Banana Chocolate Creamed Cashew Cake image

A vegan cheesecake-type cake, nearly raw (could easily be made raw), soy-free, gluten-free, dairy-free, egg-free... and yet still delicious, smooth, and sweet.

3 cups raw cashews
1 cup almonds
1 cup pecans
4 Medjool dates, pitted
2 teaspoons coconut oil, melted
2 teaspoons cocoa powder
¼ teaspoon salt
4 cups banana, coarsely chopped
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
¾ cup coconut oil, melted
½ cup chopped vegan dark chocolate
¼ cup coconut milk

Steps:

  • Soak cashews in a bowl with water to cover, 3 hours to overnight; drain.
  • Mix almonds, pecans, dates, 2 teaspoons coconut oil, cocoa powder, and salt together in the bowl of a food processor until finely ground and beginning to form a paste, 1 to 3 minutes. Press mixture into the bottom of a 9-inch springform pan. Refrigerate crust until ready to use.
  • Process cashews in the bowl of a food processor until finely ground. Add banana, cinnamon, nutmeg, and vanilla extract; blend until combined. Add 3/4 cup coconut oil in a thin stream through the feed tube while processor is running until smooth, thin filling forms. Pour filling into crust and place in the refrigerator until set, at least 4 hours.
  • Place chopped chocolate in a heatproof bowl. Heat coconut milk in a saucepan until near boiling; pour over chocolate. Whisk until smooth glaze forms. Pour over cake and refrigerate until set, at least 30 minutes more.

A very old banana nut cake recipe which has been handed down through my family.

2 eggs
1 teaspoon baking soda
4 tablespoons buttermilk
½ cup butter
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
3 ripe bananas, mashed
1 cup chopped pecans
3 tablespoons butter, softened
2 cups confectioners' sugar
3 tablespoons heavy whipping cream
¼ cup pecan halves, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  • Separate the eggs and set aside.
  • Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
  • Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
  • To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.

BUTTER PECAN FROSTING:
1/2 cup butter, softened

1 cup finely chopped pecans, toasted
Additional chopped pecans, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; add to creamed mixture just until combined. Fold in banana and pecans., Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a small bowl, cream butter until light and fluffy. Beat in the milk, vanilla, salt and enough confectioners' sugar to achieve spreading consistency. Stir in toasted pecans. Frost cake. Garnish with additional pecans if desired.

1 1/3 cups sugar

1/2 teaspoon vanilla
1 cup mashed banana (about 2)
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda

3 tablespoons milk
1/2 cup chopped cashews

Steps:

  • Preheat oven to 350. In a medium bowl, beat butter till creamy. Add the sugar 1/3 cup at a time, beating after each addition. Add eggs, one at a time, continuing to beat. Mix in the vanilla and bananas.
  • Sift together flour, baking powder and soda, and salt. Add creamy mixture, a little at a time, alternating with milk. Fold in chopped cashews. If you overbeat this, you will end up with tough bread.
  • Butter and flour a large loaf pan. Pour in batter. Bake 1 hr or until tests clean with a toothpick.

3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
4 large eggs, room temperature
2 cups mashed ripe bananas (3 to 4 medium)
1-1/3 cups canola oil
1 can (8 ounces) crushed pineapple, undrained
1-1/2 teaspoons vanilla extract
1-1/2 cups chopped walnuts
Optional toppings: Confectioners' sugar and whipped cream

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. tube pan. In a large bowl, whisk flour, sugar, salt, baking powder, baking soda, cinnamon and nutmeg. In another bowl, combine eggs, bananas, oil, pineapple and vanilla. Add to flour mixture; stir just until moistened. Fold in nuts. , Pour into prepared pan. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Cool in pan 15 minutes before removing to a wire rack to cool completely.   • Using an electric mixer on low , beat the eggs and sugar together.
  • when thick and pale add cream and mix for 1 minute more.
  • add sifted flour to the bowl and blend with a wooden spoon.
  • peel and mash bananas and add them to the nuts and coconut.
  • add mixture to the batter
  • mix until all the ingredients are blended, do not overmix.
  • grease 2 8 inch pans and bake at 350 f for 1 hour.
  • it will be golden brown when done.
