GREEN BEANS WITH WARM RAISIN-CAPER DRESSING



Green Beans with Warm Raisin-Caper Dressing image

This quick side is a sweet-and-sour take on warm green bean salad and highlights the bright flavor and crisp-tender texture of this popular vegetable. Serve it at the holiday table this year; it will be a refreshing contrast to mashed potatoes and roast turkey.

1 pound green beans, trimmed
1/4 cup golden raisins
1 tablespoon sherry vinegar
1 teaspoon whole-grain mustard
3 tablespoons extra-virgin olive oil
1 tablespoon capers, chopped
Kosher salt and freshly ground pepper
3 tablespoons toasted pepitas

Steps:

  • Bring a pot of generously salted water to a boil. Working in batches, cook 1 pound green beans until crisp-tender, about 5 minutes per batch. Add raisins during the last 30 seconds of cooking. Drain and transfer to a platter.
  • In a bowl, whisk together vinegar, mustard, oil, and capers. Season to taste. Toss beans and raisins with dressing and pepitas; serve.

1 lb kidney bean, dried
6 slices bacon, chopped (1/2 in pieces)
1 cup onion, chopped
1/4 cup fresh cilantro, chopped (or parsley)
1/4 cup butter (or margarine)
2 medium carrots, coarsely chopped
1 tablespoon chili powder
1 1/2 teaspoons salt
1/2 teaspoon cumin
1/2 teaspoon thyme leaves
2 bay leaves
2 whole cloves
2 teaspoons fresh garlic, minced
4 cups water

Steps:

  • in large bowl place beans and cover with water, soak for 1 hour.
  • meanwhile in a 3qt saucepan cook bacon over med heat until bacon is browned.
  • reduce heat to med and add remaining ingredients (except 4 cups water and beans).
  • cook stirring occasionally until onions are crispy tender.
  • drain beans, add to vegetable mixture.
  • add 4 cups water, cook over high heat until mixture comes to a full boil.
  • reduce heat to med, cover, cook stirring occasionally until beans are fork tender (1 1/2 to 2 hours).
  • remove bay leaves and cloves before serving.

2 bay leaves
2 whole cloves
2 tsp. minced fresh garlic
4 c. water

Steps:

  • In large bowl place beans; cover with water. Soak for 1 hr. Meanwhile, in 3- qt saucepan cook bacon over med. high heat, stirring occasionally, until bacon is browned (6 to 8 min.). Reduce heat to med. Add remaining ingredients except 4 c. water and beans. Cook, stirring occasionally, until onions are crisply tender (2 to 3 min.) Drain beans; add to vegetable mixture. Add 4 c. water. Cook over high heat until mixture comes to a full boil. Reduce heat to med. Cover; cook, stirring occasionally until beans are fork tender (1 1/2. to 2 hr.). Remove bay leaves and cloves *1 lb. dried kidney beans can be substitutted for 1 lb. dried red beans. Cook for 60 to 70 minutes.
