These EASY baked balsamic chicken thighs (complete with simple balsamic chicken marinade) make a flavorful weeknight dinner. Just 5 minute prep time!

12 medium Boneless skinless chicken thighs ((~3 lb))
1/4 cup Olive oil
1/4 cup Balsamic vinegar
6 cloves Garlic ((minced))
1 tsp Italian seasoning
1 tsp Sea salt
1/4 tsp Black pepper
Balsamic glaze ((optional))

Steps:

  • In a large bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Italian seasoning, salt and pepper. Add the chicken and move around to coat in marinade.
  • Refrigerate chicken in the marinade for at least 1 hour, up to 2 days, ideally turning the chicken to coat in marinade halfway through.
  • Preheat the oven to 425 degrees F (218 degrees C). Line one extra-large or two small baking sheets with parchment paper.
  • Arrange the chicken in a single layer on the lined baking sheet(s), mostly without touching each other. Bake for 18-20 minutes, until chicken is cooked through (165 degrees F measured using an instant read thermometer).
  • Allow chicken to rest for 5 minutes before eating. If desired, drizzle with balsamic glaze to serve.

For an easy weeknight meal or a casual weekend get together, Balsamic Chicken Thighs are always a welcome sight at the table. Marinated in balsamic vinegar, honey with fresh herbs and garlic, this chicken is tender, juicy, tangy, and sweet.

2 - 21/2 pounds boneless, skinless chicken thighs
1/2 cup balsamic vinegar
1 tablespoon honey
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 sprig fresh rosemary (substitute 1/4 teaspoon of dried if fresh is not available)
2 sprigs fresh thyme (substitute 1/4 teaspoon of dried if fresh is not available)
2 cloves garlic, minced
2 green onion, thinly sliced - optional

Steps:

  • In a small bowl, mix together balsamic vinegar, olive oil, honey, salt, pepper, and garlic. Add chicken to a glass container or zip-top bag. Pour marinade over chicken. Add the fresh herbs. Cover container and place in fridge to marinate 15 minutes or up to 2 hours.
  • Remove chicken from the fridge. Heat grill to medium-high heat, about 450 degrees. Clean and oil grates. Place chicken on the grill and cook for 5-6 minutes then flip. Cook the chicken an additional 5-6 minutes until done. Internal temperature should reach 165 degrees.
  • *** You can substitute bone-in, skin-on chicken. Cooking time will need to be increased, cooking for approximately 10 minutes per side. The chicken will be done when the internal temperature reaches 165 degrees.
  • Remove chicken from grill and let rest for 5 minutes. Drizzle with balsamic glaze.
  • Sprinkle with sliced green onion if desired.

⅓ cup balsamic vinegar
½ cup chicken broth
2 tablespoons white sugar
1 clove garlic, minced
1 teaspoon dried Italian herb seasoning
4 skinless, boneless chicken breast halves
1 tablespoon olive oil

Steps:

  • Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.
  • Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Place the chicken in the heated pan and cook until they start to brown and are no longer pink inside, about 7 minutes per side. Pour the marinade into the skillet, and cook until it thickens slightly, turning the chicken breasts over once or twice, about 5 minutes.

3 tablespoons extra virgin olive oil
1 tablespoon minced fresh basil
1 tablespoon minced fresh chives
2 teaspoons grated lemon zest
1 garlic clove, minced

1/4 teaspoon pepper
6 boneless skinless chicken thighs (1-1/2 pounds)

Steps:

  • Whisk together all ingredients except chicken. In a bowl, toss chicken with 1/3 cup vinegar mixture; let stand 10 minutes., Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 170°, 6-8 minutes per side. Drizzle with remaining vinegar mixture before serving.
