Recipe video above. Mussels are highly underrated - they're cheap, quick and easy to cook, and delicious! This is a classic way to cook mussels - in a garlic white wine butter sauce. Be sure to have plenty of crusty bread to mop up the delicious sauce, it's my favourite part!

50g / 3 tbsp butter (, unsalted)
1⁄2 onion (, finely chopped (brown, yellow, white))
3 garlic cloves (, very finely chopped)
1 kg / 2 lbs mussels (, bearded and scrubbed (Note 1))
1 cup (250ml) dry white wine
2 tomatoes (, deseeded and diced (Note 2))
1⁄4 cup flat leaf parsley (, roughly chopped)
Lemon wedges ((essential!))
Crusty bread to serve ((essential!))

Steps:

  • Heat oil in a large, heavy pot over medium heat, melt butter.
  • Add the garlic and onion, stirring occasionally until onion is soft and fragrant - about 3 minutes.
  • Turn heat up to high, add wine and bring to boil. Simmer 2 minutes until the harsh alcoholic smell is gone.
  • Stir in tomatoes, add mussels stir to coat in sauce a bit.
  • Cover, lower heat to medium high and cook, shaking pot once or twice.
  • The mussels are cooked when they are open - around 6 to 8 minutes.
  • Toss through parsley and season to taste with salt and pepper. Be careful with the salt as the mussels are already salty, so taste first.
  • Drizzle with extra virgin olive oil, and serve with lemon wedgeds on the side so people can use as much as they wish. Serve immediately with crusty bread to mop up the sauce!

For sauces
1 cup mayonnaise
3 tablespoons coarse-grained mustard
2 tablespoons finely chopped fresh cilantro
2 teaspoons fresh lime juice
1/2 teaspoon curry powder
For fried mussels
8 ounces (1 cup) beer (not dark)
1 cup all-purpose flour
1 1/2 quarts vegetable oil for frying
2 pounds mussels (preferably cultivated), cleaned and steamed , then shucked
Accompaniment: lemon wedges
Special Equipment
a deep-fat thermometer

Steps:

  • Make sauces:
  • Put 1/2 cup mayonnaise into each of 2 small serving bowls and whisk mustard into 1 bowl. Whisk cilantro, lime juice, and curry powder into other bowl. Season dipping sauces with salt and pepper and keep chilled, covered.
  • Make batter and fry mussels:
  • Whisk beer into flour in a bowl until combined well.
  • Heat oil in a 4-quart heavy saucepan over moderate heat until thermometer registers 375°F.
  • While oil is heating, pat mussels dry between layers of paper towels, pressing lightly.
  • Dredge 10 mussels in batter, letting excess drip off, and fry in oil, stirring, until golden brown, 1 to 2 minutes. Transfer mussels as fried with a slotted spoon to paper towels to drain, then season with salt. Fry remaining mussels in batches in same manner, returning oil to 375°F between batches.
  • Serve mussels immediately, with dipping sauces.

5 lbs fresh mussels
flour
salt
oil (for frying)
4 -6 cloves garlic
1/2 cup coarsely chopped walnuts
3 cups stale crumbled bread, without crusts
1 cup extra virgin olive oil
2 -4 tablespoons red wine vinegar
salt

Steps:

  • Wash the mussels, scrubbing their shells and pulling off the little"beard" with a sharp paring knife.
  • Place the mussels in a large wide pot with about two inches of water.
  • Cover and steam until the mussels open, about six or seven minutes.
  • Remove and drain, discarding any mussels that haven't opened.
  • Remove the mussels from their shells and place in a colander.
  • Season lightly with salt and toss with about one and a half cups of flour, until all the mussels are coated.
  • Tap the colander to rid it of excess flour.
  • Fill a large skillet with about one and a half inches of oil and heat until almost smoking.
  • Add the mussels, in batches i f necessary and fry until crisp and golden.
  • Serve warm Either in a mortar or pestle or in the bowl of a food processor, pulverize the garlic and salt to a paste.
  • Add the walnuts and pound or pulverize until the mixture is mealy.
  • Dampen the bread under the tap and squeeze dry.
  • Add to the bowl and continue pulverizing all together.
  • Drizzle in the olive oil and vinegar, alternating between each, and pound all together until the skordalia is creamy.
  • If it is too thick, add a little water.
  • Serve as a dip, or as an accompaniment to fresh or fried vegetables and various fish.

4 garlic cloves, chopped
1 tablespoon coriander root, finely chopped
3 tablespoons vegetable oil
4 tablespoons soy sauce
3 lbs mussels, scrubbed, beards removed
2 cups white wine
4 tablespoons basil leaves, chopped

Steps:

  • Heat oil in a wok, and stir-fry the sambal, garlic and coriander over medium heat until the flavours blend well.
  • Add the soy sauce and wine. Stir.
  • Add the mussels, cover and simmer for 10 minutes until the mussels open. Discard any mussels that remain closed. Stir in basil and remove from heat.
  • Arrange mussels on a platter or in a shallow bowl. Pour sauce over them. Serve with rice or a salad.

3 pounds fresh mussels, scrubbed debearded
10 tablespoons (1 1/4 sticks) butter
3/4 cup finely chopped shallots
6 large garlic cloves, minced
4 tablespoons chopped fresh parsley
2 tablespoons fresh lemon juice
1 teaspoon grated lemon peel

Steps:

  • Place mussels in heavy large Dutch oven, cover and cook over high heat until mussels open, shaking pan occasionally, about 5 minutes. Drain mussels, reserving liquid. Transfer mussels to bowl; discard any that do not open. Tent bowl with foil.
  • Melt butter in same Dutch oven over medium-high heat. Add shallots and garlic and sauté until tender, about 3 minutes. Add 3 tablespoons parsley, lemon juice, lemon peel and reserved liquid from mussels and bring to boil. Season to taste with pepper. Drizzle garlic butter over mussels. Sprinkle with 1 tablespoon parsley.

FRIED MUSSELS IN OUZO BATTER

35 to 40 large mussels, cleaned under running water (about 3 pounds)
1 cup dry white wine (optional)
Sea salt
Good pinch of Aleppo or Maras pepper or hot red pepper flakes, to taste
1 cup plus 2 tablespoons cornstarch
Olive oil or olive and sunflower oil for frying
11/ 2 cups all-purpose flour
11/ 2 teaspoons baking powder
1 cup ouzo (see Note)
1/ 2 cup sparkling water, or more as needed
2 lemons, quartered
Vali's Skordalia or Roasted Garlic Skordalia

Steps:

  • Place the mussels in a large pot over high heat and add the wine, if using. Cover and let the mussels steam for about 5 minutes, shaking the pot and stirring every now and then, until the shells open. Throw away the ones that stay closed. Shuck the mussels and discard the shells. Cover and refrigerate until needed, up to 3 hours.
  • Add salt and Aleppo pepper to the mussels, dust with about 2 tablespoons cornstarch,and toss to coat lightly. Heat about 2 inches of olive oil in a skillet over medium-high heat. Mix the remaining 1 cup cornstarch, the flour, and the baking powder in a bowl. Add the ouzo and sparkling water, whisking to incorporate. It should be runny. If too thick, add a little more sparkling water.
  • When the oil is very hot (about 350°F), dip a few mussels at a time in the batter,remove with tongs, and fry, turning them as they turn deep golden, about 1 minute total. Transfer to a plate lined with a double layer of paper towels to drain.
  • Serve with lemon quarters and skordalia.

Steps:

  • Scrub the mussels thorougly under cold running water. Discard any that have broken or open shells.
  • Melt 40g of the butter in a very large pan over low heat. Add 2tsp of the chopped garlic and all the shallots and cook for 2mins.
  • Add the mussels, wine, salt and black pepper. Cover and bring to the boil, shaking occasionally. Cook for around 3 mins or until the mussels open.
  • Place the mussels into individual dishes, discarding any mussels that won't open.
  • Mix together the remaining butter, garlic and chopped parsley.
  • Stir the mixture into the remaining cooking juices and heat through, pour over the mussels and eat immediatley.
