Squash & barley salad with balsamic vinaigrette image

A flavour-packed, unusual salad that's delicious warm or cold - works really well as part of a buffet

1 butternut squash , peeled and cut into long pieces
1 tbsp olive oil
250g pearl barley
300g Tenderstem broccoli , cut into medium-size pieces
100g SunBlush tomato , sliced
1 small red onion , diced
2 tbsp pumpkin seeds
1 tbsp small capers , rinsed
15 black olives , pitted
20g pack basil , chopped
5 tbsp balsamic vinegar
6 tbsp extra-virgin olive oil
1 tbsp Dijon mustard
1 garlic clove , finely chopped

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Place the squash on a baking tray and toss with olive oil. Roast for 20 mins. Meanwhile, boil the barley for about 25 mins in salted water until tender, but al dente. While this is happening, whisk the dressing ingredients in a small bowl, then season with salt and pepper. Drain the barley, then tip it into a bowl and pour over the dressing. Mix well and let it cool.
  • Boil the broccoli in salted water until just tender, then drain and rinse in cold water. Drain and pat dry. Add the broccoli and remaining ingredients to the barley and mix well. This will keep for 3 days in the fridge and is delicious warm or cold.

This full-of-flavour autumnal salad has a zesty kick and is best eaten straight away

175g pearl barley
1kg peeled squash or 1 butternut squash , unpeeled
3 tbsp olive oil
zest and juice 1 orange
4 tbsp red wine vinegar
½ red onion , thinly sliced
small bunch mint , chopped, reserving a few leaves to serve
small bunch flat-leaf parsley , chopped, reserving a few leaves to serve
2 handfuls rocket

Steps:

  • Boil the barley for 20-25 mins until just tender but with a little bite. Drain.
  • Meanwhile, heat oven to 200C/180C fan/gas 6. If using butternut, thickly slice into rounds, flicking out the seeds as you go, or slice small, round squashes into thin wedges. Toss with 1 tbsp oil, the orange zest and seasoning. Spread over a baking sheet and roast for 40 mins until golden and tender, turning halfway. Set aside while you finish the dish.
  • Mix the orange juice, vinegar and remaining oil with the pearl barley and plenty of seasoning. Stir in the onion and chopped herbs, then layer up on a platter with the squash, rocket and remaining mint and parsley leaves.

This recipe is sweet and nutty and full of good-for-you ingredients. I originally started with a recipe similar to this that called for seeds, capers, and olives, but I didn't think it quite worked. I customized it to my tastes and used ingredients I typically have on hand or in my garden. You can add or substitute your favorite veggies to make variations. I've been trying to add more variety of starches in my family's diet since we get in ruts with pasta, rice, and potatoes, and this recipe fits the bill. Make the dressing ahead of time; it is also delicious on garden salads.

1 butternut squash, peeled, halved, cleaned, and cut into 1/4 inch thick half moons
1 tablespoon olive oil
1 1/4 cups pearl barley
1 (10 ounce) bag frozen broccoli (you can substitute fresh if available)
1 pint grape tomatoes, cut in half
1 shallot, diced
1/4 cup basil leaves, chopped
1/4 cup balsamic vinegar
1/2 small onion, chopped
1 1/2 teaspoons reduced sodium soy sauce
4 teaspoons honey
1 1/2 teaspoons white sugar
1 garlic clove, minced
1/4 teaspoon crushed red pepper flakes
1/3 cup olive oil, extra-virgin

Steps:

  • Dressing: Put vinegar, chopped onion, soy sauce, honey, sugar, minced garlic, and pepper flakes in a blender and mix on high until well blended. With blender on, gradually add olive oil and continue to blend for about 2 minutes until it has thickened. Set aside.
  • Preheat your oven to 400 degrees F. Put squash on large baking pan, drizzle with oil, and toss with hands to coat. Roast for 20-25 minutes until cooked through but not too soft.
  • Boil barley for about 25 minutes in salted water (about 2 quarts of water, like you are cooking pasta). Barley should be al dente, tender but not mushy at all. Drain barley and pour into a large serving bowl. Pour dressing to taste over it. (I add a bit with each addition of ingredients, to get the perfect amount of dressing.).
  • Steam broccoli until it is cooked but still on the crisp side. Add to barley. Add all remaining ingredients and mix. Add additional dressing until it suits your taste. Can be served warm or at room temperature.

Nutty barley comes together with roasted vegetable like sweet acorn squash and broccoli in this hearty fall salad the whole family will love.

1 medium acorn squash, halved, seeded, and cut into 1/2-inch slices
4 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1 bunch broccoli, cut into florets (6 cups)
2 cups quick-cooking barley
1/4 cup fresh lemon juice (from 2 lemons)
2 tablespoons minced shallot
2/3 cup chopped toasted almonds
1/2 cup golden raisins
3/4-ounce piece Parmesan, shaved with a vegetable peeler

Steps:

  • Preheat oven to 450 degrees, with racks in upper and lower thirds. On a rimmed baking sheet, toss squash with 2 teaspoons oil and season with salt and pepper; arrange in a single layer. On another rimmed baking sheet, toss broccoli with 2 teaspoons oil and season with salt and pepper. Place squash on top rack and broccoli on bottom rack and roast until tender, about 30 minutes. Let cool slightly, then cut squash slices in half.
  • Meanwhile, cook barley according to package instructions. Drain and let cool.
  • In a large bowl, whisk together 2 tablespoons plus 2 teaspoons oil, lemon juice, and shallot; season with salt and pepper. Add squash, broccoli, barley, almonds, and raisins. Season to taste with salt and pepper. Serve topped with Parmesan.
