BANANA WHIPPED CREAM FROSTING



Banana Whipped Cream Frosting image

Light and creamy Banana flavored frosting that tastes just like Whipped Cream. If you love Bananas you are going to LOVE this frosting!

Provided by Two Sisters Crafting

Number Of Ingredients 3

2 cups (1 pint) Heavy Whipping Cream
1 Small Box (3.3 oz.) Banana Pudding Mix (equivalent is 1/2 cup pudding mix)
1/3 cup of Powdered Sugar

Steps:

  • Add Heavy Whipping Cream to a chilled mixing bowl.
  • Turn mixer on high.
  • Mix until soft peaks form.
  • Add Powdered Sugar.
  • Mix at high speed.
  • Just before you get to stiff peaks add the Banana Pudding Mix.
  • On slow speed, mix whipping cream and pudding.
  • When it starts to come together, stop mixer and scrape down sides.
  • Check to make sure the pudding hasn't clumped on the bottom.
  • Fold mixture a couple of times with a spoon.
  • Turn mixer back on for just a few revolutions.
  • DO NOT OVERMIX.

½ cup mashed bananas
½ teaspoon lemon juice
½ teaspoon vanilla extract
3 ¼ cups confectioners' sugar

Steps:

  • Cream together butter, banana, lemon juice and vanilla. Slowly beat in confectioners' sugar, adding more if needed to make a nice fluffy, spreadable icing. Makes about 2 1/3 cups.

  • Beat mashed banana, lemon juice, and salt in a large bowl with an electric mixer on medium speed for 30 seconds. Beat in softened butter until creamy, about 1 minute. Slowly beat in powdered sugar, 1 cup at a time, until smooth.

An old recipe of my grandmother's; my mother and grandfather love it on spice cake. Grandma's recipe card says that this frosting is similar to a banana-frosted spice cake A&P used to sell back in the very early 70s.

3 -3 1/2 cups powdered sugar, sifted

Steps:

  • Mix the banana and lemon juice together.
  • Cream the butter with 1 cup of the powdered sugar; then add the banana and enough remaining sugar to make the mixture thick and spreadable.

¾ cup butter
1 ½ cups white sugar
3 eggs
1 teaspoon vanilla extract
¾ cup sour milk
1 cup mashed bananas
2 ½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon baking powder

Steps:

  • In a large bowl, mix together butter or margarine, sugar, eggs and vanilla. Set aside.
  • In another bowl, sift together flour, salt, soda, and baking powder. Add these dry ingredients to the creamed mixture. Add sour milk and bananas to the batter. Beat together well.
  • Line two 9 inch round cake pans, or one 9 x 13 inch pan with wax paper; the pans can be greased and floured instead, if desired. Bake at 350 degrees F (175 degrees C) for 17 to 20 minutes for the layered cakes, or for 25 to 40 minutes for the sheet cake.

200g golden caster sugar
300g ripe bananas (2 medium), peeled
125ml flavourless oil like sunflower or grapeseed
4 eggs
125g wholemeal or rye flour
100g plain flour
1 tsp cinnamon
3 tsp baking powder
100g white chocolate chips or chopped walnuts (optional)
100g unsalted butter, softened
100g icing sugar, sieved
200g full-fat cream cheese
large pinch cinnamon

Steps:

  • Line a 25 x 20cm traybake tin with baking parchment and heat the oven to 190C/170C fan/gas 5. Tip the sugar, bananas, oil and eggs into a large bowl and whisk them together. If your bananas are very ripe then you can use a balloon whisk for this, or use a fork to mash. Add the flours, cinnamon and baking powder and whisk the mixture until everything is just combined - don't take too long over this bit as the baking powder will have started to activate. Stir in the chocolate chips, if using, and scoop the mixture into your tin. Bake for 30-40 mins or until the sponge is firm and springy to the touch and lightly browned on top. Cool in the tin.
  • To make the frosting, beat the butter until it is really soft then beat in the icing sugar. Use a spatula to fold in the soft cheese, making sure it is all thoroughly mixed in. Don't be tempted to beat the mixture, this will make it runnier.
  • Lift the cake carefully out of the tin, peel off the paper and transfer it to a plate or board. Spread over the frosting, making it as neat or messy as you like. Lightly dust the top with cinnamon - use a tea strainer to help with this if you have one. Cut into pieces to serve. Will keep for up to 3 days in an airtight container.

  • In a deep bowl, whip the cream and agave nectar with a handheld mixer for 2 to 3 minutes, until thick, fluffy, stiff peaks form. Mix in the bananas, then whip for 20 to 30 seconds to incorporate.
  • Use immediately, spooning dollops over cupcakes. Or store in a glass Mason jar in the refrigerator for up to 3 hours and use before the bananas turn brown.
