1 cup (200 g) granulated sugar
1 cup (125 g) all-purpose flour
1½ teaspoons baking powder
½ teaspoon kosher salt
1 cup (238 g) milk
½ cup (1 stick / 113 g) unsalted butter, (melted)
2 cups fresh blueberries, (rinsed and dried)
½ cup (100 g) granulated sugar (*see notes)
2 tablespoons turbinado sugar

Steps:

  • Preheat the oven to 350°F.
  • In a medium bowl, combine sugar, flour, baking powder, salt, and milk. Slowly whisk in the melted butter.
  • Pour the batter into a 10-inch cast-iron skillet.
  • In a medium bowl, combine blueberries and sugar.
  • Add the blueberry mixture evenly over the top of the batter.
  • Bake for 40 minutes. Carefully remove from the oven.
  • Sprinkle the turbinado sugar over the top and RETURN to the oven; bake for 5-10 additional minutes. Cobbler is done when the edges are golden brown and the center doesn't jiggle. A toothpick inserted near the center should be removed with some crumbs and moist blueberry.
  • Serve warm.

2 1/2-3 cups frozen blueberries (or fresh, but frozen work a bit better)
2/3 cup sugar
2 tablespoons cornstarch
3 tablespoons lemon juice
3 tablespoons water, plus 1/2 cup, divided
1 pinch salt
13 -16 ounces yellow cake mix (or two boxes of jiffy yellow cake mix)
1 egg
1/2 cup butter, plus
3 tablespoons butter, divided
2 teaspoons cinnamon sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a medium saucepan, mix sugar, salt and cornstarch until smooth. Add lemon juice and 3 tablespoon water, stir well. Stir in blueberries carefully. Bring to a boil over medium heat and cook, stirring constantly until sauce thickens, about 3 minutes. Be careful not to crush blueberries.
  • Melt a stick of butter and spread evenly in bottom of 9"x13" dish. Pour 1/2 of one box of dry Jiffy cake mix over butter. Pour blueberry mixture over dry cake mix. Mix the second box of Jiffy cake mix as directed (1 egg plus 1/2 cup water). Pour prepared cake mix over blueberry mixture. Use the last 3 tablespoons of butter to dot the surface of cake mix to help brown. Sprinkle cinnamon-sugar on top.
  • Bake 25-35 minutes, or until golden brown on top. Serve with whipped cream and/or ice cream.

I've tinkered and tinkered, and this is the very best blueberry cobbler recipe I've found. Cakey/biscuit topping with a slight crunch on top and ooey gooey delicious blueberries hidden on the bottom. It can also work with other fruit fillings. Works best with delicious fresh blueberries and is the perfect summer treat.... An amalgamation of mine and my grandmother's cobbler recipe.... I think it is the best! Serve plain or with whipped cream. Enjoy!

2 ½ cups fresh or frozen blueberries
1 teaspoon vanilla extract
½ lemon, juiced
1 cup white sugar, or to taste
½ teaspoon all-purpose flour
1 tablespoon butter, melted
1 ¾ cups all-purpose flour
4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk
2 teaspoons sugar
1 pinch ground cinnamon

Steps:

  • Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar and 1/2 teaspoon of flour, then stir in the tablespoon of melted butter. Set aside.
  • In a medium bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Rub in the 5 tablespoons butter using your fingers, or cut in with a pastry blender until it is in small pieces. Make a well in the center, and quickly stir in the milk. Mix just until moistened. You should have a very thick batter, or very wet dough. You may need to add a splash more milk. Cover, and let batter rest for 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. A knife inserted into the topping should come out clean - of course there will be blueberry syrup on the knife. Let cool until just warm before serving. This can store in the refrigerator for 2 days.

3 tablespoons white sugar
⅓ cup orange juice
⅔ cup all-purpose flour
¼ teaspoon baking powder
1 pinch salt
½ cup butter, softened
½ cup white sugar
1 egg

  • Preheat oven to 375 degrees F (190 degrees C).

2/3 cup sugar
1 tablespoon lemon juice
1/4 cup all-purpose flour
2 tablespoons cold salted butter, cut into pieces
2 1/2 cups all-purpose flour
2 1/2 heaping tablespoons sugar, plus more for sprinkling
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 sticks cold salted butter, cut into pieces
3/4 cup milk
1 large egg
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • For the blueberries: Place the blueberries in a large bowl and sprinkle in the sugar and lemon juice. Add the flour and stir to combine.
  • For the dough: In a separate bowl, combine the flour, sugar, baking powder and salt. Stir it around, then add the cold butter and use a pastry blender to cut the butter into the dry ingredients.
  • Whisk together the milk and egg in a small bowl, then drizzle it into the flour-butter mixture and stir until the dough just comes together. It should be lumpy and clumpy!
  • Pour the blueberries into a 9-by-13-inch baking dish and dot them with the butter, then tear off pinches of the dough and dot them all over the top. Sprinkle the top with extra sugar.
  • Cover lightly with foil and bake for 20 minutes, then remove the foil and bake until lightly browned, about 25 more minutes. Serve warm or at room temperature with a big scoop of vanilla ice cream.
