30-Minute Lemon Basil Chicken Linguine image

This 30-Minute Lemon Basil Chicken Linguine comes together quickly, easily, and tastes fantastic. Lemons and basil make this dish refreshingly light yet flavorful. Add grilled chicken for a gratifying weeknight meal.

3 boneless (skinless chicken breasts, dried with paper towels)
kosher salt and freshly ground black pepper
8 oz dried linguine
4 TB salted butter
2 1/2 TB flour
1 cup regular chicken broth
1/4 cup freshly squeezed lemon juice
1 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp freshly ground black pepper
1/2 cup basil leaves (torn or chopped)
1/2 cup freshly shaved parmesan cheese
Note: If you'd like to add veggies (simply boil some spinach or kale leaves along with the pasta during last 2 minutes of cooking.)

Steps:

  • Sprinkle both sides of chicken breasts with a light layer of kosher salt and freshly ground black pepper. Grease and heat outdoor grill or indoor cast iron grill pan. Grill chicken over medium-high heat until just cooked, approx 3-4 min. per side, depending on thickness. Set aside and keep warm.
  • Bring a large pot of salted water to boil. Cook linguine according to package instructions, to al dente. Drain and keep warm.
  • While pasta is cooking, melt butter in a skillet over medium high heat. Add flour and whisk well until combined. Add chicken broth, lemon juice, salt, garlic powder, and black pepper. Bring to a boil. Immediately reduce to simmer for 2-3 min. or until sauce is thickened. Toss sauce with cooked linguine. Slice grilled chicken and toss with linguine. Divide into 4 plates. Sprinkle basil and parmesan onto plates and serve.

4 large tomatoes, coarsely chopped
1 cup chopped fresh basil
1/2 cup olive oil
3 garlic cloves, minced

1/4 teaspoon white pepper
1-1/2 pounds uncooked linguine
Shredded Parmesan cheese

¼ onion, finely chopped
2 cloves garlic, crushed
½ cup baby plum tomato, halved or regular tomatoes chopped into small bits
⅓ cup fresh basil, chopped, plus a few sprigs to decorate
⅓ cup fresh parsley, chopped
5 oz linguine, or spaghetti
salt, to taste
pepper, to taste
1 pinch crushed chillies
2 tablespoons olive oil
2 ½ cups cold water
parmesan cheese, to garnish

Steps:

  • Place all of the ingredients except for the parmesan into a large pot. Cook on a high heat for 2 minutes, submerging the spaghetti into the water once it's softened enough.
  • Lower the temperature to a medium/low heat and toss and stir continuously until the liquid reduces down into a thick sauce. serve with more fresh basil and top with parmesan.

200 g dried linguine
1 large lemon, juice of
75 ml olive oil
75 g parmesan cheese, grated
basil leaves

Steps:

  • Put a large pan of water on to boil. When it is bubbling vigorously, salt it generously then add the linguine. Let it cook at a steady boil for about 8 minutes.
  • Put the lemon juice, olive oil and grated parmesan in a warm bowl (warmed under a running tap and then dried) and beat briefly with a small whisk til thick and grainy. Tear up the basil and stir in with a grinding of black pepper.
  • Drain the pasta and quickly toss in the lemon and parmesan 'sauce'.

3 pounds very ripe tomatoes
3 tablespoons red-wine vinegar
1/4 cup extra-virgin olive oil plus 1 tablespoon pure olive oil
1/2 cup coarsely chopped fresh basil leaves
2 tablespoons finely chopped garlic
Salt, pepper to taste
1 pound linguine
1/2 cup freshly grated Parmigiano-Reggiano

Steps:

  • Coarsely chop the tomatoes, making sure to reserve the juice. Place tomatoes and juice in large bowl. Add the vinegar, 3 tablespoons of the extra-virgin olive oil, and the basil. Add the tablespoon of olive oil to a saute pan over medium high heat. Saute the garlic for 3 minutes, stirring. (Do not allow it to brown). Add to tomato mixture. Season to taste with salt and pepper. Let mixture sit at room temperature for at least 4 hours. When ready to serve, cook linguine in a large pot of boiling, salted water. When pasta is al dente, drain in a large colander, then transfer to a large bowl. Toss linguine with a tablespoon of extra-virgin olive oil and then with the Parmigiano-Reggiano. Divide linguine among 4 to 6 bowls. Top each bowl with about a cup of tomato chunks, retrieved from the tomato mixture with a slotted spoon. Ladle the remaining liquid around.

QUICK LEMON AND BASIL LINGUINE

1 pound linguine
¼ cup extra-virgin olive oil
2 cloves garlic, thinly sliced
¼ cup heavy cream
juice from 1 large lemon (about ¼ cup)
Kosher salt
freshly ground black pepper
½ cup freshly grated Parmesan cheese, plus more for serving
2 teaspoons lemon zest
½ cup thinly sliced fresh basil, plus more for serving

Steps:

  • In a large pot of boiling salted water, cook the pasta until al dente. Reserve ½ cup of the pasta water, then drain your pasta in a colander.
  • Heat the oil in the same pot you cooked your pasta in. Once it's hot, add the garlic and cook, stirring, until the edges just begin to turn golden brown, about 2 minutes. Stir in the cream and lemon juice, and season with a pinch of salt and pepper. Simmer for 2 minutes, then toss in the Parmesan, lemon zest, and finally, the cooked pasta.
  • Bring the heat to medium and, with tongs, thoroughly toss the pasta through the sauce while drizzling in the reserved ½ cup pasta water, just to loosen up the sauce a bit. Season with freshly ground black pepper and turn off the heat. Toss the pasta with the basil right before serving. Serve in bowls, sprinkled with some extra cheese and torn basil.
  • Cooking Tip: I like to pick my battles when it comes to getting my kids to eat. While this recipe calls for linguine, if pasta "tunnels" or "wheels" float your kids' boat, then by all means, change it up.

1/4 cup olive oil
1 tablespoon olive oil
4 tablespoons garlic, minced
3/4 lb linguine
1 1/2 lbs boneless skinless chicken breasts, cut in strips
2 poblano peppers, seeded, julienned
3 plum tomatoes, seeded and diced
1/2 cup fresh basil, thinly sliced
4 ounces prosciutto, chopped
2 tablespoons butter
1 cup parmesan cheese, grated, divided

Steps:

  • Heat 1/4 cup oil in heavy small skillet over medium heat.
  • Add garlic and saute until light golden brown, about 6 minutes.
  • Strain oil into glass measuring cup; reserve garlic.
  • Add enough oil to measuring cup to measure 1/4 cup.
  • Set aside.
  • Cook linguine in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
  • Meanwhile, heat reserved oil in heavy large skillet over medium-high heat.
  • Add chicken and saute 5 minutes.
  • Add poblanos and saute 2 minutes.
  • Add tomatoes, 1/4 cup basil, prosciutto and 2 tablespoons cooked garlic and saute until chicken is cooked through, about 1 minute.
  • Remove from heat.
  • Add butter and stir just until melted.
  • Drain linguine and place in large bowl.
  • Add chicken mixture and 1/2 cup Parmesan; toss to coat.
  • Season with salt and pepper.
  • Sprinkle with remaining 1/4 cup basil and 2 tablespoons cooked garlic.
  • Serve with remaining Parmesan.
