GOOEY APPLE SHEET CAKE
This AIP Gooey Apple Cake is gluten and refined sugar free. Most of the sweetness and gooeyness comes from the fruit. It's a sweet and delicious cake that serves a crowd. This recipe suits the AIP (includes reintroduction) and Paleo diets.

Steps:
- Preheat oven to 350 degrees.
- Combine all the dry ingredients in a medium size bowl and then stir to combine. Combine all wet ingredients in a large bowl and ten stir to combine.
- Pour the dry ingredients into the large bowl with the wet ingredients then stir to combine.
- Fold the diced apples into the batter. Pour the batter into a 9x13 glass baking dish.
- Bake for 45 minutes to 1 hour or until knife comes out clean.

One of the best apple cakes around. It is very moist, keeps well, and has the 'icing' baked on. The topping is like a thin layer of cheesecake and is good when baked on a carrot cake too.

- Melt butter, stir in sugar and eggs.
- Add flour and baking soda alternately with buttermilk, mixing well.
- Fold in apples, raisins, and pecans.
- Spread batter into well greased (or sprayed) 13 x 9 baking pan.
- Topping: Mix and put on cake BEFORE baking.
- Bake in a 350º oven for 45 minutes.

- Preheat oven to 350°F Coat a 9-inch square pan with cooking spray.
- Cream 5 tablespoons butter and 1 cup sugar. Add egg and beat well. Stir in flour, baking soda, cinnamon, salt, apples and walnuts. Batter will be stiff. Spoon into prepared pan; smooth top. Bake about 35 minutes.
- Combine remaining 3 tablespoons butter, 1⁄2 cup sugar, cornstarch and evaporated milk in a saucepan; bring to a boil over medium heat. Boil 2 minutes, stirring constantly. Remove from heat; stir in lemon juice and vanilla. Pour over hot cake.

- Adjust the rack to the center position of the oven and preheat the oven to 375°F. Grease a rimmed 18x13x1-inch half sheet pan with softened butter.
- In a large pot set set over medium heat, melt the butter. Add the water, increase the heat, and bring to a boil. Remove pot from the heat and briskly stir in the flour until smooth, followed by the sugar, cinnamon, and sour cream. Stir in the eggs until fully incorporated (temper them first if the batter is still hot). Mix in the vanilla. Then sprinkle the baking soda and salt over the top of the batter (make sure there are no lumps!) and stir them in until all ingredients are well blended. Fold in the diced apples.
- Pour the batter into the prepared sheet pan and smooth the top. Bake for 18 to 22 minutes or until a toothpick inserted into the center of the cake comes out clean. Set cake pan on a wire rack to cool.
- While the cake cools, make the glaze. Place a medium pot over medium heat and add the butter, brown sugar, and salt. Stir over medium heat until smooth and melted, then bring to a boil, stirring frequently. Remove the pot from the heat and carefully stir in the half-and half. Return the pot to the heat and bring to another boil, stirring frequently. Remove the pot from the heat once more and stir in the sifted powdered sugar and the vanilla until smooth. Immediately pour the glaze over the cooling cake and spread into a thin, even layer.
