1 (1 to 1 1/4 pound) lobster
Seafood Stuffing, recipe follows
1 ounce fresh crabmeat
1 to 2 tablespoons lemon juice
1 tablespoon butter
3 ounces chopped haddock
2 scallops, quartered
6 to 8 whole Maine shrimp
1 ounce lobster meat
1 cup crackers, crumbled (recommended: Ritz)
Lemon juice, for seasoning
White wine, for seasoning
Salt and freshly ground black pepper, for seasoning

Steps:

  • Preheat the oven to 450 degrees F.
  • Place a little water in a large pot and bring to a boil.
  • Cut open the lobster by inserting your knife just underneath the head and the cutting down, splitting the belly (body and tail). Remove the "inners" (heart, guts, etc., but not meat). Steam the lobster for 7 to 10 minutes and then remove from the pot.
  • Stuff the Seafood Stuffing in the lobster's opening and top with the crabmeat.
  • Place the stuffed lobster, belly-side-up in a roasting pan. Add the lemon juice and a little water to the bottom of the pan to keep the lobster moist while cooking. Bake for 7 to 10 minutes, or just until the claws begin to split. Do not allow the lobster to dry out.
  • In a medium saucepan over medium heat, melt butter and then add all the seafood and saute until tender, about 3 to 5 minutes. Remove from heat and allow to cool.
  • Mix in the crackers, and add lemon juice, wine, and salt and pepper, to taste.

A real treat! You can use any stuffing you like but I like this simple one the best. Also, you still need to open the claws when serving so don't forget the nutcrackers!

2 lobsters
boiling water
sea salt
4 tablespoons butter, melted
1 egg, beaten
1/2 cup of ritz cracker crumb
1 tablespoon grated parmesan cheese
1/2 cup fresh shrimp or 1/2 cup crab

Steps:

  • Parboil lobster for 7 minues in salted water.
  • Remove and cool.
  • Place the lobster on its back and use a good size, firm knife.
  • Start at the lobsters mouth and quickly slice down the middle of the body and tail.
  • Use both hands to open the body and remove the stomach (located just behind the mouth parts) and the tomalley (the green liver type organ that will be very obvious).
  • Prepare a stuffing of your choice.
  • I like this simple one.
  • Fill the body and tail of your lobster with the stuffing mix.
  • Preheat oven to 450 degrees F.
  • Place the stuffed lobsters on a cookie sheet, and bake for 12-15 minutes or until stuffing is browned.

2 (2 lb) live lobsters
8 ounces shrimp or 8 ounces crabmeat
2/3 cup drawn butter
4 cups crushed Ritz crackers
salt and pepper, if needed

Steps:

  • Prepare the lobsters for broiling and set aside.
  • After the lobsters have been prepared for broiling, slowly melt 1/2 lb. of butter taking care not to let the butter boil. The clear portion of the melted butter is the drawn butter.
  • Slowly pour the drawn butter into a measuring cup, measuring off 2/3 cups.
  • In a food processor, grind enough Ritz Crackers to make about 4 cups, (about 1/2 a box).
  • Combine the crushed Ritz Crackers with the drawn butter a little at a time until the crackers are liberally and evenly coated.
  • Fill the bottom of the lobster bodies and the lobster tails with about 1/2 the amount of cracker mixture.
  • Next, divide the seafood into equal parts and fill the lobster body.
  • Cover the lobster meat with the remaining crumbs and place the lobster on a sheet pan along with the claws.
  • Pre-heat the oven to 375 degrees F.
  • Cook the lobsters for approximately 30-40 minutes or until the tail meat becomes white and firm to the touch.
  • Serve at once with lemon wedges and drawn butter.

Grilled Stuffed Lobster With Ginger Butter image

This is a slightly tricky recipe because even the slightest overcooking can leave the flesh of the lobster dry and rubbery. A good way to grill it is to halve the lobster, searing it briefly meat side down, then flipping it and continuing to cook with the grill's lid on, in effect roasting it. This technique gives the lobster a wonderful smoky edge yet retains the moisture. A ginger-butter sauce and a stuffing combining seasoned breadcrumbs and the lobster roe add a special touch.

3 lobsters, 2 1/4 to 2 1/2 pounds each (half lobster per guest)
1/2 cup breadcrumbs
1/4 tablespoon fresh chopped tarragon
10 tablespoons sweet butter
Salt and freshly ground black pepper
2 tablespoons vegetable oil
2 large shallots, finely diced (about 1/4 cup)
2 teaspoons freshly grated ginger
2 tablespoons white wine vinegar
2 tablespoons heavy cream

Steps:

  • Kill the lobsters by plunging a large chef's knife into the joint where the head meets the body. Halve the lobsters lengthwise and cut off the claws. Set aside. Discard the sac on each half lobster near the head. Also remove the the long white strip along the meat, which is the intestines. Remove the lobster roe and reserve.
  • In a bowl, combine the breadcrumbs, tarragon, 4 tablespoons butter, the lobster roe, salt and pepper. Set aside.
  • Brush the meat of the lobsters with vegetable oil and place them, meat side down, over the fire, along with the claws. Cover and cook about 5 minutes.
  • Flip the lobsters and the claws and fill the cavities where the roe was with the breadcrumb mixture. Place one tablespoon of butter and the shallots in a saucepan and place over the grill. Cover the grill and continue cooking.
  • When the butter in the saucepan is melted, about 2 minutes, add two tablespoons of white wine vinegar and 2 tablespoons grated ginger. When the vinegar has reduced, another 2 minutes, add 2 tablespoons heavy cream and stir well. Bring to a boil, reduce by half, then stir in remaining butter. When all the butter has melted, remove sauce from heat and keep warm.
  • Return the cover and cook the lobster about 8 more minutes. Serve each guest a lobster half with sauce over the meat, and a claw.

4 lbs lobsters
3/8 lb sea scallops, 10/15
3/8 lb shrimp, 16/20
3/8 lb lump crabmeat
2 garlic cloves, minced
1/2 medium onion
1/4 lemon, juice of
1/4 cup chopped parsley
3/4 cup Ritz cracker
1/2 cup butter
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Heat Cast Iron skillet over grill until hot.
  • Add 3/4 stick of butter to skillet and allow to melt.
  • Chop onion.
  • Smash and mince garlic.
  • Quarter the Sea Scallops.
  • Cut up shrimp.
  • Add chopped onion and garlic to pan and allow to warm.
  • Add shrimp, scallops, and crab meat to pan and turn over.
  • Add chopped parsley, salt, pepper and lemon juice and turn over.
  • Break Ritz crackers into large pieces and add to stuffing mixture.
  • Turn contents in pan and allow to warm for 1 - 2 minutes, DO NOT COOK THE STUFFING.
  • Remove stuffing mixture from grill.
  • Bring Grill to 350 - 375 degrees and melt remaining butter.
  • Split Live lobster in two place on baking sheet.
  • Remove intestinal tract, tomalley, and roe.
  • Crack the claws.
  • Add 1/2 of the prepared stuffing mixture to each empty lobster body.
  • Add butter to each half.
  • Place into pre-heated grill and bake for 20 - 30 minutes.
  • Remove from grill and add additional butter if desired to each half.

  • Always start with fresh live hard shell lobsters from your local market or fish store. Most of the time, you will find hard shell lobsters at your local store but sometimes lobsters have a softer shell just after molting and their shells are not yet fully hard. Soft shell lobsters contain more water and in my opinion, have a sweeter taste and a more tender texture but they do contain a lot of water and less meat so a good, live hard shell lobster is best for baking.
  • Refrigerate your lobsters in the wax bag you get from the market which will keep them alive and fresh until you are ready to process them. The cold temperature will also keep them less active so they are easier to prepare. Putting them into the freezer for a few minutes will also do the trick.
  • Put each lobster on its back on a cutting board, and use a sharp chef’s knife to split it in half lengthwise without actually cutting the lobster all the way in half. You can easily do this by holding the lobster down at the claws just above the head. Insert the tip of the knife where the shell is soft between the legs, and carefully cut down lengthwise to the tail of the lobster. Remember to stop cutting when you reach the hard shell so you don’t penetrate it.
  • After the lobsters are split, use a pair of kitchen shears to trim off the antennae and the heads. Use both hands to split and flatten the lobsters lengthwise until they lie flat.
