My husband LOVES these potatoes. The potatoes are baked and then scooped out. Mix potatoes with shredded cheddar and the 'secret' zing- sour cream and onion dip. Goes great with a grilled steak!

4 large baking potatoes
2 cups shredded Cheddar cheese
1 (16 ounce) container sour cream and onion dip

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 45 minutes, or until cooked through.
  • Slice tops off of potatoes and scoop the flesh into a large bowl, leaving skins intact.
  • To the potato flesh add the cheese and dip. Mix well and spoon mixture into potato skins.
  • Bake for another 30 minutes, or until heated through.

Bean Stuffed Potatoes image

These potatoes are spicy, full of flavour and also quite good for you as they are packed with proteins. If you feel like indulging a bit, add some sour cream on top or some shredded cheese.

Yield 4 stuffed potatoes

Number Of Ingredients 7

4 medium potatoes
100 g chili beans, canned, drained and 1 tbs liquid reserved
1/4 teaspoon chili powder
1/4 teaspoon salt
1 teaspoon oil
2 tablespoons cheese, grated (optional)
sour cream (optional)

Steps:

  • Wash potatoes (do not peel). Prick several times with a fork.
  • Bake in the pre heated oven at 180°C/375°F for 45-60 minutes until potatoes are tender.
  • Let cool a bit. Cut off a slice of the long side of the potatoes. Scrape out flesh, leaving a potato boat, which you can then fill.
  • Combine beans, 1 tbs of the bean liquid, oil and spices in a bowl. Add potato flesh (including the slices you cut off). Mash.
  • Fill the chunky bean mash into the potato skins. Top with cheese if desired.
  • Return to the oven and bake for another 15 minutes.
  • Serve with a dollop of sour cream on top if you like.

  • Thoroughly wash the potatoes, and prick each several times with a fork. Place them on a plate, and microwave for 10-15 minutes (depending on the size of your potatoes), or until the potatoes are fairly soft. Make sure you turn them over every few minutes to ensure they cook evenly.
  • Meanwhile, add the drained black beans to a large bowl. Mash them roughly, leaving a few beans whole for texture. Add the salsa, fresh coriander, spring onions, chilli powder, paprika, and a good pinch of salt and pepper. Mix well.
  • When the potatoes are soft, cut the tops off (be careful as they'll be hot!). Use a spoon to create a hollow in the centre of each potato, leaving around a centimetre of potato flesh around the edges to help the potato hold its shape. Set aside the potato flesh for an alternative use.
