This moo shu pork recipe isn't your typical Chinese takeout fare. You may be surprised to know that moo shu pork is actually a home-style dish in China that is served without any pancakes. Try this authentic Chinese recipe at home!

1/2 pound pork ((225g, thinly sliced))
1 teaspoon light soy sauce
1 teaspoon Shaoxing wine ((or dry sherry))
1 teaspoon cornstarch
1/2 teaspoon sesame oil
1 slice ginger ((minced))
3 eggs
1 teaspoon Shaoxing wine ((or dry sherry))
1/4 teaspoon salt
1 tablespoon oil
2 tablespoons oil
2 scallions ((chopped))
1 cucumber ((halved, deseeded, then cut on a 45-degree angle))
1 cup rehydrated black wood ears ((washed and drained))
2 teaspoons Shaoxing wine ((or dry sherry))
2 teaspoons light soy sauce
1 tablespoon oyster sauce
2 tablespoons water
Salt ((to taste))

Steps:

  • First, combine the pork with the marinade ingredients and set aside for 20-30 minutes.
  • Then cook the eggs. Whisk together the eggs with the rice wine and salt. Heat 1 tablespoon of oil in a wok over high heat. Add the beaten eggs, scramble, and turn off the heat. Dish out the cooked eggs and set aside.
  • Heat the wok over high heat once again, and add 2 tablespoons of oil. When the oil starts to smoke, add the pork and sear the meat until lightly browned. Then add the chopped scallion and stir.
  • Next, add the sliced cucumbers and wood ear mushrooms. Stir fry to thoroughly combine the ingredients. Now it's time to add the Shaoxing wine, light soy sauce, oyster sauce and water.
  • Stir fry everything well for an additional 30 seconds. Finally add the cooked eggs, stir-fry for another 30 seconds, and serve!

1 pound ground pork
1 (5-ounce) can water chestnuts, strained and finely chopped
1/2 cup scallions, finely chopped
1 tablespoon minced garlic
1 tablespoon jarred minced ginger
1 tablespoon sesame oil
1 egg, beaten
1 pack oriental sesame dressing mix
2 tablespoon oyster sauce
1 (16-ounce) pack wonton wrappers
Savoy or Napa cabbage

Steps:

  • In a large bowl mix pork, water chestnuts, scallions, garlic, ginger, sesame oil, egg, sesame dressing mix, and oyster sauce. Fill center of each wonton wrapper with 1 teaspoon of meat filling. Gather wrapper up and twist to secure sides. Brush the edges of the wontons with water to help seal. Arrange cabbage leaves on the bottom of a bamboo steamer. Place dumplings about 1-inch apart and steam until the filling is cooked through, about 20 minutes.

Chinese Wheat Wrappers image

These Chinese flour tortillas are popular in northern China, where they are paired with anything stir-fried in small shreds, such as moo shu pork. The author Carolyn Phillips is a proponent of using Korean flour, which is lower in gluten than American all-purpose flour. Adding a layer of oil between the dough before rolling it into a circle is a trick that allows the layers to be peeled apart after cooking for a thinner wrapper. But even unpeeled, these wrappers are fairly thin.

1 cup/136 grams Korean all-purpose flour, more as needed
6 to 7 tablespoons boiling water
1 tablespoon peanut or vegetable oil

Steps:

  • Place flour in a medium bowl and stir in just enough boiling water so the flour is shaggy and all of the water is absorbed into a soft dough. Empty dough onto a smooth work surface and knead it until smooth, adding more flour as necessary to keep it from sticking. When it is as soft as an earlobe, cover the dough with plastic wrap and let rest for about 20 minutes.
  • Divide dough into 16 even pieces and roll each piece into a ball before flattening each ball with the palm of your hand. Use a pastry brush to lightly coat the surface of half of the circles with oil, and place the other half of the circles on top of the oiled ones to create 8 dough sandwiches.
  • Roll each sandwich into an even circle. Roll the circles out into flat tortillas about 5 inches wide. Keep the dough covered when not working with it and sandwich the uncooked pancakes between plastic wrap to keep them from drying out. The wrappers can be prepared ahead of time up to this point and frozen in plastic wrap. Be sure to separate each wrapper with plastic wrap to keep any two from sticking and then pack them in a resealable freezer bag.
  • Heat a seasoned yet unoiled cast-iron frying pan over medium heat. When the bottom is hot, add 1 wrapper and slowly cook it on one side until the bottom is spotted brown and the top starts to puff up, about 1 minute. Turn the wrapper over and briefly cook it on the other side, then transfer it to a clean tea towel and cover it so that it steams lightly. Repeat with the rest of the wrappers until all are cooked and you have a stack of warm tortillas in your towel. At this point, you will be able to peel them apart, if you wish, for very thin wrappers, or keep them as is for thicker ones.

1 (12 ounce) package pork sausage
2 green onions, minced
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1/2 teaspoon minced garlic
24 square wonton wrappers (usually in the supermarket vegetable section where your fresh garlic and ginger would be found)
nonstick cooking spray
chili-garlic sauce or Chinese hot mustard

Steps:

  • In a medium bowl, combine sausage, green onions, soy sauce, hoisin sauce and garlic.
  • Place 8 wonton wrappers on a clean surface and brush edges with water.
  • Place 1 tablespoon of mixture in the center of each wrapper.
  • Gather edges of wrapper together over filling.
  • Press edges of wrappper together enclosing the filling completely.
  • Repeat with remaining wrappers and filling.
  • Place a collabsible metal steamer rack in a large wide pot.
  • Fill pot with 1/2 inch of water.
  • Spray steamer with non-stick cooking spray.
  • Bring water to a simmer.
  • Working in batches, arrange dumplings on rack 1" apart.
  • Cover pot with lid and steam dumplings until cooked thoroughly, about 8 minutes.
  • Watch the water level and add more as needed.
  • Transfer dumplings to a platter and serve with dipping sauces.

1 boneless pork loin roast (3 pounds)
1 cup hoisin sauce, divided
1 tablespoon minced fresh gingerroot
6 cups shredded red cabbage
1-1/2 cups shredded carrots
1/4 cup thinly sliced green onions
3 tablespoons rice vinegar
4-1/2 teaspoons sugar
15 flour tortillas (8 inches), warmed

Steps:

  • Cut roast in half. Combine 1/3 cup hoisin sauce and ginger; rub over pork. Transfer to a 4 or 5-qt. slow cooker. Cover and cook on low for 7-8 hours or until pork is tender., Meanwhile, in a large bowl, combine the cabbage, carrots, onions, vinegar and sugar. Chill until serving., Shred meat with 2 forks and return to the slow cooker; heat through. Place 2 teaspoons remaining hoisin sauce down the center of each tortilla; top with 1/3 cup shredded pork and 1/3 cup coleslaw. Roll up.

  • Put the flour in a large mixing bowl. Gradually add the water to the flour and knead into a smooth dough. This process should take about 10 minutes. Cover with a damp cloth and let the dough rest for an hour.
  • While the dough is resting, prepare the filling. Start by adding the oil to a small pot over medium high heat. Heat the oil for about 7 minutes and allow it to cool. This "cooking" of the oil is supposed to bring out a nuttier flavor in the filling. This tip comes straight to you from Willy's mother, a Beijing local, and an authority on dumpling-making!
  • Once the oil is cooled, add the ground pork to a large bowl, along with the egg, chives, sesame oil, soy sauce, and cooked, cooled oil. At this point, you should make and boil a test dumpling and try it to make sure the taste is to your liking. You can then adjust by adding more salt if needed.
  • Once the filling tastes right to you, begin assembling the dumplings. The best way to do this is to divide the dough into manageable pieces and then rolling each piece into a rope. Cut them into small pieces (in a size similar to if you were cutting gnocchi, or about the size of the top part of your thumb).
