- 1. Combine in a bowl the pineapple,shrimp, mayonnaise, onion, mustard and dill. Spoon onto cucumber slices. Garnish with dill sprig or sprinkle with dried dill weed.
- 2. Note: To score cucumber: Before slicing - take a fork and with the tines scrape them down the length of the cucumber or squash exposing the white of the veggie- until you have scored it all around then slice.

Steps:
- Peel the cucumber in alternating strips to leave a striped look on the outside.
- Slice the cucumber into ¼ to ½ inch slices and put on a plate.
- Mix the strained greek yogurt or cream cheese with the dill, salt, and pepper.
- Put a small amount of the yogurt mix on top of each piece of cucumber and top each one with a shrimp.
- Serve immediately or keep in the refrigerator for up to six hours.

CUCUMBER SHRIMP SALAD
I adopted this recipe and prepared it on August 23, 2006. I felt that it needed a boost of flavor and made some changes to the dressing (importantly to include the wasabi). The original poster found this in Sunset Magazine. The cucumbers become more flavorful the longer you soak them, but I would caution against marinating the shrimp for more than 20 minutes, as the texture will suffer.

Steps:
- Rinse and drain shrimp - blot dry with papertowels to remove excess water.
- Slice the cucumbers thinly.
- In a pretty bowl, combine the vinegar, sugar, soy sauce, and wasabi, then mix in the cucumbers and shrimp.
- Chill 20 minutes.
- Garnish with peanuts, parsley, and/or green onions just before serving.
