Steps:
- Heat oven to 400 degrees.
- Combine 2.5 - 3 lbs. of ground turkey in a large mixing bowl with 2 eggs, ¾ cup gluten free Panko breadcrumbs, 2 tsp. garlic powder, 2 tsp. onion powder, 2 tsp. smoked paprika, 1 tsp. Italian seasoning, and ¼ tsp. each of kosher salt and pepper.
- Mix all of these ingredients together with a large spoon or your hands. (Be careful not to over-mix or they may become tough). Make sure all of the spices are incorporated into the meat before forming it into balls.
- Scoop the meat mixture into balls using a medium-size ice cream scoop or large spoon (this will ensure that they are all equal in size). Use your hands to form the meat into balls and place them on a baking sheet.
- Place the baking sheets in the oven and bake for 20-22 minutes. Remove the baking sheets when finished. Repeat with the remainder of the meat mixture until all of the meatballs are cooked. (The meatballs are fully cooked when the internal temperature has reached 165 degrees and can be tested with a meat thermometer).
- Place the cooked meatballs in a slow cooker.

Steps:
- Pre-heat the oven to 375. Line a baking sheet with parchment paper (not totally required but makes for much easier cleanup!).
- In a large bowl, using your hands, mix together all the ingredients except the BBQ sauce and oil.
- Mix in 3-4 tablespoons of the BBQ sauce; enough to help it bind and add flavor. If you feel like your mixture is too moist add more breadcrumbs.
- Heat the oil in the skillet.
- Roll the turkey mixture into 1½ inch balls and drop into the heated skillet in batches (I cook about 8 at a time) Roll them around after a minute so they brown relatively evenly. Remove the browned meatballs to the prepared baking sheet and repeat until they are all browned.
- Spoon the remaining BBQ sauce over each meatball and bake for 15-20 minutes, until they are cooked through.
- Serve with more BBQ sauce if you're feeling saucy.

Steps:
- Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.
