CLASSIC MINESTRONE SOUP
Minestrone is a hearty, traditional Italian soup typically made with beans, pasta and lots of vegetables. Enjoy the slow-cooked flavor in just about 30 minutes.

- Heat olive oil in a large saucepan or Dutch oven over medium-high heat. Cook onion, carrot, celery, garlic and rosemary until vegetables begin to soften, about 5 minutes.
- Stir in tomato sauce, beans and 2 1/2 cups water. Add broth, zucchini, pasta and pepper; bring to a simmer. Cook, uncovered, 10 minutes or until pasta is tender, stirring occasionally. Stir in parsley. Serve topped with Parmesan cheese and additional parsley, if desired.

- Combine beans, broth, tomatoes, onions, zucchini, celery, carrots, ham and red pepper in Dutch oven or stockpot. Bring to boil on medium-high heat. Reduce heat to low; cover. Simmer 10 min. or until vegetables are crisp-tender.
- Add water and Macaroni; stir. Cook 7 to 8 min. or until Macaroni is tender.
- Stir in Cheese Sauce Mix and spinach; cook 2 min. or until spinach is wilted, stirring occasionally. Serve immediately.

- Directions:Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, celery, and garlic. Season with salt and black pepper, to taste, and stir to combine. Cook, stirring occasionally, until the veggies become soft and aromatic, approximately 4-5 minutes.
- Add the vegetable broth, tomato paste, crushed tomatoes, white beans, quinoa, and bay leaves. Sprinkle with Italian seasoning and additional salt and black pepper, if desired, and stir to combine.
- Increase heat to high and bring to a boil, then immediately reduce heat to medium-low. Cover and gently simmer until the quinoa is cooked through, approximately 15-20 minutes.
- Stir in the chopped spinach and parsley. Simmer just until the spinach wilts, approximately 1-2 minutes. Remove from heat and discard the bay leaves. Serve immediately sprinkled with additional chopped parsley, if desired. Enjoy!
