TRADITIONAL ITALIAN BASIL PESTO WITH PINE NUTS
Fresh pesto is like gold; combine fresh basil with olive oil, pine nuts and seasonings for the perfect Italian version that is fantastic on pasta and veggies.

Steps:
- Briefly soak and wash the basil in cold water, and gently pat it thoroughly dry with paper towels.
- Put the basil, olive oil, pine nuts, chopped garlic, lemon juice, and salt in the processor bowl, and process to a uniform consistency; I like mine to be just a bit chunky, not completely smooth.
- Add the softened butter and whirl in just until combined.
- Transfer to a bowl, and mix in the two grated cheeses by hand; this results in a nice texture; better than blending with everything in step two.
- Store in the fridge.

HOMEMADE BASIL PESTO RECIPE

- Quickly blanch the basil. Prepare a bowl of ice water and set aside near your stove. Fill a small saucepan halfway with water and bring to a boil. Drop the basil leaves in the boiling water and blanch for 5 to 10 seconds or until wilted. Using tongs, transfer the basil leaves to prepared ice water to stop cooking.
- Dry the basil very well. Pick up the basil leaves and wrap them in paper towel and squeeze to wring out all the water.
- Make the pesto. Place the basil, garlic, pine nuts, and lemon juice in the bowl of a food processor fitted with a blade. With the processor running, slowly pour the extra virgin olive oil. Do not run the processor too long, you want to have a little bit of texture to your basil pesto.
- Stir in the Parmesan cheese. Transfer the basil mixture to a small bowl. Add the Parmesan cheese and season with salt and pepper to taste. Mix to combine. If needed add a little bit more extra virgin olive oil to mix.
- Use immediately or store for later (see notes for storage).

- In a food processor, combine the basil, pine nuts, Parmesan, garlic, and salt and puree. While the motor is running, drizzle in the oil until incorporated. Season with pepper, to taste. Use immediately or store in the refrigerator with a piece of plastic wrap placed right on the surface of the pesto to prevent discoloration, for up to 3 days, or freeze for up to 1 month.

- Boil Farfalle according to instructions. Al Dente works the best.
- Meanwhile: Add 2 cups Parmesan cheese, 2 packages fresh basil, garlic, salt, and 1/2-package pine nuts in food processor.
- Slowly pour the olive oil while blending all ingredients together.
- Set aside.
- Toast the remaining pine nuts in a splash of olive oil until golden brown.
- Set aside.
- Rinse pasta.
- Stir in the cheese/basil mixture.
- Blend in the remaining 2 cups Parmesan and the toasted pine nuts.
- Serve warm or cold.

- Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.

- Cook the pasta according to the package directions.
- Drain and rinse with cold water; drain again.
- In a food processor or blender, process the pine nuts, garlic and basil leaves until finely chopped.

- Begin by toasting the pine nuts. Place them in a dry skillet over medium-low heat, stirring frequently, until they begin to turn brown; about 3 to 4 minutes. Remove them from the pan immediately or they will start to burn. Pour the pine nuts into a bowl to cool completely before making the pesto. This should take about 10 minutes.
- Meanwhile, In a food processor, combine half the basil leaves, cooled pine nuts, and garlic. Pulse a couple of times. The process until everything is finely chopped. Scrape down the sides of the bowl and add the other half of the basil leaves and the cheeses. Process again until everything is uniform. Scrape down the sides as necessary.
- With the motor running, stream in the extra-virgin olive oil. Blend them until it forms a paste. Scrape down the sides and pulse a few more times. Blend until the olive oil emulsifies into the basil and the pesto is smooth. Use more or less depending on what texture you want (see notes).
- Give the pesto a taste, then season with salt and pepper, to taste. Be careful! The cheeses used are salty so use the salt sparingly, tasting between each addition. Give the pesto a quick pulse after adding salt and pepper to blend it into the pesto.
