Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
- In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.
- Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9x13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.
- Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Season chicken breasts with oregano, basil, salt, and black pepper.
- Cook the chicken breasts on preheated grill until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Melt butter with vegetable oil in a saucepan over medium heat. Cook and stir garlic in the butter mixture until fragrant, about 2 minutes. Stir flour through the butter mixture; cook and stir until flour is incorporated, about 1 minute more. Pour heavy cream and chicken broth into the saucepan; stir. Continue cooking until the mixture thickens, 3 to 5 minutes. Add Parmesan cheese and cream cheese to the saucepan; cook, stirring occasionally, until the cheese is melted into the sauce, about 5 minutes.
- Plate the chicken breasts. Spoon sauce over the chicken. Serve extra sauce on the side.

CHICKEN AND CHEESE ROTOLO WITH MANY CLOVES GARLIC SAUCE
Garlic, Garlic, Garlic, Garlic. Yummy. Love that this recipe uses reduced fat products and still tastes like 1,000 calories! Prep time does not include cooking the chicken or noodles. I make my sauce with all broth and no wine and it turns out great.

Steps:
- Mix chicken, cheese, garlic, herbs, salt and pepper. Spread 3 to 4 tablespoons mixture on each noodle; roll up and place, seam sides down, in 13x9-inch baking dish.
- For sauce, Cook garlic in oil in medium skillet, covered, over medium-low heat until tender, about 10 minutes.
- Mash cloves slightly with a fork.
- Add 1 1/2 cups broth and wine to skillet and heat to boiling.
- Mix flour, parsley and remaining 1/4 cup broth and stir into boiling mixture. Boil until thickened, about 1 minute. Season to taste with salt and pepper.
- Spoon Many Cloves Garlic Sauce over rotolo. Bake loosely covered at 350 degrees until rotolo are hot and sauce bubbly, 20 to 30 minutes.
- Note: You may want to cut lasagna noodles in half before filling, (and of course use less filling per noodle half) to make them easier to handle when eating!

CHICKEN WITH FORTY CLOVES OF GARLIC

- Separate the cloves of garlic and drop them into a pot of boiling water for 60 seconds. Drain the garlic and peel. Set aside.
- Dry the chicken with paper towels. Season liberally with salt and pepper on both sides. Heat the butter and oil in a large pot or Dutch oven over medium-high heat. In batches, saute the chicken in the fat, skin side down first, until nicely browned, about 3 to 5 minutes on each side. Turn with tongs or a spatula; you don't want to pierce the skin with a fork. If the fat is burning, turn the heat down to medium. When a batch is done, transfer it to a plate and continue to saute all the chicken in batches. Remove the last chicken to the plate and add all of the garlic to the pot. Lower the heat and saute for 5 to 10 minutes, turning often, until evenly browned. Add 2 tablespoons of the Cognac and the wine, return to a boil, and scrape the brown bits from the bottom of the pan. Return the chicken to the pot with the juices and sprinkle with the thyme leaves. Cover and simmer over the lowest heat for about 30 minutes, until all the chicken is done.
- Remove the chicken to a platter and cover with aluminum foil to keep warm. In a small bowl, whisk together 1/2 cup of the sauce and the flour and then whisk it back into the sauce in the pot. Raise the heat, add the remaining tablespoon of Cognac and the cream, and boil for 3 minutes. Add salt and pepper, to taste; it should be very flavorful because chicken tends to be bland. Pour the sauce and the garlic over the chicken and serve hot.
CHICKEN WITH 40 CLOVES OF GARLIC
This recipe is for the ultimate garlic lover. Chicken thighs are braised until tender in a rich, roasted garlic sauce, then topped with fried garlic chips. There's even enough roasted garlic paste to whip up a loaf of garlic bread while the chicken cooks.

- Preheat the oven to 425 degrees F.
- Cut the top third off 2 heads of garlic, exposing the tops of the garlic cloves. Put each head on a piece of aluminum foil. Drizzle each with 1 tablespoon of the olive oil and sprinkle with salt and pepper. Wrap tightly and roast until the cloves are golden brown and very soft, about 45 minutes. Let cool slightly. Leave the oven on.
- Unwrap the roasted garlic and pour any garlic-flavored oil from the foil into a small bowl. Squeeze the roasted cloves into the same bowl, discarding the papery shells. Mash with a fork until smooth; set aside.
- Peel and trim the remaining head of garlic. Thinly slice 5 cloves. Heat about 1/2 inch vegetable oil in a small skillet over medium heat, then add 1 slice of garlic. Cook until the garlic is at a lively sizzle, then sprinkle in the rest of the sliced garlic. Cook, stirring, until the garlic is just golden and crisp (don't overcook or it will be bitter), about 1 minute. Drain on paper towels and sprinkle with salt. Set aside.
- Sprinkle the chicken generously with salt and pepper. Heat 2 tablespoons vegetable oil in a large Dutch oven over medium-high heat. Add the chicken in 2 batches skin-side down and cook, flipping once, until golden brown on both sides, about 3 minutes per side. Transfer to a plate.
- Discard the oil and return the Dutch oven to medium heat. Add 2 tablespoons of butter and the remaining garlic cloves and cook until the garlic is light golden, about 3 minutes. Add the wine and use a wooden spoon to scrape up any browned bits from the bottom. Cook until the wine is reduced by half, about 3 minutes. Stir in the chicken broth, lemon juice, thyme and half of the reserved garlic paste. Bring to a boil.
- Use a fork to mash together the flour and remaining 2 tablespoons butter in a small bowl until smooth. Whisk the butter-flour mixture into the Dutch oven until dissolved. Cook until thickened, about 1 minute. Nestle in the chicken skin-side up along with any collected juices from the plate. Cover and bake until the chicken is cooked through, about 25 minutes.
- Meanwhile, add the Parmesan, parsley and remaining 2 tablespoons olive oil to the remaining garlic paste. Stir to combine and season with salt and pepper.
- Put the bread halves on a baking sheet and spread with the garlic mixture. When the chicken has 10 minutes left, add the bread to the oven and bake until toasted, about 10 minutes.
- Cut the bread into pieces. Top the chicken with the reserved garlic chips and chopped parsley.

- Preheat oven to 350°F.
- Squeeze roasted garlic from the papery peels and mash well.
- Heat olive oil in a large, heavy skillet then brown chicken thighs thoroughly over medium-high heat. Work in batches removing each batch to a 13X9 pan in the oven as they finish.
- Reduce heat to medium. Deglaze pan with sherry.
- Add chicken stock (see note), thyme, and the roasted garlic. Simmer 2 minutes.
- Add milk. Add cream cheese in small blobs.
- Bring to simmer, whisking in the cream cheese until smooth.
- Add salt (if using), pepper, and parsley. Whisk in Parmesan until melted.
- Pour sauce over chicken pieces and return to oven for about 1/2 hour or until chicken thighs are thoroughly cooked.
- Remove chicken to a serving platter. Toss sauce with noodles.
- Serve with a green vegetable (I recommend broccoli or an Italian vegetable mix), or a salad.
- Note: If you don't have homemade chicken stock please use a quality soup base (I like Tones), rather than bullion, which is apt to be too salty when combined with the Parmesan.
- Note: If you want a thicker sauce reduce the chicken stock to 1/2 cup.

- Pour olive oil into blender and add red wine vinegar, garlic, thyme, rosemary, oregano, and red pepper flakes. Blend until garlic marinade is smooth and creamy.
- Cut several deep slashes into the meat of each chicken piece using a sharp knife. Place chicken into a large bowl, pour marinade over chicken, and stir to get marinade into the cuts and all over the chicken. Cover bowl with plastic wrap and refrigerate overnight.

- In a large resealable plastic bag, combine 2 tablespoons flour, rosemary, sage, salt and pepper; add chicken. Seal bag and shake to coat. In a large nonstick skillet, brown chicken in 1 tablespoon oil over medium heat for 4 minutes on each side. Transfer to an 8-in. square baking dish coated with cooking spray. - Put the oil in a shallow dish and add the chicken pieces; coat evenly with oil.
- Preheat oven to 375 degrees.

- Prepare all the ingredients: divide the broccoli into florets, cut the chicken breast into 1-inch/2.5 cm cubes, chop the garlic very finely, grate the mozzarella and parmesan cheese.
- Cook the pasta al dente (it should have a bite to it) and steam (or cook) the broccoli. I like to cook the pasta in a pot and steam the broccoli in a sieve above the pot (see the photos). So there's a pot with pasta, a sieve with broccoli florets hung above the pot, and all of that is covered with a lid. Fusilli pasta, that I have used, needs to be cooked for 10 minutes and the broccoli needs to be steamed for 8 minutes. While the pasta is cooking, cook the chicken and prepare the sauce.
- Heat the oil over high heat in a big frying pan. Once hot, add the chicken pieces in an even layer. Season with salt and pepper. Don't stir for the first 2 minutes (to let the chicken brown), then cook, stirring until the chicken is cooked through (no longer pink inside). Transfer the chicken to a plate.
- Add the butter to the pan, when it's sizzling add finely chopped garlic, dry basil, and onion powder and cook, stirring, over medium heat for a minute.
