Here's what you need: gold potatoes, cooking oil, paprika, chili powder, brown sugar, garlic powder, pepper, salt

3 gold potatoes
1 tablespoon cooking oil
1 tablespoon paprika
1 tablespoon chili powder
2 tablespoons brown sugar
1 teaspoon garlic powder
1 tablespoon pepper
1 tablespoon salt

Steps:

  • Preheat the oven to 350ºF (175ºC).
  • Carefully slice 3 gold potatoes into ⅛-inch (3-mm) slices using a knife or mandoline.
  • In a large bowl, mix the potato chips with ingredients.
  • Arrange chips on greased baking sheet.
  • Bake for 30-35 minutes.
  • Enjoy!

1 cup sour cream
1/4 cup minced fresh chives
2 garlic cloves, minced
1/2 teaspoon salt
CHICKEN:
1/4 cup all-purpose flour
2 tablespoons light brown sugar
1 teaspoon ground mustard
3/4 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 eggs, lightly beaten
2-1/2 cups coarsely crushed barbecue potato chips
1-1/2 pounds chicken tenderloins
Cooking spray

Steps:

  • Preheat oven to 400°., In a small bowl, mix sour cream, chives, garlic and salt. Refrigerate until serving. In a shallow bowl, mix flour, brown sugar and seasonings. Place eggs and potato chips in separate shallow bowls. Dip chicken in flour mixture to coat both sides; shake off excess. Dip in eggs, then in potato chips, patting to help coating adhere., Place on a rack in a 15x10x1-in. baking pan; spritz with cooking spray., Bake until coating is golden brown and chicken is no longer pink, 12-15 minutes. Serve with sauce.

Made this up and the family liked it. It will be spicy or not so spicy depending on the BBQ sauce you use!

1 lb leftover cooked chicken (cut up or shredded)
1 tablespoon olive oil
1 small onion, chopped
1/2 red bell pepper, chopped
1 garlic clove, minced
3/4-1 cup bottled barbecue sauce
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
1/2 cup water
1/2-1 cup shredded cheddar cheese or 1/2-1 cup monterey jack cheese
sour cream (optional) or plain yogurt (optional)

Steps:

  • Chop or shred the chicken and set aside.
  • In a large skillet, saute onion and bell pepper until soft. Add garlic at the last 1-2 minutes.
  • Add reserved chicken, barbecue sauce, vinegar, brown sugar, and water and simmer until heated through (maybe 5 minutes or so).
  • Either add the cheddar cheese at this point and stir until melted, OR save to sprinkle on top of chicken.
  • Give each person some tortilla chips and top with chicken mixture. Add optional cheese.
  • Top with some sour cream or plain yogurt, if desired.

Steps:

  • Preheat oven to 400°F.
  • In a shallow bowl, combine dressing, garlic powder and red pepper.
  • Place crushed potato chips in another shallow bowl.
  • Dip chicken into the dressing mixture, then into the potato chips, coating both sides completely.
  • Place on a rimmed baking sheet coated with non-stick cooking spray.
  • Bake 20-25 minutes or until chicken is done.
