Oatmeal Apple Banana Low Fat Muffins - A very easy to make recipe for moist, delicious breakfast muffins that uses a minimum of vegetable oil and sugar, although you'll never miss it.

Number Of Ingredients 12

1½ cups large rolled oats
1 cup whole wheat flour, ( 60%. You can use all-purpose flour if you prefer)
3 tsp baking powder
½ tsp salt
1½ tsp cinnamon
½ tsp nutmeg
2 eggs
4 tbsp vegetable oil
6 tbsp sugar
⅔ cup milk
1 cup mashed ripe banana
1 cup grated unpeeled apple, (approximately one large apple)

Steps:

  • Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg. Set aside.
  • Beat together the eggs. oil and sugar until fluffy.
  • Blend in the milk.
  • Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
  • Do not over mix. Fold in only until the fruit is mixed through the batter.
  • Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm.

A healthy banana oatmeal recipe to make for a delicious and wholesome breakfast.

1/2 cup rolled oats
1/4 tsp salt
1 cup milk of choice
1/4 cup water or additional milk of choice
1 large very overripe banana, (mashed)
optional 1/4 tsp cinnamon
optional crushed walnuts, (mini chocolate chips, shredded coconut, etc.)
sweetener of choice, (if needed)

Steps:

  • Combine all ingredients in a small pot. Bring to a boil over medium heat. Once boiling, stir only occasionally to prevent sticking or boiling over. It will eventually thicken. Sweeten as desired. Add your favorite toppings. I like peanut butter, mini chocolate chips, or the healthy nutella recipe linked earlier in this post. 1 ⅓ cups quick cooking oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ cup raisins
1 cup mashed bananas
¼ cup skim milk
2 egg whites
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
  • Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.

4 large ripe bananas, divided
3 cups low-fat milk
2 cups old-fashioned rolled oats (see Tip)
3 tablespoons pure maple syrup
1 teaspoon vanilla extract
¾ teaspoon ground cinnamon, plus more for sprinkling
¼ teaspoon ground ginger
⅛ teaspoon salt

Steps:

  • Peel and slice 1 banana; reserve for serving. Using a fork, mash the remaining 3 bananas in a large saucepan. Add milk and bring the mixture to a simmer over medium-high heat, scraping the bottom of the pan often with a wooden spoon. Stir in oats, maple syrup, vanilla, cinnamon, ginger and salt. Reduce heat to medium-low. Cook, scraping the bottom of the pan often with the spoon, until the mixture is thick and creamy, about 5 minutes. Divide the oatmeal evenly among 4 bowls; top evenly with the reserved banana slices. Sprinkle with cinnamon, if desired, and serve immediately.

Don't let the name fool you! These are cookies that end up soft and tender with a nice crunch from the nuts. I love the flavor comination of the lemon and banana. I personally don't care for rasins, so I use crasins (dried cranberries) This is another great way to use up ripe bananas!

3/4 cup brown sugar, firmly packed
3/4 cup butter, softened (margarine ok)
1 cup banana, mashed (about 3 medium)
1 egg
2 tablespoons lemon peel, grated
1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 3/4 cups Quaker Oats (quick or old fashioned, uncooked)
1 1/2 cups raisins or 1 1/2 cups dried craisins
1 cup walnuts (or pecans)
1 1/2 cups powdered sugar
3 tablespoons butter, softened (margarine ok)
3 tablespoons milk

Steps:

  • Heat oven to 350°F Line cookie sheets with non-stick aluminum foil or spray with Pam spray.
  • For cookies, beat sugar and margarine in large bowl until creamy. Add bananas, egg and lemon peel; beat well. Add combined flour, cinnamon, baking soda, salt, ginger and nutmeg; mix well. Add oats, raisins (crasins), and nuts; mix well.
  • Drop dough by rounded tablespoonfuls onto cookie sheets.
  • Bake approximately 10 minutes or until light golden brown. (Do not overbake; cookies should remain soft.) Slide cookies and foil from cookie sheets onto wire rack; cool while preparing glaze.
  • For glaze, combine all ingredients in small bowl; mix until smooth. (Glaze should be thick). Spoon small amount of glaze over each warm cookie, letting glaze run down sides of cookie. Cool completely. Remove cookies from foil. Store tightly covered.
