Beef with Snow Peas image

This Beef and Snow Peas is a light and easy recipe! Tender marinated beef and crisp peas go perfectly over rice or noodles for a delicious weeknight supper.

1/3 cup reduced sodium soy sauce
1/3 cup chicken broth
2 cloves garlic (minced)
1 pound boneless beef sirloin steak (cut into 1/8 inch strips)
1 tsp cornstarch
2 cups fresh snow peas
4 tsp canola oil (divided)

Steps:

  • In a small bowl, combine the soy sauce, broth, and garlic. Reserve 1/4 cup. Place beef in a resealable plastic bag.
  • Add remaining soy sauce mixture; seal and mix. Refrigerate at least 1 hour.
  • Place cornstarch in a small bowl. Stir in reserved soy sauce mixture until smooth; set aside.
  • In a nonstick skillet, stir-fry snow peas in 2 tsp hot oil for 3-4 minutes or until snow peas are crisp-tender and bright green. Remove and keep warm.
  • Drain and discard marinade from beef. In same skillet, stir-fry beef in remaining oil for 2 minutes.
  • Stir cornstarch mixture; add to skillet. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened.
  • Combine with snowpeas. Serve with rice (serve with brown rice if you want to be really healthy!)

This Chinese-inspired dish uses minimal ingredients with so much flavor. Tossing the beef in cornstarch before cooking makes it extra crispy and gives the stir-fry texture. Feel free to use any vegetable you like!

Number Of Ingredients 14

1 cup long-grain rice
12 ounces skirt steak, cut into 1/2-inch slices
1/4 cup soy sauce
1/2 cup plus 1 tablespoon cornstarch
Kosher salt and freshly ground black pepper
1 cup plus 1 tablespoon canola oil
2 tablespoons mirin
1 tablespoon red wine vinegar
1 tablespoon freshly grated ginger
1/2 teaspoon crushed red pepper
3 cloves garlic, grated
1 large carrot, peeled and sliced on a bias
3 ounces snow peas, strings removed, halved crosswise
1 scallion green, thinly sliced on a bias

Steps:

  • For the rice: To a small saucepan, add the rice and 2 cups of water. Place the pan over medium-high heat and bring to a boil. Cover the pan, reduce the heat to low and simmer until the rice is tender, about 10 minutes. Set aside.
  • Meanwhile, combine the skirt steak and 2 tablespoons soy sauce in a medium bowl and toss to combine. Chill for 10 minutes.
  • In a large bowl, mix 1/2 cup cornstarch with salt and pepper to taste. Toss the skirt steak in the cornstarch mixture and coat well. Transfer the coated meat to a fine sieve and knock off any excess cornstarch.
  • Heat 1 cup canola oil in a 12-inch nonstick skillet over medium-high heat until just smoking. Add half of the beef in a single layer and cook without stirring for 2 minutes. Continue to cook, stirring occasionally, until lightly brown on both sides, 2 to 3 minutes longer; transfer to a plate lined with paper towels. Repeat with remaining skirt steak. Carefully discard the hot oil and wipe the skillet clean.
  • To a small bowl, add the remaining 2 tablespoons soy sauce, mirin, red wine vinegar, ginger, crushed red pepper, garlic and remaining 1 tablespoon cornstarch. Mix to combine.
  • Heat the remaining 1 tablespoon oil in the nonstick skillet over medium-high heat. Add the carrots and a pinch of salt and cook, stirring occasionally, until starting to soften, about 2 minutes. Add the snow peas and cook for 2 minutes. Add the garlic-ginger sauce and stir to combine. Cook for 1 minute until the liquid starts to thicken. Add the crispy skirt steak and toss until fully coated. If the sauce looks too thick, you can add 1/4 cup water to thin it out. Serve over rice and garnish with scallion greens.

2 teaspoons sugar

1/2 pound sliced fresh mushrooms
1 medium onion, cut into thin wedges
1/2 pound fresh snow peas
Hot cooked rice, optional

Steps:

  • In a small bowl, whisk soy sauce, sherry, cornstarch and sugar. Transfer 1/4 cup mixture to a large bowl; stir in 1 tablespoon oil and garlic. Add beef; toss to coat. Let stand 15 minutes., Heat a large skillet over medium-high heat. Add half of the beef mixture; stir-fry 1-2 minutes or until no longer pink. Remove from pan; repeat with remaining beef., In same pan, heat remaining oil over medium-high heat until hot. Add mushrooms and onion; cook and stir until mushrooms are tender. Add snow peas; cook 2-3 minutes longer or until crisp-tender., Stir remaining soy sauce mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Return beef to pan; heat through. Serve with rice if desired.

Steps:

  • In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.

1 1/2 lb. Flank Steak, Trimmed Of Fat And Sliced Very Thin Against The Grain
1/2 c. Low Sodium Soy Sauce
3 tbsp. Sherry Or Cooking Sherry
2 tbsp. Brown Sugar
2 tbsp. Cornstarch
1 tbsp. Minced Fresh Ginger
8 oz. weight Fresh Snow Peas, Ends Trimmed
5 whole Scallions, Cut Into Haf-inch Pieces On The Diagonal
Salt As Needed (use Sparingly)
3 tbsp. Peanut Or Olive Oil
Crushed Red Pepper, For Sprinkling
Jasmine Or Long Grain Rice, Cooked According To Package

Steps:

  • In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour half the liquid over the sliced meat in a bowl and toss with hands. Reserve the other half of the liquid. Set aside. Heat oil in a heavy skillet (iron is best) or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a separate plate. Set aside. Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the scallions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.) Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate. Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat, the rest of the marinade, and the snow peas. Stir over high heat for 30 seconds, then turn off heat. Check seasonings and add salt only if it needs it. Mixture will thicken as it sits.Serve immediately over rice. Sprinkle crushed red pepper over the top to give it some spice.

1 (7 ounce) package frozen snow peas
1 lb lean ground beef
1/2 cup thinly sliced green onion
1 (10 3/4 ounce) can cream of mushroom soup
1 tablespoon soy sauce
1/8 teaspoon ground black pepper
1 (3 ounce) can chow mein noodles

Steps:

  • Cut slit in snow peas package; place package on paper towel in microwave oven.
  • Microwave at high (100%) 3 minutes.
  • Turn over, microwave 2 minutes.
  • Remove from microwave oven; let stand.
  • Put beef in 1 1/2 quart microwaveable casserole; break into small pieces with spoon.
  • Mix in green onion.
  • Drain snow peas; spread over meat in even layer.
  • Combine soup, soy sauce and pepper; pour over peas.
  • Microwave at medium (50%) 14 to 15 minutes or until meat is no longer pink when cut in the center.
  • Let stand 5 minutes.
  • While meat stands put chow mein noodles on paper plate.
  • Microwave at high 1 1/2 minutes; sprinkle on casserole before serving.

3/4 pound skirt steak, thinly sliced

3 tablespoons hoisin sauce

Cooked rice and fresh cilantro, for serving

Steps:

  • In a wok or large skillet, heat 1 tablespoon oil over medium-high. Add steak in a single layer, season with salt. Cook, stirring, until just cooked through, 2 minutes. Transfer steak to a plate.

  • Slice beef against the grain in strips approximately 2” long.
  • Add to marinade bowl as you cut.
  • Toss with a fork until well coated.
  • Cover and leave in fridge overnight.
  • Combine the following in another small bowl or container: cornstarch.
  • Blend in oyster sauce, sesame oil, sugar, water, ginger-sesame sauce, garlic, and chicken broth.
  • Cover and leave in fridge overnight.
  • when you get home for dinner: Combine rice and water in a large microwave safe pot or casserole dish.
  • Cover and microwave at high for 10 minutes, then medium for 10 minutes.
  • Heat oil in a large nonstick fry pan or wok at med-high.
  • Add ginger, drained marinated beef, and chili flakes.
  • Slice green onions and add to pan as you cut.
  • Toss until meat browns.
  • Add stir fry sauce and snow peas.
  • Toss until sauce thickens slightly and snow peas are tender but crisp.
