CLASSIC WALDORF SALAD
Crunchy with crisp apples, celery and toasted nuts, this easy Waldorf salad is a classic recipe perfect for a crowd any time of year.

Steps:
- Add the diced apples to a large mixing bowl and sprinkle with the sugar and lemon juice. Toss to coat. Add the celery, grapes, and nuts.
- In another bowl, whip the whipping cream until peaks form, then gently fold in the mayonnaise. Fold into the apple mixture and season with the kosher salt. Taste and adjust the seasoning to your liking. Chill for 1 hour or overnight. Serve by itself or on a lettuce leaf.

This is a variation of the classic salad with apples, grapes, celery and nuts. If you aren't a walnut fan, pecans make an excellent substitute. Creamy salad dressing can be substituted for mayonnaise.

THE ORIGINAL WALDORF SALAD
"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

- Stir sour cream and sugar together until well mixed.
- Peel bananas and cut into chunks. Add to mixing bowl. Stir in diced apple, pineapple, grapes, walnut halves and raisins and sour cream mixture.
- Chill in refrigerator about an hour if possible.
- Options: I occasionally add 1/4 cup shredded coconut, 1/2 cup mandarin oranges or 1/2 cup diced celery just for something different.
- Refreshing summer side dish.

BANANA WALDORF SALAD

- Combine all ingredients and toss lightly.
- Chill mixture and serve in lettuce cups.
- (To prevent bananas from turning brown marinate in lemon or lime juice for a few minutes.).
- Candied pecan variation: Combine first 4 ingredients in a medium sauce pan and cook over medium heat until sugar dissolves @ 5 minutes.
- Stir constantly and add pecans and vanilla, cook until syrup is absorbed @ 10-12 minutes.
- Place pecans on a baking sheet lined with wax or parchment paper and allow to cool.
- Chop up and add desired amount to salad.
- Extra pecans may be stored in an airtight container for @ 1 month.

WALDORF SALAD
This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.
