauce into a medium saucepan set over low heat. Bring to a simmer and cook until reduced a bit further. Slowly whisk in the cold thyme butter and cook until the sauce thickens (do not boil or the sauce will break). Season with salt and pepper. Finish with a dash of Cabernet Sauvignon vinegar and the chopped parsley to serve.

  • Combine salt, pepper, paprika, steak seasoning, garlic powder, onion powder, Cajun spice, thyme, rosemary, and basil in a container with an airtight lid.

ROASTED PRIME RIB BONES OR BEEF SHORT RIBS



Roasted Prime Rib Bones or Beef Short Ribs image

I have made this recipe many times using baby back pork ribs, the sauce from this is amazing, I have even added in a bottle of barbecue sauce in with the other ingredients! All ingredients can be doubled and adjusted to suit taste ---I most always serve these ribs with homemade fries or potato pancakes, see my recipe#129156 --- If you prefer a more spicy sauce just increase the cayenne or add in some crushed chili peppers to taste --- make certain to roast the bones in the oven for about 45 minutes before cooking them in the sauce it improves the flavor.

6 -7 lbs beef bones (prime rib roast bones)
seasoning salt (do not use too much salt to season the ribs!)
pepper
1 teaspoon garlic powder (optional or to taste)
1 -2 tablespoon minced fresh garlic
2 1/2 cups ketchup
1/2-3/4 cup cider vinegar (can use white vinegar also or half and half)
1/4 cup sugar
1/3 cup brown sugar (or to taste)
3 teaspoons chili powder
1/4 teaspoon cayenne pepper (or to taste)
2 teaspoons mustard powder
2 large onions, coarsley chopped
salt and pepper

Steps:

  • Prepare and grease a casserole or baking pan (large enough to hold ribs and sauce).
  • Season prime rib bones (baby back pork ribs if using) with seasoning salt, pepper and garlic powder.
  • Place the ribs in the casserole dish, and bake uncovered in a 350 degree oven for about 45-50 minutes; drain any fat.
  • In a bowl mix together the garlic, ketchup vineger, both sugars, chili powder, cayenne pepper and mustard powder; mix well to combine.
  • Add in chopped onions; mix well.
  • Pour the sauce over ribs, and mix with your hands to coat the ribs.
  • Bake uncovered for about 1 - 1-1/2 hours or until the beef (or pork) ribs are tender (baste occasionally, and season sauce salt and pepper if desired).
  • Delicious!

Beef Essentials: Short Rib Dry Rub image

I just put a mess of beef short ribs in the fridge for an overnight dry brine. Then, I am going to rub them this spice mix, and throw them into the smoker, with some hickory wood, for about 6 - 8 hours. This is a perfect spice rub for most beef; but especially beef short ribs. So, yummy. So, you ready... Let's get into the kitchen.

Steps:

  • PREP/PREPARE
  • This is not a rub for pork... pork likes sweet. This is a rub for beef, and do not be afraid of all the heat in the recipe. It mellows out as the ribs smoke, and produces an awesome flavor, and a great bark.
  • Here is what I do. I rub some salt into the ribs, cover with cling wrap, and place into the fridge overnight, or up to 24 hours. I then, take the ribs, rub with the spice mixture, and throw them into a 225f (107c) smoker until cooked... That may take from 5 - 10 hours; depending on the thickness of the ribs, I usually do not use a BBQ sauce on beef ribs, but that is up to you.
  • Gather your ingredients (mise en place).
  • Add the ingredients to a mixing bowl and whisk until combined.
  • Store in a non-reactive jar, in a cool, dry place (cupboard).
  • PLATE/PRESENT
  • Rub into the ribs, and allow to sit for 30 minutes, before smoking. Enjoy.
  • Keep the faith, and keep cooking.

BEEF RIBS AND SAUCE

I have made this several times in the past, it is a delicious way to make beef ribs...the sauce from this is really good. Instead of broiling the ribs, you can grill then on the BBQ, and then finish baking in the oven with the sauce. If you are making more than 4 pounds of ribs, then double the sauce ingredients. Potato pancakes go wonderful with this, see my recipe#129156. Cooking time does not include broiling or grilling the ribs.

4 lbs meaty beef ribs
1 large onion, chopped
1 (10 3/4 ounce) can tomato soup
1 cup water
1/4 cup vinegar
1/4 cup Worcestershire sauce
1 1/2 cups catsup
1/4 teaspoon cinnamon
2 teaspoons paprika
2 teaspoons chili powder
1/4 teaspoon clove
1/8 teaspoon cayenne pepper
2 teaspoons steak sauce
1/3 cup vegetable oil
3 -4 tablespoons brown sugar
salt

Steps:

  • Brown the ribs under the broiler for about 25-30 minutes (or cook on the grill).
  • While the ribs are browning, combine all sauce ingredients in a saucepan; simmer for 15-20 minutes, or until the flavors are well blended, adjusting all seasonings to suit taste.
  • Place the ribs into a medium size roasting pan, and cover with the sauce.
  • Bake at 325*F. for about 2-1/2 hours, or until the ribs are cooked to desired tenderness.
  • Baste with sauce occasionally.
  • **NOTE** the sauce ingredients may be doubled if desired for 4 pounds of ribs.
