MANLY-MAN SALISBURY STEAKS
People used to request these when I was catering!I once made 200 of them! They aren't your "Joe-average" salisbury steaks, and are definitely company-worthy! This makes a lot, but leftovers freeze well. My own concoction! :)

Steps:
- In large mixing bowl, combine well with hands the hamburger, 1/3 cup cream of mushroom soup, 1/3 cup french onion soup, garlic powder, bread crumbs and egg.
- Shape into six 6 1/2" x 4 1/2" oval patties, 1/2" thick.
- Place on cookie sheet as you go.
- Sprinkle tops with salt and pepper.
- In 2 frying pans, place a little butter and melt.
- Add 3 patties to each pan seasoned-side down.
- Salt and pepper other sides while bottoms are frying.
- Fry over medium-high heat for 3 minutes or till deep browned.
- TURN CAREFULLY. You don't want to "flip" them or you'll break them. I just gently and carefully roll them over slowly with 2 spatulas.
- Brown other sides for about 2 minutes.
- While patties are cooking, mix sauce ingredients together:.
- Rest of soups, browning sauce, Worcestershire, salt, pepper, and mushrooms.
- When patties are done, carefully place onto clean cookie sheet(s).
- Pour grease out of pans and wipe with paper towels.
- Place a little bit of sauce into each pan, just a spoonful each and swirl around with back of spoon.
- Place patties back into pans.
- Pour/spoon rest of sauce evenly over each patty.
- Bring to a simmer and simmer 3-5 minutes longer. Stir sauce occasionally.
- Remove to warm platter, pour any sauce from pans over the tops.
- Garnish with fresh chopped parsley if desired.
- Great with mashed potatoes dotted with butter, green beans and crusty warm bread! :).
- Serves 6 hungry guests! :).
- *All 6 patties can be done in an electric skillet if you've got one handy. Just watch them so they don't burn if yours runs hot, too.
- **This does not make a ton of gravy -- just enough to compliment the steaks, not drown them, LOL! If you prefer a lot more, double the sauce part.
MANNY'S MANLY MEAT SAUCE
No nonsense: meat, mushroom and macaroni. WARNING: Watch the new hairs on your chest!

- Heat a deep skillet or heavy-bottomed pot over medium high heat. Go once around the pan with a slow stream of extra virgin olive oil. Add crushed pepper flakes and infuse oil 10 seconds. Add beef, onions, garlic, and seasonings. Brown meat for 5 minutes; add mushrooms and cook 5 minutes more. Add wine and reduce 1 minute. Add broth and tomatoes to sauce and reduce heat to low. Simmer 5 to 10 minutes to combine flavors. Toss pasta with half of the sauce and serve with extra sauce for topping. Pass grated Parmesan or Romano and warm crusty bread at the table.
GUY APPROVED MEATLOAF
Like most guys, mine has never been a fan of meatloaf, but this recipe guarantees him back for seconds, thanks to some special ingredients.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, liquid smoke, ground black pepper, salt, garlic powder and cayenne pepper and mix well.
- On a lightly greased cookie sheet, shape the mixture into a loaf. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.
- Bake at 375 degrees F (190 degrees C) for 1 1/2 hours.

TONY'S "MANLY MAN'S" BIFTEK HACHE
My personal variation of Biftek Hache a La Lyonnaise from Mastering the Art of French Cooking. This version is suited to serve as one would meatloaf and mashed potatoes with greenbean's on the side. It also allows for much more sauce than the original recipe for use on the potatoes as well as the meat.

- 1. In one tablespoon of butter and one table spoon of fresh bacon grease, sautee your onions. As onion odor just begins to dissipate, add one clove of pressed garlic to the onions and continue to saute until some of the onions almost begin to brown and have a near amber color. Set aside and allow to cool.
- 2. In a sauce pan with boiling water, boil 2 cloves of garlic for 5 seconds and remove to peel under cold running water. Once peeled, return to boiling water for 30 seconds and remove. Once cooled, press the garlic and work into the 4 tb. of butter. Refrigerate.
- 3. In a large bowl, add 2lb hamburger, the onions & garlic, 1 Tb bacon grease, salt, pepper, thyme, egg and enough crushed saltines to absorb excess moisture from the fresh bacon grease. Combine thoroughly and form into 6 patties. Separate patties with wax paper or parchment, cover and refrigerate for at least one hr to allow flavors to "marry".
- 4. Slice and saute the mushrooms in 2 Tb butter for 3 minutes. Allow the butter to stop foaming before you saute to ensure proper heat. Remove and allow to cool. Refrigerate. Preheat oven to low/warm.
- 5. Remove patties from frig and lightly flour them, shaking off any excess. Salt and pepper one side of each patty, if desired.
- 6. In a very large skillet, heat one Tb butter and 1 Tb bacon grease until very hot. Brown patties in the fat for 2 to 4 minutes on each side, depending on how well done you prefer. Remove to a oven safe dish and cover. Place in oven to keep warm for now. Mix cornstarch with small amounts of water at a time until it produces a thin liquid (approx. 1/2 cup).
- 7. Remove fat from skillet and return to stove, adding a splash of red wine and the 2 cans of beef broth to deglaze and stir so the remaining bits are incorporated into the liquid under high heat. Add the sauted mushrooms and
- a little cornstarch water to thicken. Reduce on high heat for awhile, until the sauce is as thick as you like. When ready, remove skillet from heat and swirl in small amounts at a time, using 2 to 3 Tb of the garlic butter. Anything left over can be used for buttering fresh bread or thick toast with the meal.
- 8. Remove patties from oven and ladle some sauce over the meat. Serve with garlic mashed potatoes using the sauce as a gravy, and a side of green beans.

- In medium skillet, heat oil and butter over medium heat. Add onion; cook 15 to 18 minutes, stirring occasionally, until tender. Stir in broth and beef; cook 4 minutes. Remove from heat.
- Spread 1/2 of mayonnaise mixture over cut sides of french bread. Using slotted spoon, remove beef and onion from broth mixture, reserving broth mixture. Top loaf with beef and onion; top with gorgonzola or provolone cheese.
- Set oven to Broil. Broil with tops 6 inches from heat 2 to 3 minutes or until bread is lightly toasted. Watch closely! Cut each sandwich into 4-6 pieces. If desired, serve broth with sandwiches for dipping.
