ALE-BATTERED SHRIMP WITH TARTAR SAUCE
Steps:
- Whisk 3/4 cup flour, ale, 2 egg whites, salt and pepper in medium bowl until smooth. Cover and let stand at room temperature 2 hours.
- Preheat oven to 250°F. Line baking sheet with paper towels. Beat remaining 2 egg whites in large bowl until soft peaks form. Stir 1/3 of whites into ale batter, then fold in remaining whites.
- Melt shortening in heavy large pot over medium heat until thermometer registers 375°F.
- Meanwhile, place 1 cup flour in pie dish. Working in batches, coat shrimp with flour; shake off excess. Holding shrimp by tail, dip into batter until well coated. Carefully lower shrimp a few at a time into hot shortening. Fry until golden brown and cooked through, about 1 minute per side. Using tongs, transfer shrimp to prepared sheet. Keep warm in oven while cooking remaining shrimp. Serve shrimp with Tartar Sauce.
EASY BEER BOILED SHRIMP
I found this recipe on the internet from another site and adapted it to what worked for me. It's now my favorite recipe to make at home and for friends/family because it is so good and super easy. The original called for peeled shrimp, but I really like to cook it with the shells on to maintain the juice of the shrimp without drying it out and also there's just something about sitting at a table and peeling shrimp together...perfect for a casual evening with some beer to go down with it. The recipe is very forgiving so you can adjust ingredients to meet your tastes and needs. Even though it's cooked with butter, I still serve butter...what can I say...I'm from the south and everythings better with butter. There's nevery any left with this recipe.

Steps:
- Melt butter in a saucepan on medium high and add chopped onion.
- Saute onion until soft(around 2-5 minutes).
- Add shrimp and pour in enough beer to cover shrimp (usually 3-4 bottles is enough) and simmer until shrimp turns pink and is cooked through.
- Note: I liked to just bring the pot to the table to serve and provide Old Bay Seasoning for people to add to the shrimp on their plate. The Old Bay can also be added to the shrimp when cooking as well.

- Make rémoulade:
- Stir together rémoulade ingredients in a bowl and chill, covered, 1 hour.
- Steam shrimp:
- Toss shrimp with lemon, onion, celery, bay leaves, Old Bay, and salt in a large bowl, then marinate, covered, at room temperature 15 minutes.
- Bring beer and vinegar to a boil in large nonreactive pot. Transfer shrimp with marinade to steamer/colander insert and steam over liquid, covered, 3 minutes.
- Stir shrimp, then continue to steam, stirring again if necessary, until just cooked through, 3 to 5 minutes more.
- Transfer shrimp to a platter and drizzle with about 1/2 cup steaming liquid. Serve with rémoulade.
