CHEWY HONEY GRANOLA BARS



Chewy Honey Granola Bars image

There's sweetness from the honey, chewiness from the raisins, hints of chocolate and cinnamon, and a bit of crunch. To save a few for later, wrap individual bars and place in a resealable freezer container. 3 cups old-fashioned oats
2 cups unsweetened puffed wheat cereal
1 cup all-purpose flour
1/3 cup chopped walnuts
1/3 cup raisins
1/3 cup miniature semisweet chocolate chips
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup honey
1/4 cup butter, melted
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 8 ingredients. In a small bowl, combine honey, butter and vanilla; pour over oat mixture and mix well. (Mixture will be sticky.), Press into a 13x9-in. baking pan coated with cooking spray. Bake 14-18 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into bars.

Both chewy and crunchy, these bars are the perfect, sweet on-the-go snack.

1 serving Cooking spray
2 ¼ cups old-fashioned oats
1 ½ cups crispy rice cereal
1 cup unsalted roasted peanuts
1 cup raisins
⅔ cup light brown sugar
½ cup orange blossom honey
6 tablespoons unsalted butter
¼ cup smooth peanut butter
1 tablespoon vanilla extract
1 teaspoon kosher salt

Steps:

  • Line the base of a 9-by-13-inch pan with parchment paper and spray generously with cooking spray.
  • In a large bowl combine the oats, crispy rice, peanuts and raisins; stir to combine. Set aside.
  • In a large, 2-quart saucepan combine the brown sugar, honey, butter, peanut butter, vanilla and salt. Bring to a boil and cook, stirring with a wooden spoon, over medium-high heat, until the mixture reaches 220 degrees on a candy thermometer. Immediately pour the hot liquid over the oat mixture, stirring until all of the dry ingredients are coated.
  • Transfer the bar mixture to the prepared pan and press into place using your hands. Chill in the refrigerator for about an hour.
  • To serve, cut into half lengthwise; then horizontally into twelve 2-inch bars.

Sweet, chewy, and just plain ol' good with a tasty glaze. My mother used to make these all the time when I was little. The pecans are optional. The prep time is estimated.

3/4 cup oil
1/4 cup honey
1 egg
1 teaspoon vanilla
1 cup sugar
2 cups flour
1 teaspoon cinnamon
1 cup chopped pecans (optional)
1 pinch salt (a little less than an 1/8 of a teaspoon)
1 teaspoon baking soda
1/2 cup confectioners' sugar
1/2 teaspoon vanilla
1 tablespoon milk
2 tablespoons butter, melted

Steps:

  • For the bars:.
  • Preaheat oven to 375 degrees F.
  • Lightly grease and flour 9x13 baking pan.
  • Mix oil, honey, egg and vanilla in large mixing bowl.
  • In separate bowl, mix sugar, flour, cinnamon, pecans, salt and baking soda.
  • Mix dry ingredients into moist.
  • Put into baking pan.
  • Bake 15-20 minutes.
  • Icing:.
  • Combine all ingredients and pour over hot bars fresh out of the oven.

HONEY OATMEAL CHEWY BARS

Quick to mix and quicker to disapear. I like to slightly underbake these for a more softer bar. Dont over bake or you will have rocks! For a really flavorful bar, toast the nuts and coconut in the oven while preheating...watch closely it will burn quickly.

1/2 cup butter (dont sub margarine)
1/2 cup honey
1/2 cup sugar
1 egg
1 teaspoon vanilla
2/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup quick-cooking rolled oats
1 cup flaked coconut
1/2 cup chopped almonds

Steps:

  • Preheat oven to 350.
  • Cream butter, honey and sugar until light and fluffy.
  • Add egg and vanilla.
  • Mix together dry ingedients.
  • Slowly add to creamed mixture.
  • Stir in oatmeal, coconut and nuts.
  • Spread into greased 13x9 pan.
  • Bake 20-25 minutes in 350 degree oven.
  • Cool and cut into bars.
  • Store airtight with a piece of fresh bread to keep them soft.

3/4 cup canola oil
1/4 cup honey
1 large egg, room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup chopped walnuts, toasted
GLAZE:
1 cup confectioners' sugar
2 tablespoons mayonnaise
1 teaspoon vanilla extract
1 to 2 tablespoons water
Additional toasted chopped walnuts, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat sugar, oil, honey and egg until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Stir in 1 cup walnuts., Spread into a greased 15x10x1-in. baking pan. Bake until golden brown (edges will puff up), 10-12 minutes. Cool completely on a wire rack., For glaze, in a small bowl, mix confectioners' sugar, mayonnaise, vanilla and enough water to reach desired consistency; spread over top. If desired, sprinkle with additional walnuts. Let stand until set. Cut into bars. Refrigerate leftovers.

  • Melt butter, applesauce, and honey in a saucepan. Stir in the brown sugar, then transfer to a mixing bowl. Stir in the egg and vanilla extract until smooth, then the white whole wheat flour, all purpose flour, and salt, until just combined. Let the batter cool 20 minutes. Stir in the chopped pecans, then transfer the batter to the prepared pan, smoothing the top and spreading the batter as evenly as you can.
  • Bake the pecan blondies until the edges are browned and the center is set, 24 to 28 minutes. Set the pan on a wire rack to cool completely, then use the parchment to lift blondies out of pan. Cut into squares and serve.
