1 lb sausage, 4 jumbo
1 (15 ounce) can tomatoes, chopped
1 small onion, chopped
2 garlic cloves, chopped
1 tablespoon gingerroot, chopped
1 tablespoon brown sugar
1 tablespoon wine vinegar
1 chili pepper, chopped
1 tablespoon fish sauce or 1 tablespoon soy sauce

Steps:

  • To prepare sausages:.
  • Simmer the sausages for 2- 3 mins in boiling water, well in advance of the barbecue, this will get rid of excess fat and reduce flare-ups.
  • Tomato Relish:.
  • Simmer all the ingredients over a low heat for 20 - 30 mins., stirring on occasion. Season to taste.
  • To Barbecue:.
  • Grill the sausage for 5 - 6 mins each side and serve with the relish.

1 pound mixed chiles, such as habanero, finger, and at least 1 jalapeno
6 plum tomatoes, halved lengthwise
3 to 4 pounds linked (sweet and/or hot) or coiled Italian sausages
1 garlic clove, minced
1 1/2 teaspoons red-wine vinegar
1 teaspoon sugar
Coarse salt and freshly ground pepper

Steps:

  • Grill chiles and tomatoes directly on grates set over a campfire or on a medium-high grill, turning, until charred and softened, about 10 minutes. Transfer to a plate. Reserve tomatoes and 1 jalapeno for relish. (Reserve 2 jalapenos for a spicier relish.)
  • Grill sausages directly on grates, turning, until cooked through, 12 to 15 minutes.
  • Meanwhile, chop charred tomatoes and reserved jalapeno; transfer to a bowl. Stir in garlic, vinegar, and sugar. Season with salt and pepper. Serve chiles and sausages with charred tomato relish, sandwiched with skillet breads.

1 cup cider vinegar
2 tablespoons light brown sugar
2 teaspoons kosher salt
1 teaspoon celery seeds
1 teaspoon mustard seeds
3 green tomatoes, seeded and diced
1 large red bell pepper, grilled, peeled, seeded and diced
1 large yellow bell pepper, grilled, peeled, seeded and diced
1 jalapeno, grilled and diced
1 small red onion, finely diced
2 tablespoons extra-virgin olive oil
Freshly ground black pepper
3/4 cup mayonnaise
1/4 cup whole-grain mustard
3 tablespoons prepared barbecue sauce, such as Bobby Flay Mesa Grill BBQ Sauce
3 cornichons, finely diced
2 green onions, green and pale green parts, finely diced
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 1/2 pounds smoked pork sausage links (12 to 14 links)
Thick-cut grilled bread, for serving

Steps:

  • For the green tomato chowchow relish: Combine the vinegar, sugar, salt, celery seeds and mustard seeds in a small saucepan, bring to a boil and cook until the sugar is dissolved. Remove and let the mixture cool completely.
  • Combine the tomatoes, red and yellow bell peppers, jalapenos and onions in a medium bowl. Add the cooled vinegar mixture, olive oil and black pepper and mix until combined. Cover and refrigerate for at least 1 hour and up to 24 hours before serving.
  • For the BBQ remoulade: Whisk together the mayonnaise, mustard, barbecue sauce, cornichons and green onions in a medium bowl. Season with salt and pepper, cover and refrigerate for at least 1 hour to allow the flavors to meld.
  • Heat the grill to high for direct grilling. Grill the sausages until golden brown and charred on all sides and just cooked through, about 10 minutes.
  • To serve, slice the sausages and arrange on a platter. Serve with bowls of the BBQ remoulade and chowchow relish, with grilled bread on the side.

1/2 pound hot Italian sausage, links
1/2 pound mild Italian sausage, links
12 (6-inch) flour tortillas
1 cup shredded fontina cheese
1/2 cup grated Parmesan cheese
1 red onion, sliced, grilled and chopped
1 yellow pepper, grilled, peeled and chopped
1 red pepper, grilled, peeled and chopped
4 cloves garlic, coarsely chopped
1/4 cup chopped flat leaf parsley
2 cups Sweet 100 tomatoes, sliced in half (sweet 100 tomatoes are very small, flavorful tomatoes)
1/4 cup thinly sliced red onion
1/4 cup red wine vinegar
2 tablespoons olive oil
3 tablespoons basil chiffonade
Salt and freshly ground pepper

Steps:

  • Preheat grill to high. Grill the sausages until golden brown on all sides and cooked through, about 10 to 12 minutes. Remove, let rest for 5 minutes and slice into 1/4-inch thick slices. Lay 8 of the tortillas on a work surface. Divide the cheeses, sausage, onion peppers, garlic and parsley among them. Stack to make 4 and top with the remaining 4 tortillas. Brush the tops with the olive oil and grill for 2 to 3 minutes until golden brown. Brush with more oil, turn over and continue grilling until golden brown and the cheese melts. Remove the quesadilla, quarter and top with the relish.
  • Combine all ingredients in a medium bowl and season with salt and pepper to taste.

2 cups catsup
1 1/2 cups packed brown sugar
1/2 cup chopped onion
1/2 teaspoon liquid smoke
1/2 teaspoon garlic powder

  • In a medium saucepan, put catsup, brown sugar, onion, liquid smoke and garlic powder.
  • Cook for 5 minutes.
  • Put sausage in a casserole dish sprayed with cooking spray.
  • Pour sauce over meat.
  • Bake at 350°F for 30-40 minutes, or until sausage is completely heated through and barbecue sauce thickens up.

This is the tomato relish that we used to have when we were kids. It was magic then and it's magic today. Mum made it. So did both my grandmothers, and probably half the cooks in Victoria, Australia, but I had never been able to find the recipe - until recently - and I had cooked and tested just about every relish variant imaginable. The version we had when we were young had less "heat" from spices than my version, but the hotter it is the more sensational it tastes, while still keeping the original magic. It looks as if its complicated to make. It's not. It virtually makes itself. If you have one of those small vegetable choppers (rotary-type) that you bought when it impressed you at a home show and have never used since - drag it out for this as the chopping is really the only thing that takes any real effort.

24 tomatoes
8 onions
3 -4 lebanese cucumbers (or one large burpless cucumber, or a couple of ordinary cucumbers, but, because you need to use the)
1 1/2 ounces salt
2 lbs sugar (white, brown or half white or half brown)
0.5 (1687 ml) bottle malt vinegar or 0.5 (1687 ml) bottle white distilled vinegar
3 tablespoons mustard
3 teaspoons cayenne pepper
6 tablespoons flour (for thickening)
3 tablespoons curry powder (use Clive of India if available)

Steps:

  • Cut up the unskinned tomatoes, onions, and unpeeled cucumbers.
  • Sprinkle with all the salt, stir it through, and leave overnight to draw out the liquid.
  • Strain off liquid- as much as you can.
  • Add sugar and vinegar.
  • Boil till tender then add mustard and cayenne pepper (you can vary this according to taste).
  • Mix flour and curry powder with extra vinegar and add to cooked tomatoes to thicken.
  • Bottle in sterilized jars.
  • Cover when cold.
  • Can be used immediately and also keeps really well.

I haven't tried these yet, but absolutely love Irish sausages. This looks like a pretty simple recipe that I found online. You might even be able to get your butcher to mince the meat and then if you don't have casings, just make into patties. I'm not sure how many links this recipe would make so I'm just guessing.

8 ounces pork fat, without gristle
1/2 teaspoon ground allspice
1 teaspoon salt
fresh ground pepper
1 pinch dried sage or 1 pinch marjoram
1 ounce white breadcrumb (optional)
ground ginger
mace
nutmeg
clove
cayenne pepper
pork sausage casing

Steps:

  • Mince the meat and fat twice, then mix very well and season. (Fry a teaspoon or so each time to check the flavor until you get it the way you like it.)
  • Add the herbs and breadcrumbs and any spices used.
  • Fill skins as usual. You could probably also make into patties and pan fry.

24 chipolata sausages
100g low-sugar ketchup
100g passata
100ml cider vinegar
100g light brown soft sugar
1 garlic clove , crushed
1 tsp chipotle paste
2 tbsp butter
8 wooden or metal skewers (if using wooden, soak in water for at least 15 mins first)

Steps:

  • To make the sauce, combine the ingredients in a saucepan, then season. Bring to the boil and bubble for 3-4 mins until the sugar has completely dissolved and the sauce is glossy. Leave to cool. The sauce will keep in the fridge for up to two weeks or freeze for up to two months.
  • Heat a barbecue until the coals are glowing white hot. Lay six of the sausages next to each other and push one stick through one end of all the sausages and the other stick through the other ends so the sausages look like a ladder (leave a gap between each sausage). Repeat with the other sausages in batches of six.
  • Barbecue the sausages on each side until they are browned and cooked through, then brush with sauce and cook for a minute on each side until sticky-looking. Brush once more with the sauce before serving, and serve the rest of the sauce on the side.
