QUICK ASIAN BEEF RAMEN NOODLES
Recipe video above. A great quick ramen noodle recipe that requires very little prep. The trick here is to caramelise the beef well - makes all the difference! TIP: Don't cook the ramen noodles any longer than it says to on the packet! So basically, this HAS to be a super quick recipe :) Now available: Chicken and vegetable version!

Steps:
- Mix Sauce.
- Heat oils in a medium skillet over high heat. Add onion and garlic, cook for 1 1/2 minutes until starting to go golden.
- Add beef and cook, breaking it up as you go, until it changes from pink to light brown.
- Add Sauce and cook for 2 to 3 minutes until well caramelised (see video).
- Push beef to the side to make enough space for the noodles. Add water, place noodles in water.
- Leave for 45 seconds then turn.
- Leave for 30 seconds, then untangle the noodles, then toss through the beef.
- Add beansprouts, toss for 1 minute until sauce reduces to coat the noodles and the noodles are cooked. (Note 7)
- Serve immediately, garnished with green onions and sesame seeds.

- Toss beef with 2 tablespoons teriyaki sauce. Cook spaghetti according to package directions; drain., In a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry beef until browned, 1-3 minutes. Remove from pan., In same skillet, heat remaining oil over medium-high heat; stir-fry coleslaw mix and onion until crisp-tender, 3-5 minutes. - Cut steak across the grain into 1-inch-wide strips; cut each strip in half. Place steak in medium bowl. Add jalapeno peppers, garlic and 1 Tbsp. of the oil; toss to coat.
- Break Noodles into 3 or 4 pieces; set the Seasoning Packet aside. Cook noodles as directed on package; drain and rinse.
- Heat large nonstick skillet on medium-high heat. Add steak, in batches. Cook and stir 30 seconds to 1 minute or until cooked through. Remove steak from skillet; place in medium bowl. Cover to keep warm. Heat remaining 1 Tbsp. oil in skillet. Add carrots and onions; cook and stir until carrots are crisp-tender. - 1. Cut beef steaks crosswise into 1" strips, then cut each strip in half.
- 2. Toss beef, green chilies (I use canned) and garlic with 1 T. of the oil.
- 3. Before opening the bag, break the noodles into four pieces. Reserve the seasoning packet. Cook the noodles according to the package instructions, drain, rinse.
- 4. Heat a large skillet over medium-high heat. Cook and stir beef mixture, in batches, for 30-60 seconds. Remove each batch from the pan and keep warm while cooking remaining batches.
- 5. Cook and stir carrots and green onions in the remaining 1 T of oil in the same skillet, until tender.
- 6. Stir in the cooked noodles, steak sauce, water, peanuts, and cilantro. Then sprinkle in the reserved seasoning packet, and stir to combine.
- 7. Heat the mixture until hot through, stirring occasionally. Return the cooked beef mixture to the skillet. Toss lightly. Serve immediately.
- 8. NOTE: This works great in a wok, if you have one. There's no reason you couldn't make this meatless by using tofu instead of beef, and a different flavor noodles. You could use leftover steak (who has leftover steak?!) in this recipe by simply cooking the jalapeno and garlic with the carrot and green onion, then tossing your beef in for the last few minutes, just enough for it to warm through.

- Heat a skillet over medium-high heat; cook steak, working in batches, until seared and browned on all sides, about 5 minutes. Transfer seared steak to a plate.

BEEF AND NOODLES
I was looking for a recipe for beef and noodles that didn't use any sort of condensed soup. I found one at Better Homes & Gardens and made a few changes to come up with this. I use Homemade Noodles (recipe 27344) for the noodles, and they absorb a lot of liquid so this is pretty thick - if you like it thinner, adjust accordingly (I've not tried this with purchased noodles but they may make a difference as well).

- Add oil to a large dutch oven over medium heat.
- Sprinkle the flour over the meat and toss to evenly coat cubes with flour.
- Brown half of the coated meat in hot oil. Remove from pan. Brown the remaining meat and remove. Set aside.
- In the same pan, brown the onion and garlic, adding more oil, if necessary. Drain off any excess fat. Return all meat to the pot.
- Stir in the broth, wine, marjoram, and pepper. Bring to a boil; reduce heat. Simmer, covered, for 1-1/2 to 2 hours or until meat is tender.
- When meat is tender, remove with a slotted spoon and set aside to cool briefly.
- In the meantime, stir noodles into broth. Bring to a boil; reduce heat to low.
- Shred beef and add back to pot with noodles.
- Cook, uncovered, for about 30 minutes or until noodles are tender and mixture is thick. Add additional broth or water if necessary (if noodles are absorbing it all).

- Cut the chuck roast into 1" cubes using a very sharp knife. Allow to sit at room temperature for 20-30 minutes to remove the chill.
