TURKEY MEATLOAF WITH BBQ GLAZE
Generously seasoned and topped with a BBQ glaze, this turkey meatloaf is full-flavored and satisfying. A family favorite!

- Set oven rack to middle position and preheat oven to 350°F. Line rimmed baking sheet with heavy-duty aluminum foil; grease the foil with olive oil or non-stick cooking spray.
- Make the BBQ glaze: In a medium bowl, whisk together the ketchup, brown sugar, cider vinegar, and Dijon mustard. Set aside.
- Make the Meatloaf: Heat the olive oil in a small sauté pan over medium heat. Cook the onions, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook 1 to 2 minutes more. Do not brown. Set aside to cool.
- In a large bowl, combine the salt, pepper, paprika, thyme, Worcestershire sauce, Dijon mustard, eggs, and ¼ cup of the BBQ glaze. Whisk until well combined. Stir in the onion mixture. Add the ground turkey and breadcrumbs and mix with your hands until evenly combined.
- Transfer the meat mixture into two even piles onto the prepared baking sheet. Shape into two long loaves about 1½ in high x 6 in long x 4 in wide. Spread the remaining BBQ glaze over the loaves, letting it drip down the sides a bit. Bake for about 45 minutes, until the meatloaves are cooked through. Scrape any fat away from the sides of the loaves, then transfer the loaves to a platter. Slice and garnish with parsley if desired.
- Freezer-Friendly Instructions: The cooked meatloaf can be frozen for up to 3 months. When ready to serve, defrost it in the refrigerator for 24 hours and then reheat it in a 300°F oven until hot in the middle.

- Preheat the oven to 350 degrees F.
- In a large bowl, mix BBQ seasoning, crab boil seasoning, soy sauce, beaten egg, 1 cup of the BBQ sauce and Worcestershire sauce.
- In a saute pan over medium-high heat, add olive oil. Add onion, bell pepper, salt and pepper and garlic. Saute until tender. Remove from heat and add to wet mix.
- Pour mixture into bowl with the ground turkey. Add bread crumbs and mix all together with your hands.
- Transfer the meat mixture to a cookie sheet or baking pan. Using your hands, shape the meat into an oblong or rectangular shape. *Cook's Note: Alternately, you can pat the meat into a 9 by 5-inch loaf pan and pour 1/2 cup of BBQ sauce on the top of the loaf.
- Bake for 35 minutes. Remove and add the reserved 1/2 cup of BBQ sauce to the top and continue to bake for 20 more minutes.
- Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
- In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
BBQ TURKEY MEATLOAF - 5 INGREDIENTS

- Crumble ground turkey into large mixing bowl. If sausage is in links, remove casings and crumble sausage into bowl.
- Add 1 cup dry stuffing mix (about half a box), egg and 1 cup of the barbecue sauce (save 1/4 cup to glaze tops of meatloaves).
- Mix gently; divide in two. Pat into two loaves in a greased/sprayed 9x13 pan (see photo provided).
- Use remaining 1/4 cup BBQ sauce to spoon over tops of loaves. Bake uncovered at 350 degrees for one hour.
- Option: this meatloaf could easily be made with lean ground beef and sausage, but it is SO delicious with the lower-fat ingredients that you should give it a try!

- Heat oven to 375ºF.
- Combine corn, tomatoes, dressing, onions, cilantro and 2 Tbsp. barbecue sauce. Refrigerate until ready to use.
- Mix turkey, stuffing mix, water, onions, chiles, eggs and 1/3 cup of the remaining barbecue sauce just until blended; shape into loaf in shallow baking dish sprayed with cooking spray.
- Bake 1 hour. After about 45 min., mix remaining barbecue sauce with preserves, mustard and chili paste in saucepan; cook on medium heat until heated through, stirring occasionally.
- Brush meatloaf with barbecue sauce mixture; bake 20 to 25 min. or until done (165ºF). Let stand 5 min. before slicing and serving with the corn salsa.

- Preheat oven to 350°F (wash hands before touching the ingredients).
- In a medium bowl combine ground turkey, breadcrumbs, egg, onion (chopped into small pieces) and barbecue sauce.
- Mix well with hands.
- Spray the inside of a loaf pan with non-stick spray.
- Put mixture in loaf pan and mold it to form a loaf, then spread a light coating of barbecue sauce over the top of the meatloaf and lay the bacon strips on top and bake for 45 minutes.

- Preheat oven to 450 degrees and brush a 12-muffin tin with olive oil.
- Put the ground turkey in a large bowl.
- Put onion, celery and green pepper in the food processor. Pulse until finely chopped and add to the bowl of meat.
- Add egg, breadcrumbs and steak seasoning to the bowl.
- Mix together the BBQ sauce, salsa and Worcestershire in a separate small bowl. Pour half the sauce mixture into the bowl with the meat.
- Mix the meatloaf together with your hands.

MEATLOAF ON THE GRILL
We don't eat beef so we use ground pork and ground turkey for this, but you could use any ground meat you'd like. This is a fun way to cook a meatloaf that is great for a hot summer day when you don't want to turn on the oven. We use a charcoal grill. I usually don't measure the seasoning, so go by your own tastes.

- Preheat an outdoor grill for medium heat.

- Heat oven to 350 degrees F.
- Using your hands, combine all ingredients, except the ketchup, in a medium bowl until well mixed.
- Spray a 8 1/2 x 4 1/2 x 2 1/2 loaf pan with cooking spray.
- Pack the meatloaf mixture into the loaf pan. Drizzle ketchup over meatloaf.
- Bake (uncovered) 1 hour and 15 minutes.
- Let stand a few minutes before slicing and serving.
