BANANA BREAD BARS:
1 1/2 cups sugar
1 cup sour cream
1/2 cup butter, softened
2 eggs
1 3/4 cups ripe bananas, mashed, about 3 to 4
2 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup chopped walnuts (optional)
BROWN BUTTER FROSTING:
1/2 cups butter
4 cups powdered sugar
1 1/2 teaspoon vanilla extract
3 tablespoon milk

Steps:

  • Heat oven to 375°F. Grease and flour 15x10 inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm). Yield: 2 dozen large bars

1/2 cup butter, melted, cooled
1 cup sugar
3 tablespoons baking cocoa
2 large eggs, lightly beaten
1 tablespoon whole milk
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (2-1/2 to 3 medium)
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • In a bowl, combine butter, sugar and cocoa. Stir in eggs, milk and vanilla. Blend in flour, baking powder and salt. Stir in bananas and nuts. , Pour into a greased 9-in. square baking pan. Bake at 350° for 40-45 minutes or until brownies test done. Cool on a wire rack. Just before serving, dust with confectioners' sugar if desired.

½ cup all-purpose flour
½ cup white sugar
½ teaspoon baking powder
¼ teaspoon salt
2 large ripe bananas, mashed
2 eggs, well beaten
1 teaspoon vanilla extract
½ cup chopped pecans
3 tablespoons butter
2 tablespoons unsweetened cocoa powder
1 ½ cups confectioners' sugar
2 tablespoons milk, or more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square glass baking dish.
  • Melt chocolate chips in a microwave-safe bowl on low power in 15-second intervals, stirring after each melting, 1 to 3 minutes. Cool slightly, about 5 minutes.
  • Mix flour, sugar, baking powder, and salt together in a bowl. Add melted chocolate, bananas, eggs, and vanilla extract; beat with an electric mixer on medium speed until well-blended. Stir in pecans. Spread batter in the prepared baking dish.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 30 to 35 minutes. Let cool, about 25 minutes.
  • Combine butter and cocoa powder in a saucepan over low heat; cook, stirring constantly, until smooth, about 3 minutes. Stir in confectioners' sugar and milk. Add more milk, 1 tablespoon at a time, until frosting is spreading consistency.
  • Spread frosting over cooled brownies. Cut into squares.
