These tender muffins are topped with a delightful streusel. They make a great treat for Christmas morning when served with fresh fruit and coffee. -Pam Ivbuls, Omaha, Nebraska

Number Of Ingredients 18

1-1/2 cups all-purpose flour
1-1/2 cups cake flour
1-1/2 cups sugar
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1-1/2 cups mashed ripe bananas (2 to 3 medium)
1-1/2 cups sour cream
3 large eggs, room temperature
6 tablespoons butter, melted
STREUSEL:
1/3 cup all-purpose flour
1/3 cup sugar
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
3 tablespoons cold butter
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, combine first seven ingredients. In another bowl, combine bananas, sour cream, eggs and butter. Stir into dry ingredients just until moistened., Fill greased or paper-lined jumbo muffin cups two-thirds full. For streusel, in a small bowl, combine flour, sugars and cinnamon. Cut in butter until crumbly; stir in pecans. Sprinkle over tops., Bake 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm. Freeze option: Freeze cooled muffins in resealable plastic freezer bags. To use, thaw at room temperature or, if desired, microwave each muffin on high for 20-30 seconds or until heated through.

1 1/2 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup all-purpose flour
1/3 cup brown sugar, firmly packed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1/3 cup dates (optional) or 1/3 cup raisins, chopped (optional)
8 ounces plain nonfat yogurt or 3/4 cup low-fat buttermilk
3/4 cup banana, mashed and ripe (about 2 medium)
2 egg whites or 1 egg, lightly beaten
2 tablespoons vegetable oil
1 1/2 teaspoons orange zest

Steps:

  • Heat oven to 400°F Line twelve medium muffin cups with paper baking cups or lightly spray bottoms only with cooking spray.
  • In large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and dates; mix well. In medium bowl, combine yogurt, banana, egg whites, oil and orange peel; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.).
  • Fill muffin cups almost full.
  • Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan.

ORANGE PECAN MUFFINS

Our neighbors often give us oranges from their trees, so I revised this muffin recipe to make use of this delicious and vitamin-rich fruit.

Yield 18 muffins.

Number Of Ingredients 10

1-1/4 cups all-purpose flour
1 teaspoon salt
1-1/2 teaspoons baking soda
3/4 cup sugar
4 large oranges
Water
2 large eggs, beaten
1/2 cup vegetable oil
4-1/2 cups raisin bran cereal
1 cup chopped pecans

Steps:

  • In a large bowl, combine first four ingredients. Set aside. Remove the peel from two of the oranges. Cut all the oranges into eighths and remove seeds; puree in a blender or food processor If necessary, add enough water to puree to equal 2 cups. Stir oranges, eggs, oil, cereal and pecans into the dry ingredients. Blend only until mixed. Fill greased muffin tins 3/4 full. Bake at 375° for 10-25 minutes.

1 teaspoon grated orange rind

1 cup chopped pecans

Steps:

  • In a large bowl, beat together bananas, butter, egg, vanilla and orange rind.
  • In a medium bowl, stif together flour, sugar, baking powder, baking soda and salt. Pour the dry ingredients in the banana mixture and mix until combined. Add chopped pecans & stir again.
  • Spoon batter into 12 greased or paper-lined muffin cups.
  • Bake muffins in 350 degrees F oven for 15 to 20 minutes of until risen and firm to the touch. Let cool on wire racks.
  • Store in airtight containers for up to 3 days of freeze for up to 3 months.

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 very ripe large bananas
1 cup packed light brown sugar
3/4 cup butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, toasted and chopped

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup regular-sized muffin tin with paper liners.
  • Cut two of the bananas into pieces and place in the bowl of a stand mixer fitted with the whisk attachment. Add the brown sugar and whip on medium high speed for around three minutes or until pretty smooth.
  • Add the melted butter, eggs and vanilla to the banana sugar mixture, and keep whipping for another 2 - 3 minutes, until well combined.
  • Mash the remaining two bananas in a small bowl until mostly smooth, with only small chunks remaining.
  • In a medium bowl, whisk together the flour, baking soda and salt. Remove the bowl from the stand mixer and fold in the flour mixture with a rubber spatula until just combined. Fold in the mashed bananas.
  • Divide the batter evenly in the muffin cups. Sprinkle the tops with pecans and bake for about 18 to 20 minutes until a toothpick inserted in the center comes out clean.

1/2 cup butter, softened
1 cup sugar
2 large eggs
2 cups flour
1 teaspoon baking soda
1 (8 ounce) container plain yogurt
3/4 cup chopped pecans, toasted
1 teaspoon grated orange rind
1/4 cup orange juice
1 tablespoon sugar

Steps:

  • Beat butter with mixer until creamy. Add 1 cup sugar, beating well. Add eggs one at a time, beating well after each addition.
  • Combine flour and baking soda. Add to butter mixture alternately with yogurt, beginning and ending wtih flour mixture. Beat at low speed after each addition, just until blended. Stir in pecans and orange rind.
  • Place muffin papers in muffin tin and spray the liners lightly with Pam. Spoon batter into cups, filling almost full.
  • Bake at 375º for 18-20 minutes or until muffins are lightly browned.
  • Brush orange juice over hot muffins and sprinkle evenly with 1 tablespoon sugar.

1/2 cup frozen orange juice concentrate, thawed
1 egg
1/4 cup canola oil or 1/4 cup light olive oil
1 1/2 cups bran flakes
1 cup whole wheat pastry flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup raisins
1/4 cup chopped toasted pecans

Steps:

  • Preheat oven to 400 degrees.
  • Spray 12-cup muffin tin with nonstick cooking spray and set aside.
  • In large bowl, whisk together mashed bananas, orange juice concentrate, egg and oil.
  • Stir in bran flakes, let sit about 15 minutes to soften cereal.
  • In separate bowl, combine flour with baking powder, baking soda, cinnamon and salt.
  • Add to cereal mixture and stir just until combined.
  • Gently fold in raisins and pecans. Spoon batter evenly into muffin tins.
  • Bake 20 to 25 minutes or until done.
  • Cool 5 minutes in tin.
