SMOKED WHOLE CHICKEN WITH HONEY BBQ SAUCE



Smoked Whole Chicken with Honey BBQ Sauce image

1/4 cup dark brown sugar
1 tablespoon coarse sea salt
2 teaspoons cracked black pepper
2 teaspoons smoked paprika (hot or mild, whichever you prefer)
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground mustard
1/2 teaspoon cayenne pepper
4 tablespoons softened butter
One 2- to 3-pound whole chicken
1 cup ketchup
1/2 cup brown sugar
1/4 cup apple cider vinegar
2 tablespoons honey
1 teaspoon salt
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper

Steps:

  • For the BBQ seasoning: Combine the brown sugar, salt, pepper, smoked paprika, garlic powder, onion powder, ground mustard and cayenne in a small bowl.
  • Preheat your smoker or grill to 275 degrees F.
  • If using a charcoal or gas grill, prepare for two-zone cooking with heat or coals on one side of the grill and none on the other. If using a gas grill, prepare your smoking pouches by tearing off 2 large pieces of heavy-duty aluminum foil and layering them flat on your work surface. Place two cups of dry wood chips on the center of your foil. Fold up each long side and crimp to secure. Then roll up the ends to make a sealed wood chip pouch. Poke holes in the top of your pouch to allow the heat from the fire to singe the wood chips inside the pouch and make some gorgeous smoke that will be released through the holes and add a delicious smoke flavor to your food. Repeat this process so you have a total of 3 pouches.
  • Combine the softened butter and the BBQ seasoning in a small bowl. Use your fingers to loosen the skin of the chicken and spread the seasoned butter up under the skin. Spread any remaining butter on top of the chicken skin.
  • Use butcher twine to tie the legs together and tuck the wing tips behind the shoulder joint. Place your chicken directly on the grill grates over indirect heat on your smoker or grill. Add the wood of your choice; I recommend apple, cherry, maple, or pecan. If using a grill, place the smoking pouch on the direct heat. Close the lid and smoke for 2 1/2 to 3 hours, replacing the smoking pouch as necessary. Breasts should be about 160 to 165 degrees F. The thighs should be about 170 to 175 degrees F. If needed, rotate the chicken once during smoking.
  • While your chicken is smoking, prepare your BBQ sauce. Combine the ketchup, brown sugar, vinegar, honey, salt, smoked paprika, garlic powder, onion powder and black pepper in a medium saucepan over medium heat. Bring sauce to a boil. Reduce heat to low and simmer for 15 minutes. Remove sauce from heat and allow to cool.
  • Baste the chicken with the honey BBQ sauce during the last 30 minutes of cooking (this is optional). Once the chicken has reached the correct internal temperature, remove it from the grill, rest for 10 minutes, slice, and serve.

6 bone in chicken thighs
2 bone in legs
2 bone in breasts
5 tablespoons chicken seasoning
2 ⅔ cups glaze, recipe below
2 cups Carolina style BBQ sauce ((see notes for our recipe))
⅔ cup honey

Steps:

  • Trim meat of excess fat, and pat dry. Apply dry rub all over the chicken pieces and place in a refrigerator overnight or at least 4 hours uncovered to dry brine.
  • Preheat smoker to 275 degrees Fahrenheit (F) using fruit wood like apple or cherry. Oak and Hickory also work well.
  • Place chicken pieces in the smoker until the internal temperature of the chicken reaches 150 degrees F in the breast and 160 degrees in the thighs.
  • Dip the chicken pieces into the bowl of glaze and place back onto the smoker. Continue smoking until the internal temperature of the chicken reaches 160 degrees F using a good instant read thermometer for the breast and 170 degrees for the thighs.
  • Remove from the smoker and then dip again into your glaze, let it rest for 10 minutes allowing glaze to set.
  • Serve and enjoy.

2 cups ketchup
1 cup store-bought BBQ sauce
1/2 cup light brown sugar
1/2 cup rice wine vinegar
1/4 cup Worcestershire sauce
2 tablespoons stone ground mustard
1 teaspoon BBQ rub or Cajun seasoning
2 whole chickens, about 3 pounds each
1/4 cup vegetable oil
2 tablespoons salt
1 tablespoon white pepper
1 teaspoon cumin

Steps:

  • For the sauce: In a bowl whisk together the ketchup, BBQ sauce, sugar, vinegar, Worcestershire sauce, mustard and BBQ rub seasoning. Then pour the sauce in a thick-bottomed saucepan over low heat. Cook to blend the flavors, 10 to 15 minutes. Once warmed, remove from the heat and hold in a warm spot.
  • For the chicken: Preheat the oven to 300 degrees F. Drizzle both sides of each chicken with the oil. Next, mix the salt, pepper and cumin in a bowl, and then sprinkle over both sides of each chicken. Place the chicken, breast-side up, on a flat cookie sheet and cook until the internal temperature reaches 165 degrees F, 30 to 35 minutes.
  • When fully cooked, remove the chickens and lightly glaze the skin with the BBQ sauce. Return the chickens to the oven, allowing the BBQ sauce to glaze the birds, 10 to 12 minutes.
  • Serve with a choice of sides.

16 ounces Italian salad dressing (recommended: Newman's Own)
5 ounces spice rub (recommended: BBQ- N- Fools BBQ Rub)

Steps:

  • Place the chicken parts in a plastic bag and pour in salad dressing. Let marinate, covered, in the refrigerator for 2 to 3 hours.
  • Remove the chicken from the plastic bag and coat with the spice rub. Place the chicken into a preheated 250 to 300 F degree smoker and cook for 2 to 3 hours, depending on the type and size of the chicken pieces.
  • Once the internal temperature of the chicken reaches 180 degrees F, or the juices run clear, the chicken is finished cooking and ready to serve. Enjoy!

Smoky, floral, and acidic, these aren't your typical smoked chicken thighs. The lavender comes through nicely and isn't overpowering; the thyme pairs well with the lavender and strawberries. The strawberries and white balsamic pair nicely and the vinegar adds a good bit of acidity to balance the sweetness from the peak-season strawberries and the caramelized sugar. The thighs have a light amount of smoke and are juicy and tender.

4 cups hulled fresh strawberries
½ cup white sugar
½ cup white balsamic vinegar
1 ½ teaspoons chopped fresh thyme leaves
½ teaspoon kosher salt

3 tablespoons dried lavender
1 tablespoon kosher salt
1 teaspoon ground black pepper
8 (8 ounce) bone-in, skin-on chicken thighs

Steps:

  • Prepare the strawberry gastrique: Puree strawberries in a blender on high speed until completely smooth, about 1 minute.
  • Cook sugar in a medium skillet over medium-low heat, stirring occasionally, until completely melted, amber in color, and nutty in aroma, about 5 minutes. Carefully add vinegar (mixture will crystallize immediately and begin to boil) and reduce heat to low. Cook sugar mixture, stirring frequently, until crystallized sugar is completely dissolved, about 5 minutes. Add strawberry puree and thyme and bring to a simmer over low heat. Cook, stirring occasionally, until mixture has thickened enough to coat the back of a spoon, about 7 minutes. Remove from heat and stir in salt. Cover to keep warm until ready to use.
  • Prepare chicken: Open the bottom vent of a grill completely. Light a charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour them onto the bottom grate of grill, and then push to 1 side of grill. Place 3 to 4 applewood chunks on top of hot coals. Coat top grate with oil. Cover grill and insert an instant-read thermometer into a vent in the lid.
  • Stir together lavender, salt, and pepper in a small bowl. Sprinkle chicken thighs evenly and liberally with lavender mixture.
  • Place chicken thighs on the preheated grill, skin-side up, over the side without coals. Cover and smoke, maintaining temperature inside smoker between 225 and 250 degrees F (107 to 120 degrees C), for 1 1/2 hours. Brush with 1/4 cup gastrique, cover again, and smoke until a meat thermometer inserted into thickest portion registers 170 degrees F (76 degrees C), 15 to 30 more minutes.
  • Transfer chicken thighs to a large plate or platter and brush lightly with another 1/4 cup gastrique. Let rest for 10 minutes. Serve with remaining gastrique, if desired.

This recipe is a lot of work if you are not "the more ingredients/steps the better" kind of cook. Even if you are not, you'll find it worth it; especially if you are cooking for a large group. In the end, the chicken will taste better than any chicken has a right to--your guests will be speechless. I recommend doing a several whole chickens cut in half, or 1/4 chickens (big thigh/drumstick pieces), and/or whole breasts. The idea is big pieces are best, and all about the same size/thickness. Prep time does not include time spent in the brine, prepping the smoker, the grill, etc. I got the brine recipe off the internet. It's called Don's Poultry Brine and is the best I've ever come across. I use it for brining turkeys as well. You may well ask "why brine at all?" Poultry will get very dry during the smoking process. Brining the poultry will result in tasty, moist meat.

Steps:

  • For the brine: Combine the first 10 ingredients, bring to a boil, then let cool.
  • Add maple extract and liquid smoke.
  • Rinse chicken and pat dry.
  • Brine chicken for at least 4 hours. Overnight is fine, but no more than 12 hours.
  • Remove pieces, rinse in cold water and pat dry.
  • Coat with oil and season with Cajun seasoning.
  • Prepare smoker and smoke chicken at 230 degrees for about two hours, basting with mop every 30 minutes.
  • For the mop: Combine vinegar, water, salt, and pepper in a pot and bring to a boil. Remove as set aside.
  • When chicken is nearly done, coat with glaze and move pieces to a hot grill to finish cooking and crisp the skin. This will only take a few minutes per side.
  • For the glaze: Combine 3 parts butter to one part honey. Make as much as you need to finish the job.
  • Remove and serve immediately.

  • Assuming you bought a chicken half, rinse and pat dry your pieces. Then place on a cookie sheet that will fit in your fridge. Salt and pepper the bird up to six hours prior to cooking and put into fridge. This is important to get the full flavor and moisture. * Food safety tip - make sure it's not touching anything and then clean area you were using well after removing the chicken!!!
  • Preheat smoker to 225 degrees with your favorite cooking wood. We used apple wood. Remove the chicken from the fridge. You'll likely notice that the skin has pulled back some from the salting and dehydration in the fridge and the color may be darker. That is normal.
  • Place chicken on the smoker. Cook until the internal temperature (IT) is 150 to 155 degrees Fahrenheit. When it hits the IT of 150 - 155 take your favorite glaze and brush all sides of the chicken with it. Then continue cooking.
  • When IT then reaches 165 degrees, pull the chicken from the smoker and glaze once more. Place a sheet of foil over the chicken for up to 15 minutes, letting the juices redistribute.
