BBQ MINI MEAT LOAVES

- Preheat the grill to medium-high heat. Take an 8-ounce block of cheddar cheese and cut it in half. Take one of the halves and cut it into 6 equal slices. Set aside.
- In a large bowl, combine the ground beef, bread crumbs, egg, seasoned salt, garlic powder, Worcestershire sauce, and 2 tablespoons of Stubb's Bar-B-Q Sauce. Use a fork to get everything stirred together well. Divide the meat mixture into 6 equal amounts. One at a time, take the portion of meat and form it into an elongated patty. Place one slice of cheese in the middle and form the meat around it, being sure to seal the cheese in completely. Reshape the meat into an elongated patty.
- Place a large piece of aluminum foil over one side of the grill and reduce the heat on that side to low. Place the mini loaves on the foil and cook for about 15 minutes. Baste each of the mini loaves with more bar-b-q sauce and cook for 10 to 15 minutes more or until the juices run clear and the meat is cooked through.
BEST BARBECUED MEAT AND HOMEMADE BARBECUE SAUCE
All types of meat can be barbecued, but the various cuts have to be treated differently. For instance, thin steaks, pork chops and chicken legs cook in a very different way from a whole leg of lamb, pork ribs or a large chicken. If you were to cook them all the same way, the larger cuts would end up nicely cooked on the outside but raw in the middle. Here I'm going to show you how to barbecue larger cuts of meat so they're flavored and moist in the middle and golden and crisp on the outside every time. The thing to remember is to cook the meat through in the oven first, without coloring it, to make it lovely and juicy, then finish it off on the barbecue, basting the meat with the marinade and cooking juices. PS This recipe makes enough marinade for 1 of the types of meat listed in the ingredients. However, I love to do three different types of meat at the same time - if you want to do that, make three times the amount of marinade.

- Preheat your oven to 350 degrees F and light your barbecue about 40 minutes later.
- To make your marinade, grind the cumin seeds, fennel seeds and cloves in a pestle and mortar with some salt and pepper. Chop the thyme and rosemary leaves, orange zest and garlic together finely. Put into a bowl with the ground spices, then add the rest of the marinade ingredients and mix together.
- Rub your chosen meat all over with the marinade, really getting it into all the nooks and crannies and, in case of the lamb, the slashes. Place the meat in a snug-fitting roasting pan, top with any leftover marinade and cover loosely with aluminum foil. Bake the meat in the preheated oven until sweet and tender. This will take 1 1/2 hours for the pork ribs and the lamb (but if you like your lamb pink, it will only need 1 hour), and 1 hour and 20 minutes for the chicken.
- Now you're going to finish your meat on a medium hot barbecue. Place it carefully on the bars of the barbecue and sear it well on 1 side, then turn it over. While it's cooking, use your reserved rosemary sprigs to baste the meat with the sticky juices from the bottom of the roasting pan. Keep turning and brushing the meat until you've built up a lovely sticky, charred crust, then take it off the barbie and rest it on a serving dish for a few minutes. Meanwhile, pop your roasting pan on the barbie or over a gas burner and let the juices reduce a bit.
- Cut the pork into individual ribs, carve the leg of lamb into slices or tear the chicken into pieces, and serve with a bowl of the lovely marinade juices from the roasting pan.
MINI BBQ MEATLOAVES

- Preheat oven to 350 degrees. Heat a skillet over medium heat. Add 2 tbsp. ghee and melt. Add the onions and saute until tender, about 7 minutes. Remove from heat and stir in 1 tbsp. of the Tessemae's BBQ Sauce and allow to cool. In a large bowl, combine the ground beef, almond flour, egg, plenty of kosher salt and black pepper, to taste. When the onion mixture is cooled, add to the bowl. Mix lightly using a fork, and don't mash or the meat will be dense. Using a 3/4 measuring cup, scoop out meat mixture and shape into mini loaves on a parchment paper lined baking sheet. Continue until all of the meat are shaped into loaves, it makes 6 loaves. Spoon 1 tbsp. of BBQ sauce onto the top of each loaf and spread to coat the top. Sprinkle the top with a little kosher salt. Bake in the preheated oven for 20-25 minutes, or until a meat thermoter reads 155 degrees when inserted into the center of the loaf. Let cool for 5-10 minutes before serving. Serve and enjoy!
MINI MEATLOAF MUFFINS

- Preheat oven to 350 degrees F.
- In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
- Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
- In the meantime, in a small bowl mix together all of the ingredients for the sauce.
- Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
- Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
- Serve with mashed potatoes and any extra sauce.

- Preheat oven to 375°. In a large bowl, combine stuffing mix, water and 2 tablespoons barbecue sauce. Add beef; mix lightly but thoroughly. - Preheat oven to 450 degrees and brush a 12-muffin tin with olive oil.
- Put the ground turkey in a large bowl.
- Put onion, celery and green pepper in the food processor. Pulse until finely chopped and add to the bowl of meat.
- Add egg, breadcrumbs and steak seasoning to the bowl.
- Mix together the BBQ sauce, salsa and Worcestershire in a separate small bowl. Pour half the sauce mixture into the bowl with the meat.
- Mix the meatloaf together with your hands.
- Using an ice cream scoop, fill the muffin tin and top each loaf with the remaining sauce.
- Bake for 20 minutes.
