BANANA COFFEE CAKE
A delicious banana coffee cake made with ripe mashed bananas and a crisp, crumbly, streusel topping!

Steps:
- Preheat oven to 350F and lightly grease and flour a 9x13 baking pan. Set aside.
- Combine butter and sugar in the bowl of a stand mixer (or in a large bowl and use an electric mixer). Beat until well-combined, then stir in mashed bananas.
- Add eggs, stirring well after each addition, and then add sour cream and vanilla extract and stir well.
- In a separate, medium-sized bowl, whisk together your flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to wet, stirring until completely combined (be sure to scrape down the sides and bottom of the bowl). I prefer to do this with a spatula to avoid over-mixing the batter.
- Pour batter evenly into prepared 9x13 pan. Prepare Streusel.

INCREDIBLE BANANA COFFEE CAKE

- Preheat oven to 350 degrees and grease a 9x13 baking pan.
- In a large bowl, cream together the butter, brown sugar, and regular sugar.
- Once combined, add in the eggs and vanilla extract.
- Add in the sour cream and bananas.
- In a medium bowl, combine the flour, salt, baking powder, and baking soda.
- Pour dry mixture into the wet mixture and stir until just combined.
- Pour batter into prepared pan and spread evenly.
- In a medium bowl, combine the flour, brown sugar, butter, and cinnamon.
- Sprinkle mixture evenly on top of cake batter.
- Place pan into preheated oven and allow to bake for about 45 minutes. *Start watching it around 35 minutes as each oven varies
- Once toothpick comes out clean when inserted in center of cake, remove and allow to cool slightly before slicing/serving!

Steps:
- CAKE.
- Preheat oven to 350.
- Spray an 8x8 inch cake pan with butter-flavored cooking spray.
- In a large bowl, combine baking mix, sugar, and nutmeg. Stir well to combine.
- In a smaller bowl, beat the egg slightly, stir in the sour cream, milk & vanilla.
- Make a well in the center of the dry ingredients; pour in the liquid.
- Stir well to combine.
- Fold in mashed banana.
- Spread batter evenly into prepared cake pan.
- Bake for 25 to 30 minutes or until a toothpick inserted in center comes out clean. Cut into squares & serve warm or cold -- or with Strawberry Glaze and dust with powdered sugar, if you wish.
- GLAZE: In small saucepan, combine mashed strawberries, powdered sugar. Cook over low heat, stirring constantly, until clear and slightly thickened (add water, if needed). Cool. Pour glaze over cake. Chill.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir bananas into butter mixture.

- In a large bowl, beat the cream cheese, butter and sugar until blended. Add eggs, one at a time, beating well after each addition. Add the bananas and vanilla.
