Easy Mixed Berry Compote (10-Minute Recipe) image

Learning how to make berry compote is simple and should be a staple in every kitchen. This versatile mixed berry sauce/compote can be used in dozens of ways. Plus, this recipe is refined sugar-free and contains just three base ingredients!

Categories     Breakfast     Condiment     Dessert     Side

Time 7m

Number Of Ingredients 3

1.5 cups mixed berries (or individual berries (blueberry, raspberry, etc.), if preferred)
1 Tbsp maple syrup (or other sweetener (can be increased/decreased, to taste))
1/2 lemon, juiced ((can be increased/decreased, to taste))

Steps:

  • In a medium saucepan, add the berries and lemon juice and heat over medium-high heat for 3-4 minutes.
  • Bring the mixture to a boil, then reduce the heat slightly and heat for 2-3 more minutes. Occasionally press the berries, so they release more of their juices (though there's no need to mash them fully).
  • Add the maple syrup (or sweetener of your choice) towards the end of the cooking time and stir well. Feel free to adjust the amount of lemon juice/sweetener at any time.
  • Remove from the heat and either serve the fruit compote immediately or allow to cool and use later.

QUICK BERRY COMPOTE RECIPE (5 INGREDIENTS. 2 WAYS.)

Quick Berry Compote Recipe (5 Ingredients. 2 Ways.) image

Easy mixed berry compote with fresh berries, lime juice, and some raw cane sugar. It takes 30 minutes or less and you can make it on the stove or in the oven! I love using this fruit compote in yogurt for breakfast, spooned over some ricotta cheesecake for dessert, or even simply smeared onto some toast! This recipe makes 3 1/2 cups of berry compote, and it will keep for up to 10 days in the fridge.

Time 30m

Number Of Ingredients 5

12 ounces fresh strawberries, (hulled and chopped)
12 ounces fresh blueberries
12 ounces fresh raspberries
3 tablespoons raw cane sugar
Juice of 1 lime, (optional (you can start with juice of ½ lime))

Steps:

  • Combine the strawberries, blueberries, and raspberries in a medium saucepan or pot. Add the sugar and lime juice. Toss to combine.
  • Bring the mixture to a boil over medium-high heat, stirring occasionally, for about 5 minutes.
  • Once the berry mixture is boiling and the sugar has dissolved, turn the heat down to low (the lowest setting on your stovetop). Allow the berries to simmer for about 15 to 20 minutes, stirring often, until the fruit has softened quite a bit and the compote has reduced by about 1/2 half in volume.
  • Remove from the heat. At this point, you can use the back of a fork or a potato masher to mash the fruit some more, if you like a smoother compote (I like to see chunks of fruit in mine). You can also carefully taste to adjust sweetness. I don't usually have a need for adding more sugar, but if you need to, you can sprinkle a little more cane sugar or drizzle some honey. Be sure to mix well.
  • Let the berry compote cool for about 15 to 30 minutes before serving. It will thicken some more.
  • See storage instructions below.
  • Heat the oven to 375 degrees F.
  • In a large bowl, combine the chopped strawberries, blueberries, and raspberries. Add in the sugar and lime juice. Toss to coat the fruit with the sugar and lime juice.
  • Transfer the fruit mixture to a large baking dish or a heavy, rimmed sheet pan making sure to spread the fruit well in a single layer.
  • Roast in the heated oven for 30 to 45 minutes, checking every 10 to 15 minutes until the berries have fully collapsed and released some juices. You may like to pull the baking dish out occasionally to give the fruit a stir.
  • Let the roasted berries cool for about 15 to 20 minutes before serving.
  • See storage instructions.

Categories     dessert

Time 25m

Yield 1 cup

Number Of Ingredients 7

1 pint strawberries
1/2 pint blueberries
1/2 pint raspberries
1 to 2 teaspoons honey
1/4 teaspoon vanilla bean paste
1 teaspoon balsamic vinegar, plus additional for drizzling
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Cut the stems off the strawberries and slice any large ones in half. Add the strawberries to a colander along with the blueberries and raspberries and wash in the sink. Dry the berries on a sheet pan lined with paper towels, then transfer the berries to a large bowl.
  • Add the honey, vanilla bean paste, vinegar, salt and pepper. Gently fold together with a rubber spatula, being careful not to crush the berries.
  • Transfer the berry mixture to a 6- to 8-quart casserole dish and roast until the berries start to release their juices and slightly break down, about 15 minutes. Serve warm or at room temperature as a topping for pancakes, oatmeal, ice cream, cake and more, with additional drizzles of balsamic vinegar.

SWEDISH WAFFLES WITH BERRY COMPOTE

Swedish Waffles with Berry Compote image

These waffles are a weekend favorite with Gavin Kaysen's family-the recipe comes from his wife Linda's family in Sweden-and we're sure yours will love them, too. Topped with a fresh berry compote, they're a great way to start a day of lounging in your PJs.

Provided by Gavin Kaysen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 9

1 pint blueberries, blackberries, or raspberries, or use a combination, if you prefer
3 tablespoons sugar
Juice of half a lemon
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1 pinch kosher salt
1/8 teaspoon pure vanilla extract
1 3/4 cups whole milk
7 tablespoons unsalted butter, melted, plus more for brushing the waffle iron

Steps:

  • Berry compote: In a small saucepan, combine berries, sugar, and lemon juice. Gently heat until sugar is dissolved. Crush about half of the berries with a wooden spoon; allow the rest to soften but maintain their shape, 10 minutes. Set aside.
  • Waffles: In a bowl, whisk together the flour, baking powder, and salt. Make a well in the ingredients and pour in the milk and vanilla; whisk thoroughly. Then whisk in warm (not hot) melted butter until fully incorporated. The batter should be thin.
  • Heat a waffle iron according to the manufacturer's directions. Brush waffle iron on both sides with some of the remaining melted butter. Ladle enough batter to evenly cover the lower plate. Close the lid and cook until the waffles are brown and crispy, about 3-4 minutes. Repeat in batches with remaining batter; make 6-7 waffles.
  • Assembly: Place waffles on a serving platter, spoon berries on top, and serve.
