Banana Pear Bread image

Spiced banana pear bread is a moist and tender loaf--perfect for breakfast or a snack!

1/2 cup butter, softened
1 cup granulated sugar
2 eggs
4 Tbsp sour cream
1/2 cup mashed bananas (approx. 1 large or 2 small bananas)
15-oz can sliced pears in juice, drained and chopped
1 tsp vanilla extract
1 3/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Steps:

  • Preheat oven to 350F and grease an 8x4" loaf pan.
  • In the bowl of a stand mixer, beat together butter and sugar. Add eggs and mix well until combined.
  • Mix in sour cream, bananas, pears, and vanilla extract, mixing well.
  • Add in dry ingredients and mix on low speed just until incorporated.
  • Pour batter into prepared pan. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool before slicing. Enjoy!

This dairy free, whole wheat banana pear bread with ginger is packed full of goodness and flavour, making a delicious breakfast/brunch option as well as healthy snack anytime!

2 large ripe bananas (mashed)
1 large pear (peeled, chopped)
1½ tablespoons fresh ginger (peeled, finely chopped)
2 tablespoons honey or maple syrup
3 medium eggs (lightly beaten)
1 cup whole wheat/wholemeal flour
1 cup almond flour/ground almonds
3 tablespoons coconut/vegetable oil
1½ teaspoons baking powder
Good pinch of fine sea salt

Steps:

  • In a saucepan combine the ginger, pear, banana, honey and oil, cover and simmer for 15 minutes. Remove from the heat and leave to cool.
  • Preheat the oven to 350 F/ 180 C/ gas mark 4. Lightly grease and line a 23 x 13 cm loaf tin with non-stick paper and set aside.
  • Combine the flour, ground almonds, baking powder and salt and stir using a whisk. In a separate bowl combine the eggs with the fruit mixture (once cooled). Add to the dry ingredients and stir well. Pour the mixture into the tin, smooth out the top and bake for 1 hour.
  • Remove from the oven and set aside for 10 minutes. Lift the bread out of the pan together with the paper and place on a cooling rack.

1 medium ripe pear
1 cup brown sugar
½ cup unsalted butter, softened
2 large eggs
2 medium ripe bananas, mashed
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Peel and core pear. Grate pear flesh into a bowl.
  • Mix brown sugar and butter in a bowl with an electric mixer until well blended. Mix in eggs, then add bananas and pear. Gradually mix in flour and baking soda. Add vanilla, cinnamon, ginger, and almond extract; mix until just combined. Pour into the prepared loaf pan.
  • Bake on the center rack of the preheated oven until a toothpick inserted into the center comes out fairly clean, about 1 hour.

Pear Banana Bread image

A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).

2 pears, peeled, chopped
2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter
1/4 cup vanilla yogurt
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350.
  • Mash bananas and pears in a bowl.
  • In a separate bowl, mix the rest of the ingredients until creamed together.
  • Stir in the fruit mixture.
  • Pour the batter into a greased loaf pan.
  • Bake for an hour and half.
  • Let cool for at least 10 minutes so it doesn't fall apart (it solidifies more with time).

2 medium bananas
1/4 cup peanut butter
1/4 cup flaked coconut
4 raisins
12 pretzel sticks (small thin kind)

Steps:

  • Peel and slice each banana into 10 segments.
  • Assemble "caterpillar" by spreading segments with peanut butter and pressing pieces together.
  • Sprinkle half of coconut over each "caterpillar" and press lightly with fingertips to coat.
  • Use additional peanut butter to press raisins on one end to form "eyes."
  • Break pretzel sticks into small pieces for "legs" and "antenna.".
  • Tip: use different colored dyed coconut for a very colorful caterpillar!
