Barbecued Pineapple! Serve in a bowl or a banana boat with pineapple on either side and a scoop of ice cream or two on top and drizzled with juice glaze. You may substitute juice (1/2 cup) for the sugar and rum part of the marinade.

1 fresh pineapple
¼ cup rum
¼ cup brown sugar
1 tablespoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon ground cloves

Steps:

  • Peel the pineapple and, leaving it whole, cut out the center core. Slice into 8 rings, and place them in a shallow glass dish or resealable plastic bag. In a small bowl, mix together the rum, brown sugar, cinnamon, ginger, nutmeg, and cloves. Pour marinade over the pineapple, cover, and refrigerate for 1 hour, or overnight.
  • Preheat grill for high heat. Lightly oil grate.
  • Grill pineapple rings 15 minutes, turning once, or until outside is dry and char marked. Serve with remaining marinade.

1/4 cup honey
Juice of 2 limes (depending on how juicy the limes are)
1/2 teaspoon ground cinnamon
1/2 pineapple, cut into 3/4-inch thick rings, core removed
3/4 cup vanilla ice cream

Steps:

  • In a baking dish, mix together the honey, lime juice, and cinnamon. Place the pineapple slices in the glaze and let marinate 2 hours, turning occasionally.
  • Preheat a grill pan over medium heat.
  • Place the pineapple slices on the preheated grill. Grill on both sides until the glaze caramelizes and grill marks form, about 2 minutes per side.
  • To serve: Place the pineapple slices on individual plates and top with a scoop of ice cream. Drizzle the remaining honey syrup over the top.

1 large fresh pineapple
1/2 c rum
1/2 c orange marmalade
3/4 c brown sugar
6 Tbsp butter
2 tsp vanilla
1/4 tsp ground chipotle pepper
1/2 tsp ground cinnamon

Steps:

  • 1. Peel, core, and cut pineapple into 3/4-1 inch slices.
  • 2. In a small saucepan mix together the rum, marmalade, brown sugar, butter, vanilla, chipotle pepper, and cinnamon. Note: Use 1/2 teaspoon of chipotle pepper for an added 'Kick'n Dance Step' if you wish.
  • 3. Heat and stir until the sugar is dissolved.
  • 4. On a pre-heated "hot" grill lightly oil the grill. Place pineapple slices on the grill.
  • 5. With a basting brush, baste the pineapple slices with the 'Danc'n Orange' glaze while grilling.
  • 6. Turn the slices over and baste the other side. Note: The recipe for the glaze/basting sauce is enough to handle the grilling of '3' fresh pineapples.
  • 7. Continue basting and turning over the pineapple slices occasionally; grilling for 10-15 minutes.
  • 8. Remove slices from the grill and paint some more glaze on them.
  • 9. Leave rings whole or cut each slice/ring in half and serve.
  • 10. For a dessert, serve hot with a scoop of vanilla ice cream.

3/4 cup orange juice
1 tablespoon honey
1 tablespoon lime juice
2 tablespoons cornstarch
1 teaspoon green peppercorn, freshly cracked
1 pineapple, peeled and cut into thick slices

Steps:

  • Glaze: In saucepan, combine the incredients for the glaze and whisk until smooth. Bring to a boil over medium high heat and cook until thickened, 1 - 2 minutes.
  • Keep warm or reheat.
  • Season both sides of pineapple slices with the peppercorns. Grill over indirect medium heat until well marked, 6 - 8 minutes, turning once. Note: this could be done at the beginning of the meal and left in the oven on warm.
  • Serve with a scoop of ice cream and drizzle the glaze over top.
  • Note: Unless you are prepared to serve this with a knife and fork, cut cooked pineapple slices into bite size pieces.
