BANANA CREAM PIE
Makes 1 (9-inch) pie

Steps:
- Preheat oven to 350°.
- In a medium bowl, stir together crushed wafers, brown sugar, melted butter, and ½ teaspoon salt until well combined. Press into bottom and up sides of a 9-inch pie plate. Bake until golden brown, 18 to 20 minutes. Let cool completely.
- In a medium saucepan, cook milk, cream, granulated sugar, and remaining ¼ teaspoon salt over medium heat, stirring occasionally, just until bubbles form around sides of pan.
- In a medium bowl, whisk together egg yolks and cornstarch until smooth. Slowly whisk one-fourth of hot milk mixture into eggs. Whisk egg mixture into remaining milk mixture in saucepan, and bring to a boil, whisking constantly. Cook, whisking constantly, until thick, about 3 minutes. Strain mixture through a fine-mesh sieve into a medium bowl, discarding solids. Whisk in vanilla and softened butter until melted and smooth. Cover with plastic wrap, and let cool for 10 minutes.
- Arrange banana slices in bottom of crust. Stir custard, and gently spread onto bananas. Cover with plastic wrap, pressing directly on surface to prevent a skin from forming, and refrigerate for at least 1 hour before serving or up to overnight. Top with Brown Sugar Whipped Cream just before serving. Garnish with vanilla wafers and banana, if desired.
- In a large bowl, beat all ingredients with a mixer at high speed until stiff peaks form. Use immediately.
BANANA SPLIT PIE
This pie is easy to make and requires no cooking and is so yummy! A Christmas favorite of my family and friends. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

- In a medium bowl, cream together the margarine, eggs and confectioners' sugar; beat for 15 minutes. Spread evenly in the graham cracker crusts.
- In each crust, place banana slices on top of sugar mixture; spread pineapple on bananas. Spoon a little of the reserved juice over fruit. Spoon whipped topping over fruit; garnish with cherries and pecans. Chill before serving.

- In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spread 1-1/2 cups onto the bottom of crust. Top with strawberries and banana slices. Add half the whipped topping to the remaining pudding mixture; stir gently until well blended. Spread over fruit. Spread remaining whipped topping over pie to within 1 in. of edge of crust. Drizzle with chocolate syrup. Top with remaining strawberries and the pecans. Cover and refrigerate 3 hours or until set.

- For crust, mix crushed graham crackers with 1 stick of butter.
- Line bottom and sides of a 13x9" pan with mixture.
- Beat until fluffy: eggs, 2 sticks butter, and the powdered sugar.
- Spread mixture on crust.
- Add layer of crushed pineapple (drained) and layer of sliced bananas.
- Cover with Cool Whip.
- Sprinkle with nuts or graham crackers.
- Refrigerate for 1 hour.
