Steps:
- Make the balsamic glaze if not using store bought.
- Cut the meat, cheese and artichokes into chunks. Don't cut too small or they will be difficult to skewer.
- Skewer the ingredients onto the wooden skewers. Sprinkle with Italian season then drizzle with balsamic glaze before serving.

ANTIPASTO SKEWERS
Antipasto skewers with tortellini are a quick, easy, and delicious appetizer with the best parts of a traditional antipasto platter but easier to eat.

Steps:
- Cook tortellini according to package directions. Drain and rinse under cold water to stop the cooking process. Transfer to a bowl and toss with Italian dressing. Cover the bowl with plastic cling wrap and refrigerate for 15 minutes up to 2 hours. Drain the marinade.
- Prepare the remaining ingredients and arrange them in front of you. Thread the items onto cocktail picks (or 6-inch wooden skewers) making sure to alternate between different colors and textures. I threaded the items in the following order: black olive, basil, tortellini, salami, tomato, artichoke heart, pepperoni, black olive, and cheese.
- Serve with a side of olive oil and balsamic vinegar, with a drizzle of balsamic glaze, or with pesto, if desired.

Steps:
- To prepare glaze, whisk all the glaze ingredients except the salt, pepper and oil together in a bowl. Gradually whisk the oil into the glaze until it emulsifies, then season with salt & pepper.
- To prepare skewers place cut up vegetables and bocconcini in marinade and let sit for 30 minutes.
- Alternate vegetables on skewers and grill for 10 minutes or until vegetables are tender, basting with marinade.
- Remove skewers from grill and place 2 mozzarella balls on each skewer and serve.

- In a large bowl, whisk vinaigrette, barbecue sauce and mustard until blended. Reserve 1/4 cup mixture for basting. Add beef to remaining mixture; toss to coat., Alternately thread beef and tomatoes on four metal or soaked wooden skewers.
