HEALTHY BANANA BRAN MUFFINS



Healthy Banana Bran Muffins image

This recipe REALLY made 12 muffins and they're only 125 calories a piece, not to mention, they taste great.

Number Of Ingredients 11

1 1/2 cups bran flakes
1 cup mashed ripe banana (3 medium)
1/2 cup milk (i used skim)
1 egg
3 tablespoons vegetable oil
1 cup flour
1/4 cup sugar (i used 4 packages of Splenda)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon ground nutmeg (i used a little nutmeg and 1/4 t cinnamon)
1/4 cup chopped walnuts (i added, but it's optional)

Steps:

  • Preheat oven to 400 degrees. Grease or paper line muffin cups (i sprayed).
  • Combine cereal, bananas, milk, egg and oil in bowl; mix well. Let stand 5 minutes; stir to break up cereal.
  • Combine flour, sugar (sweetner), baking powder, baking soda, spices and nuts (if using) in separate bowl.
  • Add flour mixture all at once to cereal mixture, stirring just until moistened.
  • Divide evenly among prepared muffin cups, which comes to about a heaping tablespoon per muffin.
  • Bake 20-25 minutes or until tester inserted in center comes out clean.
  • Serve warm (room temp is OK too).

½ cup butter, softened
½ cup brown sugar
3 bananas, mashed
¼ cup milk
1 teaspoon vanilla extract
2 eggs
1 ½ cups all-purpose flour
½ cup wheat bran
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a muffin pan or line with paper muffin liners.
  • In a large mixing bowl, cream butter and brown sugar together until fluffy. Add bananas, milk, vanilla and eggs; mix well. Stir in flour, bran, baking powder, soda and salt; blend just until moistened. Stir in walnuts. Pour batter into prepared muffin cups.
  • Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.

1/2 cup bran flakes
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/4 teaspoon baking soda
2/3 cup packed dark brown sugar
1/2 cup vegetable oil
1/2 cup sour cream
2 ripe medium bananas, mashed
2 large eggs
1 teaspoon pure vanilla extract
Turbinado sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners. Whisk together the flour, bran flakes, baking powder, cinnamon, salt and baking soda in a large bowl. Whisk together the brown sugar, oil, sour cream, bananas, eggs and vanilla in a medium bowl. Add the wet mixture to the flour mixture and gently fold until just incorporated (a few lumps are OK). Evenly divide the batter among the muffin cups; sprinkle with turbinado sugar. Bake until the muffins are golden brown, bounce back when pressed and a toothpick inserted in the center comes out clean, 20 to 22 minutes. Let the muffins cool in the pan for a few minutes, then remove and cool completely on a rack. Store in an airtight container at room temperature for up to 3 days. 1 cup wheat bran
1 cup of mashed ripe banana
2/3 cup vanilla-flavored soymilk or 2/3 cup plain soymilk
1/4 cup firmly packed brown sugar
2 tablespoons prune baby food or 2 tablespoons prune butter
1 large egg, lightly beaten
1 1/4 cups all-purpose flour
1/4 cup soy flour
1/4 cup finely chopped pecans
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
cooking spray

Steps:

  • Preheat oven to 375 degrees.
  • Combine the first 3 ingredients in a medium bowl.
  • Let it stand for 5 minutes.
  • Add brown sugar, baby food, and egg-stir well.
  • Combine flours and next 4 ingredients in a large bowl and make a well in the center of the mixture.
  • Add the bran mixture to the four mixture.
  • Stir until just moist.
  • Spray 12 muffin cups with cooking spray.
  • Spoon batter evenly into the 12 muffin cups.
  • Bake for 20 minutes or until done.
  • Remove muffins immediately from the pan and cool on wire rack.

After trying a lot of disappointing bran muffins, I came up with this one. The spices give a little more punch, while the raisins and nuts add iron and additional fiber. It's a great way to use up ripe bananas.

3 medium bananas
1 cup all-bran cereal
2/3 cup 2% low-fat milk
1/4 cup light brown sugar, packed
1/4 cup canola oil
1 large egg
1/3 cup pecans, chopped
1/3 cup raisins
1 1/2 cups unbleached flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Put bananas in large bowl and blend with an electric mixer until well mashed. Add bran cereal and milk, and let stand for 5 minutes.
  • Add brown sugar, oil, and egg to mixer bowl and blend well. Add pecans and raisins, and blend inches.
  • In another bowl, combine flour, baking powder, salt and spices. Stir into the bran mixture until just combined.
  • Spoon batter into greased muffin tins until 2/3 full. Bake at 375 for 20-25 minutes.

1 cup natural bran
1/2 cup mashed ripe banana (1 small)
1/3 cup packed brown sugar
1 egg, beaten
2 tablespoons vegetable oil
1 teaspoon vanilla
1 lemon rind, grated
1 cup all-purpose flour
1/3 cup skim milk powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • In large bowl, pour boiling water over bran; let stand for one hour.
  • Mix in banana, sugar, egg, oil, vanilla, and lemon rind.
  • Mix together flour, skim milk powder, baking powder, baking soda and salt; add to bran mixture, stirring just until combined but not over mixing.
  • Spoon into lightly greased or paper-lined muffins cps, filling to top.
  • Bake in 400 F(200 C) over for 15-18 minutes or until golden and tops are firm to the touch.
