1/2 cup ketchup
1 tablespoon cider vinegar
2 teaspoons sriracha
2 teaspoons Worcestershire sauce
1 teaspoon light brown sugar
Nonstick cooking spray, for the baking pan
1 cup pecans
2 cups panko breadcrumbs
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
3 large eggs
2 small boneless, skinless chicken breasts (about 1 pound), halved lengthwise
1 pound boneless, skinless chicken thighs (about 6 thighs), halved
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • For the ketchup: Stir together the ketchup, vinegar, sriracha, Worcestershire and brown sugar in a small bowl.
  • For the chicken: Preheat the oven to 450 degrees F. Line a rimmed baking pan with parchment paper and spray it generously with cooking spray.
  • Pulse the pecans in a food processor until finely ground. Add the panko and pulse until just combined. Pour into a wide, shallow bowl.
  • Put the flour in a wide, shallow bowl and whisk in the garlic powder, paprika, cayenne, 1 tablespoon salt and a pinch of pepper.
  • Whisk the eggs in another shallow bowl.
  • Working with one piece of chicken at a time, dredge in the seasoned flour, then shake off the excess. Dip in the egg to coat and let the excess drip off. Add to the pecan panko mixture and turn to coat, lightly pressing so that the crumbs adhere. Transfer to the prepared baking pan.
  • Spray the chicken generously with cooking spray and bake until golden brown all over and just cooked through, 15 to 20 minutes. Transfer to a platter and sprinkle with the parsley. Serve with the spicy, tangy ketchup on the side.

1 and 1/2 pounds skinless, boneless chicken breasts or tenders
2 cups Diamond of California pecan halves
3 Tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika*
2 large eggs
chopped parsley for garnish, optional

Steps:

  • 1.Set out 3 medium size bowls. Set aside. Preheat oven to 400F degrees. Line a large baking sheet with a silicone baking mat/parchment paper or coat heavily with nonstick spray. Set aside. 2.If using chicken breasts, pound down and cut into strips. If using boneless, skinless chicken tenders (chicken tenders are the lean strips of meat found attached to the underside of chicken breasts - they can also be purchased separately.) - cut in half lengthwise. Set aside. 3.Pulse 1/2 cup of pecan halves in a food processor or a blender until fine crumbs are formed. Be careful not to pulse into a nut butter, just a few pulses until they are ground up. Mix the pecan crumbs with flour, salt, pepper, and paprika. Set aside. 4.Pulse the remaining pecan halves into coarse crumbs-- larger pieces than the ground pecans from step 3. Pour them into another medium bowl. Finally, whisk the 2 eggs until beaten in the 3rd medium bowl. 5.Coat each chicken strip in the flour/ground pecan mixture, shaking off any excess. Then, dip in egg and let any excess drip off. Then, generously roll in the coarsely chopped pecans, shaking off any excess. Place the chicken strips on the prepared baking sheet. 6.Bake for 10 minutes. Turn each piece over and continue baking until the outside is crisp and the centers are cooked through, about 10 minutes more. Baking times may vary, just make sure yours are cooked through. If you like them more brown, bake longer. Careful, you don't want to burn the nuts. 7.Serve chicken fingers with a garnish of parsley, some honey mustard, and/or your favorite condiment. Store any leftovers in the refrigerator for up to 2 days. Chicken fingers freeze well, up to 2 months. Bake frozen for about 18 minutes (flipping once) at 300F degrees *I love to use smoked paprika for added flavor - use your favorite seasonings if you do not have any on hand.

  • Prepare your pecan crumbs by pulsing them in a food processor or high speed blender. You’ll only need to pulse a few times to get the correct coarse crumbles. Do not over mix and turn into a flour. Transfer pecan crumbles to a bowl and stir in Italian Seasoning, salt, pepper and garlic powder. Transfer mixture to a large plate.
  • In a separate bowl, whisk together 2 eggs until they are fully beaten together. Take each piece of chicken breast and dip in eggs until fully coated. Then place on pecan crumb mixture and press down until the chicken breast is coated in crumbs. Repeat on the other side then transfer to a rimmed baking sheet lined with a wire rack. Repeat this process until all chicken breasts are coated.
