Oatmeal Apple Banana Low Fat Muffins - A very easy to make recipe for moist, delicious breakfast muffins that uses a minimum of vegetable oil and sugar, although you'll never miss it.

Number Of Ingredients 12

1½ cups large rolled oats
1 cup whole wheat flour, ( 60%. You can use all-purpose flour if you prefer)
3 tsp baking powder
½ tsp salt
1½ tsp cinnamon
½ tsp nutmeg
2 eggs
4 tbsp vegetable oil
6 tbsp sugar
⅔ cup milk
1 cup mashed ripe banana
1 cup grated unpeeled apple, (approximately one large apple)

Steps:

  • Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg. Set aside.
  • Beat together the eggs. oil and sugar until fluffy.
  • Blend in the milk.
  • Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
  • Do not over mix. Fold in only until the fruit is mixed through the batter.
  • Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm.

2 ripe bananas, mashed
1 organic egg
1/4 cup olive oil
1/3 cup organic milk
3/4 unrefined cup sugar
2 medium apples, pealed and chopped into small pieces
1 cup whole wheat pastry flour
1 3/4 cup regular rolled oats
3 teaspoons aluminum free baking powder
1/4 cup walnuts, chopped
1/4 cup dried cranberries
pinch of cinnamon

Steps:

  • 1. Preheat oven to 350F degrees. Lined muffin pan with muffin paper cups. In a bowl combine bananas, milk, oil, sugar and egg. Add dry ingredients, flour, oats, cinnamon and baking powder and whisk until well incorporated. Fold in apples, walnuts and dried cranberries. Spoon one spoon of the mixture evenly into muffin cups. Bake for 20-25 minutes or until tester comes out clean. Make sure you remove muffins immediately after they are done. Let them cool on a wire rack. 1 ½ cups unbleached all-purpose flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
¾ cup milk
⅓ cup vegetable oil
½ teaspoon vanilla extract
1 cup mashed bananas

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
  • Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

1 ½ cup all-purpose flour
1 cup old fashioned oats
½ cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 egg
¾ cup milk
1/3 cup vegetable oil
1 cup mashed bananas 3 medium sized bananas
½ cup grated granny smith apple peeled

Steps:

  • Pre heat oven to 400 degrees. Place all of the dried ingredients in a bowl and mix to combine.
  • In a large separate bowl, add in the remaining ingredients and mix to combine.
  • Pour the dry mixture into the wet mixture about ¼ of the bowl at a time and mix with a spoon until just wet and combined. DO NOT OVER MIX.
  • Line a cupcake tin with paper baking cups. Pour mix into baking cups 2/3 of the way. Sprinkle a pinch of granulated sugar on top of each muffin.
  • Bake 18-20 minutes, until golden brown on the top and a toothpick inserted into the center of a muffin comes out clean.
  • Let cool on a wired rack for 2 minutes in the tin. Take muffins out and place back on wired rack to cool completely. Enjoy!

2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
1 ½ tablespoons butter, cut into small pieces
2 cups peeled and finely chopped apples
1 teaspoon fresh lemon juice
¾ cup white sugar
½ cup honey
½ cup buttermilk
½ cup oil
2 large eggs
2 teaspoons vanilla extract
1 cup quick-cooking oats
2 cups whole wheat flour
2 ½ teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
  • Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.
  • Toss apples with lemon juice in a large bowl. Mix in sugar, honey, buttermilk, oil, eggs, and vanilla until combined. Stir in oats.
  • Combine whole wheat flour, baking powder, cinnamon, baking soda, nutmeg, and salt in a smaller bowl. Gently fold flour mixture into the wet ingredients with a large spoon, until flour is just mixed in. 1 apple, peeled and chopped
