FRESH HERB KUKU

Fresh Herb Kuku image

Kuku is a traditional Persian egg dish similar to a frittata. This version by the Iranian food writer Najmieh Batmanglij was served at the White House at Michelle Obama's Nowruz celebration on April 6. In it, a variety of fresh green herbs are mixed with fragrant spices, chopped walnuts and just enough eggs to bind everything together. Dried barberries, caramelized with grape molasses or sugar, make a pretty and sweet-tart garnish. If you can't get barberries, substitute dried cranberries. Kuku can be served warm or at room temperature, and can be made a day in advance. Leftovers make excellent sandwiches when stuffed into lavash or pita with yogurt.

Time 50m

Yield 6 servings

Number Of Ingredients 25

1/2 cup plus 1 tablespoon extra-virgin olive oil
2 medium yellow onions, finely chopped
6 eggs
1 1/2 teaspoons coarse sea salt
1 teaspoon ground black pepper
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly ground nutmeg
1/2 teaspoon ground cardamom
1/2 teaspoon ground turmeric
1/4 teaspoon ground cumin
1/2 teaspoon ground rose petal (optional)
1 cup finely chopped parsley
1 cup finely chopped cilantro
1 cup finely chopped fresh dill
1 tablespoon dried fenugreek leaves (optional)
1/2 cup coarsely chopped walnuts
1/2 cup finely chopped romaine lettuce
1/2 cup finely chopped spring onions, white and green parts
2 garlic cloves, grated on a Microplane or minced
1 tablespoon rice flour
1/3 cup dried barberries or cranberries, soaked in cold water for 15 minutes, rinsed and drained
1 teaspoon grape molasses, or substitute sugar
Lavash, for serving (optional)
Yogurt, for serving (optional)

Steps:

  • Heat 1/4 cup of the oil in a large skillet over medium heat. Add onions and cook until lightly golden all over, 15 to 20 minutes. Transfer onions to a medium bowl and cool to room temperature; reserve skillet.
  • Heat oven to 400 degrees and line a 9-x-12-inch baking dish with parchment paper.
  • In a large bowl, lightly whisk to combine eggs, salt, pepper, baking powder, all of the spices and the rose petal, if using. Add caramelized onions, all of the herbs, walnuts, lettuce, spring onion, garlic and rice flour. Fold just to combine; do not overmix.
  • Brush prepared baking dish with 1/4 cup oil. (It may look like a lot, but it gets absorbed into the batter.) Add batter, smoothing out the top and pushing it to the sides. Bake until center is set, about 20 minutes, and transfer to a cooling rack.
  • Meanwhile, place the skillet used to cook the onion over medium heat. Add remaining 1 tablespoon oil, the barberries, grape molasses or sugar and 2 tablespoons water. Simmer, stirring, until liquid is reduced and fragrant, about 4 minutes.
  • Top cooked kuku with caramelized barberries and cut into 6 equal pieces. Serve hot or room temperature, with lavash and yogurt, if desired.

BULGUR SALAD WITH GREENS, BARBERRIES AND YOGURT

Bulgur Salad With Greens, Barberries and Yogurt image

I bought some dried barberries at my Iranian market not too long ago and have been adding them to frittatas and salads. They're tart dried fruits, about the size of currants. You can substitute dried cranberries or dried cherries for them.

Provided by Martha Rose Shulman

Categories     salads and dressings

Time 1h

Yield Serves 4 to 6

Number Of Ingredients 15

2 cups water
Salt to taste
1 cup medium bulgur
1 generous bunch Swiss chard, about 1 pound
1/3 cup extra virgin olive oil
1 garlic clove, minced
Freshly ground pepper
2 tablespoons chopped fresh tarragon
1 to 2 tablespoons (to taste) chopped fresh mint
1 teaspoon za'atar
1/2 teaspoon ground allspice
2 to 3 tablespoons barberries or chopped dried cranberries or cherries (to taste)
3 tablespoons fresh lemon juice
1 cup drained yogurt or thick Greek style yogurt
1-2 additional garlic cloves

Steps:

  • Bring 2 cups water to a boil in a medium saucepan. Add the bulgur and salt to taste, reduce the heat, cover and simmer 20 minutes, or until the water is absorbed. Remove from the heat, uncover and place a clean dishtowel over the pan, then replace the lid. Allow to sit undisturbed for 10 minutes. Uncover and place on a baking sheet or in a wide bowl to cool.
  • Meanwhile, strip the chard leaves from the stems (retain the stems if they're wide and meaty) and wash well in 2 changes of water. Steam above 1 inch of boiling water for about 2 minutes, until wilted; alternatively, blanch for about 1 minute in salted boiling water. Transfer to a bowl of cold water, then drain and squeeze out excess water, taking the chard up by the handful. Chop fine.
  • Dice the chard stems. Measure out 1 cup. Heat 1 tablespoon of the olive oil over medium heat in a medium skillet and add the chard stems. Cook, stirring, for about 3 minutes, just until crisp-tender. Add 1 minced garlic clove, stir for about 30 seconds, until fragrant, and remove from the heat.
  • Combine the bulgur, chopped chard, chard stems, chopped tarragon and mint, za'atar, allspice and barberries in a large bowl. Whisk together the lemon juice, salt and pepper to taste, and olive oil. Toss with the bulgur mixture. Transfer to a platter or a wide salad bowl.
  • Pound the remaining garlic to a paste with a pinch of salt in a mortar and pestle. Stir into the yogurt. Spoon on top of the salad and serve.

BARBERRY AND ORANGE TEA

Barberry and Orange Tea image

I have in my pantry a rather large bag of dried barberries, bought at my Persian market, and I had been using them up slowly. Now I know where much of what remains of these sour, zingy vitamin C-rich dried fruits will go.

Provided by Martha Rose Shulman

Categories     breakfast, brunch, quick, non-alcoholic drinks

Time 30m

Yield Serves 2

Number Of Ingredients 6

20 grams dried barberries (2 heaped tablespoons)
3 strips orange zest
1 or 2 slices orange
2 cloves
2 1/2 cups boiling water
2 teaspoons honey

Steps:

  • Place the dried barberries in a teapot or pyrex measuring cup. Add the orange zest, orange slices and cloves. Pour on the boiling water. Stir in the honey. Cover and allow the mixture to steep for 15 to 30 minutes. Strain and reheat gently if desired but do not boil.
