1 medium banana
2 tablespoons light oil, such as canola or vegetable
2 eggs
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons granulated sugar
1/2 teaspoon cinnamon
1 1/3 cup milk

Steps:

  • Preheat your waffle iron according to manufacturer's instructions.
  • In a medium mixing bowl, add the banana and use a fork to mash very well.
  • Add the oil and eggs, and beat to combine well.
  • Add the flour, baking powder, salt, sugar, and cinnamon to the bowl, and stir until just combined.
  • Add the milk and stir until just combined.
  • Make the waffles according to the directions that came with your waffle iron.
  • When one waffle is done, let it rest on a wire wrack, taking care not to stack the waffles (the steam they produce makes them soggy if you stack them on a plate).
  • Serve hot with your favorite toppings such a maple syrup, buttermilk syrup, sliced bananas, pecans, whipped cream, or even chocolate sauce, Nutella, or peanut butter on top.

Steps:

  • Preheat the waffle iron.
  • In a large mixing bowl, sift together the flour, baking powder, salt, and nutmeg. Add the milk, eggs, and mashed bananas and whisk until well-combined.

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, walnuts, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl. Whisk together the banana, oil, sour cream, vanilla and eggs in another bowl. Fold the banana mixture into the flour mixture until just combined (it's ok if there are lumps).
  • Lightly brush the top and bottom of the waffle iron with oil. Fill each section about three-quarters of the way full (there should still be some waffle iron showing). Close and cook until the waffles are golden brown, 4 to 6 minutes. Keep the waffles warm in the oven or covered with foil on a plate while you cook the remaining batter.
  • Spread with butter and dust with confectioners' sugar if you'd like.

Steps:

  • Make waffles:
  • Put oven rack in middle position and put a large metal cooling rack directly on it. Preheat oven to 250°F and preheat waffle iron.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Whisk together buttermilk, melted butter, and eggs in another bowl, then whisk into flour mixture until just combined.
  • Brush hot waffle iron lightly with vegetable oil and pour a slightly rounded 1/2 cup of batter into each waffle mold (see cooks' note, below). Cook waffles according to manufacturer's instructions until golden and cooked through, about 3 minutes. Transfer as cooked to rack in oven to keep warm, keeping waffles in 1 layer to stay crisp. Make more waffles in same manner.
  • Make topping:
  • While last batch is cooking, heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then add banana slices in 1 layer and cook until golden, about 1 minute per side. Remove from heat and add syrup to skillet.
  • Spoon bananas over waffles, then drizzle with warm syrup before serving.

  • The night before, feed the starter as you usually would. The next morning measure out 1 cup of starter and return remainder to crock.
  • Preheat your waffle iron.
  • In a large bowl, stir the baking powder, soda, flour, sugar and spices.
  • In a small bowl lightly beat the egg yolks until light and lemon colored, stir in the mashed banana, extract and butter.
  • Stir the banana mixture into the flour along with the stater and milk; stir to combine well; stir in nuts.
  • Beat the egg whites until light and fluffy, fold into batter.
  • Pour batter, about 1/3 to 1/2 cup per waffle into the waffle iron and bake until golden brown.
  • Makes about 10 waffles that measure 3 1/2 inches x 4 inches.
